EASY REFRIED BEANS

Easy Refried Beans image

These refried beans are delicious and so easy to make. This refried bean recipe is quick, too-use canned beans and they're ready in 25 minutes! Plus, these beans are healthy, vegan and gluten free. Recipe yields 2 1/2 cups refried beans (21 ounces), enough for 5 servings.

Provided by Cookie and Kate

Categories     Side Dish

Time 25m

Number Of Ingredients 10

1 tablespoon extra-virgin olive oil
1/2 cup finely chopped yellow or white onion (about 1/2 small onion)
1/4 teaspoon fine sea salt
2 cloves garlic, pressed or minced
1/2 teaspoon chili powder
1/4 teaspoon ground cumin
2 cans (15 ounces each) pinto beans, rinsed and drained, or 3 cups cooked pinto beans
1/2 cup water
2 tablespoons chopped fresh cilantro
1 tablespoon lime juice (about 1/2 medium lime), to taste

Steps:

  • In a medium saucepan over medium heat, warm the olive oil until shimmering. Add the onions and salt. Cook, stirring occasionally, until the onions have softened and are turning translucent, about 5 to 8 minutes.
  • Add the garlic, chili powder and cumin. Cook, stirring constantly, until fragrant, about 30 seconds. Pour in the drained beans and water. Stir, cover and cook for 5 minutes.
  • Reduce the heat to low and remove the lid. Use a potato masher or the back of a fork to mash up about at least half of the beans, until you reach your desired consistency. Continue to cook the beans, uncovered, stirring often, for 3 more minutes.
  • Remove the saucepan from the heat and stir in the cilantro and lime juice. Taste, and add more salt and lime juice if necessary. If the beans seem dry, add a very small splash of water and stir to combine. Cover until you're ready to serve.

BEST EVER PINTO BEANS

Best Ever Pinto Beans image

I learned to make pinto beans from my Grandma, who came from Oklahoma. I've added to the recipe, and my Mother used to say mine were the best beans she'd ever tasted. Serve the Southern way - with cornbread and steamed greens.

HAM HOCKS AND BEANS

Ham Hocks and Beans image

Comfort food at its best. Many people will tell you to soak your beans first (however, I have been told that you should soak dry beans when using a pressure cooker. Please follow manufactorers instructions in this case). I never do. I just wash them and cook them as below. For a really hearty winter meal, serve these with a loaf of hot fresh bread or a pan of corn bread and a pan of old fashioned crisp fried potatoes. These may also be made in the pressure cooker and crockpot.

Categories     Pork

Time 4h10m

Yield 8 serving(s)

Number Of Ingredients 8

4 -6 ham hocks
1 large onion, chopped
6 cloves garlic, minced (more if desired)
1 large bay leaf
1 tablespoon oregano
1 teaspoon pepper
salt

Steps:

  • Wash beans and remove all gravel and such.
  • Place beans, ham hocks, onions and garlic in a large dutch oven filled with water.
  • Add spices.
  • Bring to boil.
  • Simmer on med-low heat for 4 to 5 hours, adding more water as needed.
  • Remove hamhocks when they are tender and falling apart; allow to cool so they can be handled.
  • Remove meat from ham hocks (discarding fat and bones) and return to the soup.

OKIE BEANS

Okie Beans image

My husband asked me to make beans when we first got married. He told me how and went to work looking forward to beans for dinner. Well he was very dissapointed. I was used to really thick baked beans...so...I poured out all the juice! This recipe is almost like soup. For those who like thicker beans just cut down on the water, but the beans will be thicker the next day. Ham shanks usually come in a package cut up into 2 or three portions. This is one of those recipes that you can tweak to suit your taste.

Provided by Calicat

Categories     Beans

Time 8h15m

  • Add water. More or less to taste.
  • Add salt and hot sauce.
  • Cover and place in a preheated 250 oven for 8 hours.
  • Check after 4 hours and add water if needed.
  • When ready to serve, take out ham shanks and remove bones.
  • Shred meat with 2 forks and add back to beans.
  • Serve with cornbread or homemade biscuits and fried taters.

HOW TO MAKE SLOW COOKER REFRIED BEANS

How to Make Slow Cooker Refried Beans image

As football season and the holidays come into full force, I have pulled out my slow cookers for backup.

Categories     main dish     side dish

Time 12h10m

Yield 8 servings

Number Of Ingredients 10

1 lb. Dried Pinto Beans (or Kidney Beans, Black Beans)
1 Onion, Peeled And Shredded
4 cloves Garlic, Minced
1 tbsp. Ground Cumin
2 tsp. Sea Salt
1/2 tsp. Cayenne Pepper
Optional Add-ins, Such As Ham Bone Or Bacon Strips
7 c. Water
Salt And Pepper, to taste
Optional Toppings, To Serve (See Note)

Steps:

  • Pour dried beans in the slow cooker. Add shredded onion, garlic, cumin, salt and cayenne pepper. For a richer flavor, add a ham bone or a couple of bacon strips to the crock. Pour the water over the top of the beans and cover tightly. Turn slow cooker on high and cook for 8-10 hours. You can also cook on low for 12 hours or longer.Once beans are very tender, remove the ham bone or bacon if necessary. Depending on your slow cooker, you may have excess liquid in the crock. Scoop 1 ½ cups of the bean liquid out of the crock and reserve.Use an immersion blender or a potato masher to smash the beans into a relatively smooth texture. Add some of the bean liquid back in if needed to reach the right consistency. Salt and pepper to taste.Serve as-is or sprinkle with your favorite toppings. Serve warm.Note: Some optional topping suggestions include shredded cheese, sliced jalapenos, chopped green onions, sour cream, and cayenne pepper.

  • Rinse the beans thoroughly and pick out any little rocks or sticks that might have gotten packed into the bag along with the beans. Place them in a large pot with the bacon, and pour water over the top (1 or 2 inches above the beans). Bring to boil over medium-high heat, then reduce to low and cover. Simmer for 2 to 3 hours (mine took close to 3). If the liquid appears to be evaporating quickly, add more water as needed during cooking. The beans are done when they're tender but not mushy. Add in salt and pepper. Stir them up and add optional seasonings as desired.
  • Preheat the oven to 450 degrees F. In a bowl, whisk together the cornmeal, flour, salt and baking powder. Measure the buttermilk and milk in a measuring cup. Stir in the egg with a fork. Add the baking soda and stir (it'll bubble a bit). Pour into the bowl with the dry ingredients and stir with a fork just until combined. In a small bowl, melt 1/4 cup shortening in the microwave. Slowly add the melted shortening to the batter, stirring just until combined. In an iron skillet over high heat, melt the remaining 2 tablespoons of shortening. Pour the batter into the hot skillet and spread to even out the surface. Cook on the stovetop for about a minute, then bake in the oven for 15 to 20 minutes, or until golden brown. The edges should be crispy.
