SMOKED TUNA SPREAD CANAPéS
Need an appetizer for your next cocktail party? Look no further than these easy canapés. A blend of smoked tuna and seasoned cream cheese is stacked with crisp cucumber slices atop crunchy almond crackers in an appetizer that your guests will be reaching for first.

- Stir together cream cheese, onion, 1 tablespoon chives, the oil, Old Bay seasoning, Worcestershire sauce, and liquid smoke in a medium bowl until creamy.
- Flake tuna with a fork. Add the tuna and pimiento to the cream cheese mixture; stir until well mixed. Cover and chill at least 1 hour or up to 24 hours. (The smoke flavor will build. It may seem faint at first, but refrain from adding more liquid smoke until after the mixture chills. If desired, stir in an additional 1/8-1/4 teaspoon liquid smoke.)
- To assemble the canapés, spread 1/2 teaspoon of the tuna mixture on each cracker. Top each with a cucumber slice and another 1 1/2 teaspoons of the tuna mixture. Sprinkle with the remaining 1 tablespoon chives.

- Whip cream cheese in a bowl with an electric hand mixer. Add onion, capers, lemon zest and juice, seafood seasoning, parsley, Worcestershire, and hot sauce. Mix well. Add tuna and mix until well blended.

THE BEST VEGAN TUNA SALAD
Creamy vegan "tuna" salad made with chickpeas and jackfruit. Try this delicious spread in wraps and sandwiches or as an easy snack with raw veggies and crackers. Free from oil, gluten, and soy.

- Drain the jackfruit and place in a shallow bowl or dish. Cover with water and let soak for a few minutes while you prep the onion and celery and gather the other ingredients. Preheat a saute pan over medium heat.
- Drain the jackfruit, and place on a clean, lint-free towel. Gather up the ends of the towel, hold it over the sink, and squeeze the jackfruit VERY well to remove as much liquid as possible.
- Transfer the jackfruit to the pan, and saute for 2 to 3 minutes, stirring occasionally.* Add 1.5 teaspoons Old Bay to the pan and stir. Cook for another minute or so, then add juice from half a lemon. Stir again, and remove from heat. Transfer jackfruit to a plate to cool.
- In the bowl of a large food processor combine the cooled jackfruit, chickpeas, and ½ cup mayo. Pulse 5 to 8 times. Scrape down the sides of the bowl, and add the dulse granules, cayenne, and more mayonnaise, if desired (I used the entire batch of Aquafaba Mayo to make the tuna salad nice and tangy and rich). Pulse to combine.
- Taste and add more salt, lemon juice, Old Bay, dulse, and/or cayenne, as desired. Add the red onion and celery, and pulse to incorporate. Transfer vegan tuna salad to a lidded storage container, and refrigerate until ready to serve.

EASY TUNA SPREAD
Steps:
- Open the cans and pour most of the oil into a separate glass or bowl (you'll add some of the oil later on)
- Put the tuna in your food processor with a few squeezes of lemon juice, parsley and some pepper
- Blend and slowly add some of the oil you saved from the cans. I usually add about half of the oil, but it's up to you to decide on the desired consistency. It's a spread so it shouldn't be too runny, but you don't want it to be dry either
- Optional: I find some brands of canned tuna too salty. If that's the case, I add a few spoons of ricotta to neutralise the salty taste and add some extra creaminess
- This tuna spread will keep about 1 week in your fridge
