2 garlic cloves, minced
1 shallot, minced
2 teaspoons Old Bay Seasoning
12 soft shelled crabs, cleaned
6 slices white bread
6 lettuce leaves (Boston or Bibb lettuce)
1 ripe tomatoes, thinly sliced
1 cup mayonnaise
1 -2 pickled jalapeno pepper, finely chopped
1 tablespoon drained capers
1 tablespoon chopped pickle (preferably cornichons)
1 tablespoon fresh lemon juice
1 tablespoon finely chopped fresh chives
1 tablespoon finely chopped fresh tarragon basil
1 tablespoon Dijon mustard
1 1/2 teaspoons Old Bay Seasoning
fresh ground black pepper

Steps:

  • Make the sauce: add mayonnaise, peppers, capers, pickles, lemon juice, chives, tarragon, mustard, and Old Bay seasoning to a bowl; whisk to mix.
  • Season to taste with black pepper; sauce can be refrigerated, covered, for at least 1 week; bring to room temperature before serving.
  • The crabs: melt the butter in a small saucepan over med-high heat.
  • Add in garlic, shallot, and Old Bay seasoning; cook until the garlic and shallot have lost their rawness, about 2 minutes; they should be soft and translucent; do not let them brown; set flavored butter aside.
  • Set up grill for direct grilling; preheat to high.
  • When ready to cook brush and oil the grill grate; brush the crabs on both sides with some of the flavored butter.
  • Place the crabs on the hot grate and grill until cooked through, about 2-4 minutes per side, basting with some of the flavored butter.
  • When done, the shells will turn bright red.
  • Brush the bread slices with the remaining flavored butter and grill them as well, about 1 minute per side.
  • To serve: slather the toast with some of the Old Bay Tartar Sauce; place a lettuce leaf, a few tomato slices, and 2 soft-shell crabs on top.
  • Serve with the remaining tartar sauce on the side.

2 tablespoons extra-virgin olive oil, plus more for the grill
1 tablespoon grainy mustard
Grated zest of 2 lemons
2 teaspoons Old Bay Seasoning
2 teaspoons sweet paprika
1/4 teaspoon cayenne pepper
1 1/4 pounds chicken cutlets (4 to 6)
Kosher salt and freshly ground black pepper
1/2 cup mayonnaise
1 tablespoon fresh lemon juice
2 tablespoons chopped fresh parsley
2 tablespoons finely chopped cornichons
2 teaspoons grainy mustard
2 teaspoons chopped fresh dill
2 teaspoons chopped capers

Steps:

  • Make the chicken: Preheat a grill to medium high and oil the grates. Whisk the olive oil, mustard, lemon zest, Old Bay, sweet paprika and cayenne in a small bowl.
  • Place the chicken between 2 sheets of plastic wrap and pound with a heavy skillet or the flat side of a meat mallet until an even 1/2-inch thickness. Rub the chicken with the olive oil mixture; set aside while you make the tartar sauce.
  • Make the tartar sauce: Combine the mayonnaise, lemon juice, parsley, cornichons, mustard, dill and capers. Refrigerate until ready to serve.
  • Season the chicken with salt and black pepper and grill until browned and well marked, 2 to 3 minutes. Flip and grill until the chicken is cooked through, about 2 more minutes.
  • Top the chicken with the tartar sauce.

A Maryland staple, these crab cakes are made from fresh lump crab meat and just enough filler to bind the crabmeat together.

2 large eggs
2½ tablespoons mayonnaise, best quality such as Hellmann's or Duke's
1½ teaspoons Dijon mustard
1 teaspoon Worcestershire sauce
1 teaspoon Old Bay seasoning
¼ teaspoon salt
¼ cup finely diced celery, from one stalk
2 tablespoons finely chopped fresh parsley
1 pound lump crab meat (see note below)
½ cup panko
Vegetable or canola oil, for cooking
1 cup mayonnaise, best quality such as Hellmann's or Duke's
1½ tablespoons sweet pickle relish
1 teaspoon Dijon mustard
1 tablespoon minced red onion
1-2 tablespoons lemon juice, to taste
Salt and freshly ground black pepper, to taste

Steps:

  • Line a baking sheet with aluminum foil for easy clean-up.
  • Combine the eggs, mayonnaise, Dijon mustard, Worcestershire, Old Bay, salt, celery, and parsley in a large bowl and mix well. Add the crab meat (be sure to check the meat for any hard and sharp cartilage) and panko; using a rubber spatula, gently fold the mixture together until just combined, being careful not to shred the crab meat. Shape into 6 cakes (each about ½ cup) and place on the prepared baking sheet. Cover and refrigerate for at least 1 hour. This helps them set.
  • Preheat a large nonstick pan over medium heat and coat with oil. When the oil is hot, place the crab cakes in the pan and cook until golden brown, 3 to 5 minutes per side. Be careful as oil may splatter. Serve the crab cakes warm with the tartar sauce.
  • In a small bowl, whisk together the mayonnaise, relish, mustard, onion, and lemon juice. Season with salt and pepper, to taste. Cover and chill until ready to serve.
  • Make-Ahead Instructions: The crab cakes can be formed, covered, and refrigerated a day ahead of time before cooking. The tartar sauce can be made and refrigerated up to 2 days in advance.
  • Note: If you can only find jumbo lump crab meat, you may need to break the pieces up a bit. If the clumps are too large, the crab cakes won't hold together well.
  • Note: The nutritional information does not include the tartar sauce.

2 ½ tablespoons dill pickle relish
1 ½ tablespoons sweet pickle relish
¾ cup mayonnaise (such as Hellmann's®)
2 tablespoons minced sweet onion
1 ½ teaspoons minced capers
1 ½ teaspoons prepared horseradish
½ teaspoon lemon juice
¼ teaspoon chili-lime powder
⅛ teaspoon seafood seasoning (such as Old Bay®)
3 dashes Louisiana-style hot sauce

Steps:

  • Chop dill and sweet pickle relishes if needed to ensure they are finely chopped; drain any liquid.
  • Combine relishes in a bowl with mayonnaise, onion, capers, horseradish, lemon juice, chili-lime powder, seafood seasoning, and hot sauce; mix well. Transfer to an airtight container and refrigerate for at least 2 hours before serving.

1 celery stalk with leaves, cut into 2-inch lengths
1 1/4 pounds boneless cod, haddock, or other white fish fillets, cut into 2-inch chunks
1 large egg
3/4 teaspoon salt
1/2 teaspoon ground black pepper
3 tablespoons olive oil
Lemon wedges

Steps:

  • Stir together tartar sauce, 2 tablespoons green onions, 2 teaspoons thyme, and capers in small bowl.
  • Place white bread in food processor; using on/off turns, process until very coarse crumbs form. Transfer breadcrumbs to large bowl. Using on/off turns, finely chop celery; add to bowl with breadcrumbs. Using on/off turns, coarsely puree fish; add to bowl. Add remaining 1/2 cup chopped green onions, 1 1/2 tablespoons chopped fresh thyme, egg, salt, and ground black pepper to bowl. Mix gently but thoroughly. Transfer fish mixture to work surface and shape into four 1/2-inch-thick cakes.
  • Heat olive oil in heavy large skillet over medium heat. Add fish cakes and cook until brown on bottom, about 5 minutes. Using large spatula, carefully turn fish cakes over and cook until second sides are brown and centers are opaque, about 5 minutes longer. Divide fish cakes among 4 plates and garnish with tartar sauce and lemon wedges.
