Meatloaf Meatballs are bite sized appetizers that have all the flavor you love in a classic meatloaf recipe smothered in a tasty sauce!

1 small yellow onion (minced)
2 cloves garlic (minced)
1 tbsp butter
1 1/3 pound ground beef
1 large egg
1/2 cup panko bread crumbs
1/2 cup milk
1 tbso Worcestershire sauce
1/2 tsp thyme
1 tsp salt
1/2 cup ketchup
1 tbsp brown sugar
1 tbsp spicy brown mustard

Steps:

  • Preheat oven or grill to 350 degrees F. Line a baking sheet with parchment paper for easy clean up.
  • Melt butter in saute pan over medium heat. Cook onions until fragrant and slightly brown while stirring occasionally, about 3-5 minutes. Reduce heat to low and add garlic, cook for 2-3 minutes. Remove from heat and set aside to cool.
  • In large bowl, combine ground beef, egg, bread crumbs, milk, Worcestershire sauce, thyme, salt and cooked onions and garlic. Use hands to mix well, but try not to over work the meat. Shape into 1-2 inch sized meatballs on parchment lined baking sheet.
  • Bake uncovered in the preheated oven 20 minutes. While meatballs are cooking, combine ketchup with mustard and brown sugar in a bowl. Set aside.
  • After 20 minutes of cooking, insert toothpick into each meatball, dip into ketchup mixture, return to baking sheet, and continue baking for about 10 additional minutes to an internal temperature of 160 degrees F (70 degrees C). Serve warm with toothpicks for easy eating. Can be kept warm in slow cooker, if needed.

2 pounds ground beef
4 slices white bread - soaked with water, squeezed out and broken into tiny pieces
3 eggs
½ cup grated Romano cheese
1 teaspoon dried parsley
¼ cup minced onion
salt and pepper to taste
3 tablespoons ketchup
4 tablespoons steak sauce

Steps:

  • In a large bowl, combine the ground beef, bread, eggs, cheese, parsley and onion and season with salt and pepper to taste.
  • For meatballs: Form mixture into golf size balls and brown in a large skillet over medium heat for 5 to 10 minutes, or until well browned. Add to your favorite spaghetti sauce and simmer until meatballs are completely cooked through, about 15 to 20 minutes.
  • For meatloaf: Preheat oven to 350 degrees F (175 degrees C). Add 3 tablespoons ketchup to mixture, mix well, form into a loaf and place in a 9x13 inch baking dish. Bake at 350 degrees F (175 degrees C) for 75 to 90 minutes.
  • For burgers: Add 3 to 4 tablespoons steak sauce to mixture, mix well and form into patties. Saute in a large skillet over medium heat for 10 to 15 minutes, or to desired doneness.

1 cup ketchup
1/4 cup chopped fresh parsley
2 tablespoons grated onion
1/4 teaspoon salt
1/4 teaspoon freshly ground pepper
1 egg
32 frozen (do not thaw) miniature potato nuggets (from 28-oz bag)
1/3 cup packed brown sugar

Steps:

  • Heat oven to 350°F. Line broiler pan with foil; spray foil with cooking spray.
  • In large bowl, mix beef, bread crumbs, 1/3 cup of the ketchup, the parsley, onion, salt, pepper and egg. Shape meat mixture into 32 (1 1/4-inch) meatballs, placing 1 potato nugget in center of each. Place meatballs in pan.
  • Bake 25 to 28 minutes or until thoroughly cooked.
  • In large serving bowl, mix remaining 2/3 cup ketchup and the brown sugar. Add hot cooked meatballs, tossing to coat completely. Serve immediately.

1/2 cup panko breadcrumbs
2 TBSP dried onion flakes
2 tsp dried oregano
1 TBSP dried parsley
1/2 tsp pepper
1/2 tsp salt
1 garlic clove, minced
1 TBSP mustard
1 TBSP worcestershire sauce
1 egg
1 lb grass fed ground beef
1/2 lb ground pork
2/3 cup ketchup
1/2 tsp dried mustard
1/2 cup brown sugar

Steps:

  • Preheat oven to 350F.
  • Line a rimmed baking sheet with aluminum foil. Spray with cooking spray and set aside.
  • In a large mixing bowl, stir together the panko breadcrumbs, onion flakes, oregano, parsley, garlic, pepper, salt, mustard, and worcestershire sauce until well mixed.
  • Mix in the egg until well combined.
  • Using your hands, add in the ground beef and the ground pork and gently mix until just combined. Do not overmix.
  • Using a medium sized cookie scoop, form about 18-20 meatballs and place 2" apart on the baking sheet.
  • Wash your hands!
  • In a small-medium sized bowl, mix together the ketchup, mustard and brown sugar until combined.
  • Spoon over the meatballs so that each meatball has a generous topping.
  • Bake for 18-22 minutes, or until an internal thermometer reads 165.
  • Serve and enjoy!

2 lb ground beef
1 egg
1/2 c rolled oats
1/2 c ketchup
1/2 tsp mustard
1 small green pepper
1/2 c chopped onion
1 tsp worcestershire sauce
salt and pepper
2 - 3 dash(es) any spice you like! i go to the spice cupboard and give them all a sniff then decide
MEATLOAF TOPPING
1/2 c ketchup
1/2 tsp mustard
1 - 1/2 Tbsp brown sugar
1 - 1/2 Tbsp molasses
1 dash(es) steak sauce
MEATBALLS
USE THIS RECIPE FOR MEATBALLS TOO! WHEN MAKING MEATBALLS SUBSTITUTE PLAIN BREAD CRUMBS INSTEAD OF ROLLED OATS.

Steps:

  • 1. In a large bowl mix all the meatloaf ingredients. Take off the jewelry and get your hands into it
  • 2. Spray an oblong shallow pan with non stick cooking spray, shape the mixture into a loaf and center in pan leaving plenty of room all around. Do not use a loaf pan
  • 3. Mix sauce in a cup or small bowl and pour over meatloaf
  • 4. Bake at 350 degrees for 35 minutes. When you smell it... check it. Meatloaf is done when you can see the hot sizzle of the sauce creating a dark circle. Don't let it turn black.
  • 5. To make meatballs instead of meatloaf, substitute plain bread crumbs for rolled oats. Do not make any topping. Roll mixture into small balls and place on a baking sheet Bake at 350 for 15 minutes Remove from oven and drain off grease. Place meatballs a large pan of your favorite sauce

3 celery ribs, finely chopped
1/4 cup carrot, grated
1/2 large onion, finely chopped
1 lb lean ground beef
1 lb lean ground chicken (can substitute lean ground turkey)
1 tablespoon Worcestershire sauce, divided
1/2 cup Italian seasoned breadcrumbs
1/3 cup ketchup
2 teaspoons creole seasoning (Tony Chachere's Original Creole Seasoning)
1 teaspoon all purpose Greek seasoning (Cavender's All Purpose Greek Seasoning)
1 teaspoon garlic powder
2 large egg whites, lightly beaten
1 (8 ounce) can tomato sauce
2 tablespoons chili sauce, Heinz
1 tablespoon ketchup
1 tablespoon light brown sugar, packed
1 teaspoon Worcestershire sauce
1/8 teaspoon crushed red pepper flakes (optional)

Steps:

  • Heat olive oil in a medium nonstick skillet over medium heat; add celery, carrot and onion, and sauté 7 minutes or just until tender.
  • Stir together celery mixture, ground beef, 1 tablespoon Worcestershire sauce, breadcrumbs, and next 5 ingredients in a large bowl. Shape into 2" meatballs using an ice cream scoop. Place the meatballs in a foil lined baking dish and bake for 30 minutes at 350 degrees.
  • Stir together 1 tablespoon Worcestershire sauce, tomato sauce, brown sugar, chili sauce, 1 tablespoon ketchup and red pepper flakes until blended; pour evenly over meatballs, and bake 10 to 15 more minutes or until no longer pink in center. Let stand 10 minutes before serving.

20 oz can jackfruit (drained (green jackfruit in brine), or about 2 cups pelled chopped green jackfruit)
2 cups water
1 tsp garam masala
1/4 tsp salt
1/2 tsp garlic powder
1 cup chickpea flour
1 hot green chili (finely chopped or use cayenne to taste)
1/2 tsp garam masala
1/2 tsp paprika
1/2 tsp cumin powder
1/3 to 1/2 tsp salt
1 tbsp finely chopped mint (optional or cilantro, or use 1/2 tsp dried fenugreek leaves (kasoori methi))
1/2 tsp lemon juice
1.5 tbsp garlic paste (or crushed garlic)
1 tbsp ginger paste (or grated ginger)
1 tsp oil + more as needed

Steps:

  • For the jackfruit: Combine all the ingredients (jackfruit + water + spices) in a saucepan and bring to a boil over medium high heat. about 6 minutes. Cook for another 6 to 7 minutes. Total 14 minutes.
  • Cool slightly, drain and keep aside.
  • For the Veggie Balls: Meanwhile, dry roast 1 cup of chickpea flour in a large skillet over medium low heat. Stir every 2 minutes. about 7 to 8 minutes. or dry roast over medium heat and stir every 30 seconds to avoid burning. 4 to 5 minutes. The flour should start to smell nutty and change color slightly. Keep aside.
  • Using a fork or a food processor shred the boiled and drained jackfruit. Add the spices, ginger, garlic, oil and mix well. Add 3/4 cup chickpea flour and mix well. Add a tbsp flour at a time until the mixture starts to come together, not too sticky, but also not dry. Oil your hands and Shape the mixture by pressing lightly into 1 inch balls.
  • To pan fry, add 1 to 2 tsp oil in a skillet and heat over medium high heat. When hot, add the jackfruit balls and pan fry for 1-2 minutes on all sides. (total 6 to 7 minutes).
  • To Bake: Preheat the oven to 410 degrees F / 210ºc. Place the shaped balls on parchment lined baking sheet. Brush oil on top. Bake for 16 to 18 minutes.
  • I like these balls pan-fried. Serve with marinara and vegan mozzarella in sub sandwich or tacos or over pasta.
