BROCCOLI AND CRANBERRY SALAD



Broccoli and Cranberry Salad image

Yield 8-10

Number Of Ingredients 13

SALAD:
5 cups broccoli florets, cut into 1/2-inch pieces
1/2 cup chopped red onion
1 cup shredded sharp Cheddar cheese
1 cup cooked and crumbled bacon pieces
1 cup sunflower kernels
3/4 cup Ocean Spray® Craisins® Original Dried Cranberries
DRESSING:
1 cup salad dressing or mayonnaise
1/4 cup sugar
2 tablespoons red wine vinegar
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Combine all salad ingredients in a large mixing bowl; mix well. Combine dressing ingredients in a small mixing bowl. Mix until thoroughly combined using a fork or wire whisk. Add dressing to salad and mix well. Refrigerate 1 hour.

1 (3 ounce) package orange Jell-O
1 cup hot water
1 (3 ounce) package cream cheese, room temperature
1 (10 ounce) package marshmallows
1 cup pineapple juice
1 cup pineapple tidbits, drained and reserve
1 cup mandarin orange, drained
1 cup whipped cream

Steps:

  • Dissolve Jell-0 in hot water.
  • Then add cream cheese and marshmallows; stir until blended.
  • Add pineapple juice.
  • Chill until partly set, then whip mixture.
  • Add pineapple, mandarin oranges and whipped cream.
  • Mix well and refrigerate until ready to serve.

2 cups baby field greens
2 tablespoons dried cranberries
2 tablespoons pecans, chopped (toasted or praline)
1 ounce chevre cheese, crumbled
raspberry vinaigrette dressing, to taste

Steps:

  • Mix first 3 ingredients together, crumble in half the goat cheese and dress lightly.
  • Toss to coat the greens and sprinkle on the remaining goat cheese. Pass extra dressing on the side.
