Steps:
- In a food processor, pulse the flours, oats, and salt to combine. Add the butter, cream cheese, and egg yolk, and process until the dough just holds together, 15 to 20 seconds.
- Turn out dough onto a clean work surface. Flatten into a disk. Wrap in plastic; chill at least 1 hour or overnight.

- 1. Toast oats in a shallow pan or electric fry pan at 350^ for 10 minutes. Combine with remaining ingredients; toss until evenly coated.
- 2. Press into sides and bottom of buttered 9-inch pie plate.Chill until firm. Great for cream pies or my Strawberry cream cheese pie.
OATMEAL PIE CRUST
Use this cookie-like oatmeal pie crust to make the best pudding pies! It has cinnamon and molasses for lots of flavor and it is sweet, crispy, and crunchy. We created it for our Butterscotch Pudding Pie recipe, but it does great with no-bake cheesecakes and other pudding pies!

- Preheat the oven to 325 degrees F.
- In the base of your food processor or in a mixing bowl, add all of the dry ingredients.
- Melt the butter in the microwave or on the stove. Once melted, add the molasses to the butter.
- Add the melted butter and molasses mixture to the dry mix in parts, pulsing 1-2 times after each addition. We added the butter in about 4 small pours.
- The crust is ready to go in the pan when there are no more clumps of dry flour, the crust mix looks darker than before because of the added moisture, and the mix will stick together in your hand if you squeeze it. Use our photos for reference, if that helps!
- Add the mixture to your pie plate and spread an even layer across the base and sides.
- Bake in a preheated oven at 325 degrees F for 15 minutes.
- After 15 minutes, bring the crust out and use a fork or spoon to press down the crust along the sides and base. This ensures an even layer.
- Return the crust to the oven for 3-5 minutes.
- Remove from oven and allow to cool.

GRANDMA'S OATMEAL PIE
This recipe for the Best Oatmeal Pie is Grandma's prized blue ribbon winning recipe. Like a pecan pie but with oatmeal!

- Preheat the oven to 350F degrees.
- Place the pie crust in a pie plate and flute edges if desired, set aside.
- With a hand mixer beat eggs until light and fluffy.
- Add in the granulated sugar, brown sugar, flour, cinnamon and beat until well combined.
- Next add the corn syrup, melted butter and vanilla and beat until incorporated.
- Lastly fold in the oatmeal.
- Pour into the prepared pie crust and cook for 45 -55 minutes. Until the center has no jiggle.
- Let cool fully about 3-4 hours before slicing. Serve with ice cream if desired.

OATMEAL NUT PIE CRUST
I just found this recipe in an old band bosters cookbook and placing it here for sharing and later use. The recipe mentions that it is a good substitute for graham cracker crust. It sounds good to me and might be a good alternative for cream pies or maybe even dutch apple or cherry.

- Generously grease the bottom and sides of a 9-inch pie pan with vegan butter or coconut oil. Preheat oven to 375°F.

- Combine oatmeal and flours in the bowl of a food processor and process for 15-20 seconds. Add shortening and butter and pulse 12-15 times. The mixture should be coarse. Don't go too far with this. You should have small but visible fat lumps throughout.
- In another small bowl, whisk together buttermilk and egg. Pour over flour mixture and pulse 5-7 times. Remove lid and blade. Use hands or spatula to press dough together. All crumbs should come together into a ball.
- Divide dough in half and place each in a separate gallon-size zippered plastic bag. Place dough ball at the center of the bag.
- Begin to roll out with dough remaining in the plastic bag. Roll dough evenly to all four corners. Open the bag and re-close to remove air or wrinkles. Flip bag and roll on the reverse side to help with wrinkles. Try to roll it as evenly as possible. Holding the bag up to a window or light will show you where the dough may be too thin or thick. Place flat dough (still in the bag) in the freezer. Repeat process with second dough ball.
