WALNUT OH HENRY BARS
Walnut Oh Henry Bars - a scrumptious no-bake cookie bar with a caramely, nutty centre sandwiched between graham crackers and topped with sweet vanilla buttercream frosting.

- Line the bottom of a 9x13 pan with a single layer of the graham cracker, cutting them to fit around the edges. You will need another identical layer fro the top.
- Toast the walnuts in a single layer on a pan in a preheated 350 degree oven for 10 minutes. Toss them once at the 5 minute mark. Allow them to cool to room temperature before roughly chopping them with a chefs knife or individually breaking them into a few pieces each with your fingers. larger chunks are better in this recipe, I think.
- In a medium to large saucepan over medium heat, add the brown sugar, butter, milk and vanilla extract. Bring to a slow rolling boil for about 4 minutes. Turn the heat down if necessary. This should never boil too rapidly.
- Remove from heat and stir in the nuts, coconut and graham crumbs.
- Spread this hot mixture evenly over the graham cracker base and then top with an additional layer of graham crackers.
- Allow to cool to room temperature before placing in the fridge for a couple of hours at least to set completely.
- Top with the vanilla buttercream frosting, cut in squares and serve.
- Cream together all of the frosting ingredients until smooth and spreadable. It's okay to add a little more milk if needed but the thicker the frosting consistency the better. If it gets too soft, just add a couple pf heaping tablespoons of icing sugar.

Very fast (top-of-the-stove) and scrumptious! You can freeze this (if you manage to not eat it all!) without the icing. I have been making this for years with great reviews!!

Steps:
- Line a 9x9 inch pan with whole crackers, trimming to fit. Set aside.
- Put butter, sugar and milk in saucepan. Bring to boil. Remove from heat and stir in chocolate chips. When chips have melted, add the crumbs and nuts. Stir to mix. Pour over crackers in pan.
- Cover with whole graham crackers trimming to fit. Cool before frosting.
- Icing: beat ingredients together in small bowl, adjusting liquid as needed. Spread over squares. Cover and allow to stand a few hours before cutting so the crackers will soften. Cut into 36 squares.

- Preheat oven to 350 degrees F (180 degrees C).
- Mix the oats, brown sugar, butter or margarine, and white corn syrup. Pat into a 10 x 15 inch pan. Bake for 10 to 15 minutes. Do not over bake.
- Melt chocolate chips and peanut butter. Spread over baked crust while hot. Cut into bars right away.

This is another of the great recipe from my late Mother-in-law. I have always enjoyed making here recipes, they remind me of her, and always taste so good!

Steps:
- Bring brown sugar, sweetened condensed milk and butter to a boil for two minutes. Mix 1 cup graham cracker crumbs, 1 cup coconut, 1 cup walnuts and vanilla into hot mixture.
- Line bottom of greased 9x13-baking pan with graham crackers. Pour in filling. Top with graham crackers.
- Frost with chocolate frosting. Refrigerate for 4 hours or overnight.

- Mix Sugar and corn syrup together in a large pan on stove and bring to a boil.
- Remove from heat and add peanut butter.
- Pour cornflakes into a large bowl.

- Stir until smooth.
- Remove from heat.
- Pour 1/2 into a foil lined 8 inch square pan.
- Refrigerate until firm.
- Combine caramels, water and butter.

- Combine oats and butter in 2-quart glass Mix-N-Pour bowl.
- Microwave on High, uncovered, 3 to 4 minutes, or until heated through.
- Stir in brown sugar and corn syrup.
- Microwave on High, uncovered, 1 1/2 to 2 1/2 minutes or until heated and sugar is dissolved.
- Turn into greased 10 x 6-inch baking dish.

- Butter 9 x 13-inch pan.
- In large saucepan, melt syrup and sugar together until it bubbles.
- Add peanut butter and heat again until mixture bubbles.
- Remove from heat and stir in rice cereal (Alternately, use large glass bowl in microwave).
- Spread in buttered pan.
- In small bowl, melt chips together (the microwave works great, but watch closely and stir often).
- Spread over top of cereal mixture.
