When this spicy stew's simmering on the stove, my family has a hard time waiting for dinner. It's much like a thick tomato-based soup with a hearty mix of okra, brown rice and beans. Everyone leaves the table feeling satisfied—and eager to have it again soon. —Beverly McDowell, Athens, Georgia

Number Of Ingredients 14

4 cups water
1 can (28 ounces) diced tomatoes, undrained
1-1/2 cups chopped green peppers
1 large onion, chopped
3 garlic cloves, minced
1 teaspoon Italian seasoning
1 teaspoon chili powder
1/2 to 1 teaspoon hot pepper sauce
3/4 teaspoon salt
1 bay leaf
4 cups cooked brown rice
2 cans (16 ounces each) kidney beans, rinsed and drained
3 cans (8 ounces each) tomato sauce
1 package (16 ounces) frozen sliced okra

Steps:

  • In a large Dutch oven or soup kettle, combine the first 10 ingredients. Bring to a boil. Reduce heat; simmer, uncovered, for 5 minutes. , Add the rice, beans, tomato sauce and okra. Simmer, uncovered, for 8-10 minutes or until the vegetables are tender. Discard bay leaf.

Number Of Ingredients 12

7 bacon strips, chopped
1 pound smoked sausage, halved and thinly sliced
1 large onion, chopped
2 small green peppers, chopped
3 cups water
2 cans (16 ounces each) butter beans, rinsed and drained
1 can (14-1/2 ounces) diced tomatoes, undrained
1 can (12 ounces) tomato paste
1 teaspoon pepper
1/4 teaspoon salt
1 package (16 ounces) frozen sliced okra
Hot cooked rice, optional

Steps:

  • In a Dutch oven, cook bacon and sausage over medium heat until bacon is crisp. Remove to paper towels; drain, reserving 2 tablespoons drippings. , Cook onion and green peppers in the drippings until tender. Stir in the water, beans, tomatoes, tomato paste, pepper and salt. Bring to a boil. Reduce heat; simmer, uncovered, for 10 minutes. Add bacon and sausage; cook 10 minutes longer., Stir in okra. Cover and cook for 8-10 minutes or until okra is tender. Serve with rice if desired.

This is a southern soul-food classic which is a snap to prepare. If okra turns you off, look elsewhere! The pickled pork gives it a great flavor so don't substitute regular ham.

7 cups water, or as needed
1 pound dried baby lima beans (butter beans)
1 pound pickled pork shoulder, cubed
1 onion, chopped
1 tablespoon minced garlic
¼ cup butter
salt and pepper to taste
1 (10 ounce) package frozen cut okra

Steps:

  • Combine the water, butter beans, pork, onion and garlic in a soup pot over medium heat. Bring to a boil, and cook for about 40 minutes. Add butter, salt and pepper, and continue to boil for 20 minutes. Add okra, and cook until beans and okra are tender, about 10 minutes.

1/2 pound(s) bacon, chopped
1 pound(s) smoked sausage, sliced thin & cut in half
1 large onion, chopped
1 large bell pepper, chopped
3 cup(s) water
3 can(s) 16-oz. each butter beans, drain and rinse
1 can(s) 15-oz. diced tomatoes with juice
1 can(s) 12-oz. tomato paste
1 package(s) 16-oz. okra, frozen sliced
- salt and pepper to taste

Steps:

  • In large pan, over medium heat cook bacon and sausage until bacon is crisp. Remove meat from pan and drain on paper towels. Discard all but 2 tablespoons of the drippings. Cook onion and green pepper in drippings until tender. Add water, beans, tomatoes, tomato paste, salt and pepper. Bring to a boil, reduce heat and simmer uncovered 10 minutes. Add meat and cook 10 minutes longer. Add okra; cover and cook 10 minutes longer or until okra is tender.
  • Serve with white rice or corn bread.
