Steps:
- To Make The Dough: Sift the flour, baking powder, and salt together; set aside.
- Cream the butter with 3/4 cup of the brown sugar and the white sugar. Beat in the eggs, milk and vanilla. Mix at high speed for 2 minutes, then reduce speed and gradually blend in the flour mixture. Cover and refrigerate dough for at least 3 hours.

- Combine the cornstarch and 2 tablespoons of the water and mix until smooth. Add to the raisin mixture and continue to simmer until thick. Remove from heat and let cool. Once cool, stir in the chopped nuts.
- Preheat Oven to 350 degrees F (175 degrees C). Lightly grease baking sheets.
- On a floured surface, roll out the chilled dough to 1/8 inch thick. Cut into 2 3/4 inch rounds. Place rounds on the prepared baking sheet. Place a heaping teaspoon of the raisin filling on the cookie round and top with another round. Crimp the edges closed.
- Bake at 350 degrees F (175 degrees C) for 8 minutes. Allow cookies to cool on sheet until just barely warm.

OH SO EASY RAISIN FILLED
Just not quite sure whether to call this a pie or a cookie but it is so easy who really cares. I don't like rolling out dough so when it dawned on me after looking at all these recipes made in muffin tins...the light went on. I first tried it with Cake mix and egg and a stick of butter but that was just a little too crumbly,...

Steps:
- 1. Preheat oven to 350 degrees.
- 2. You will need muffin tins mini or regular whatever you have. Spray your tins with cooking spray.
- 3. Divide sugar cookie dough in half. Pinch off a bit of sugar cookie dough from one of the halves and form it into the bottom of the muffin tin and up the sides. You should be able to get 8 to 12 raisin filled depending on the muffin tin.
- 4. Fill the dough with raisin pie filling as full as you like.
- 5. Take the other half of the dough and pinch off pieces for as many filled muffin tins as you have. Flatten each piece with a glass or your hand and lay on tip of the raisin filling tucking it in to the dough from the bottom.
- 6. With a pastry brush brush the milk over top of the dough and sprinkle with sugar.
- 7. Bake for 18-20 minutes until done. Let cool completely before eating or you will burn you mouth.
