Classic Oatmeal Scotchie Bars are soft, chewy oatmeal butterscotch cookie bars topped with sweet cinnamon frosting. You'll love this updated take on an old fashioned favorite!

1 cup unsalted butter, softened
1/4 cup granulated sugar
1 1/4 cup light brown sugar, packed
2 large eggs
1 teaspoon vanilla extract
3 cups quick oats
1 1/4 cup all-purpose flour
1 teaspoon baking soda
1/2 teaspoon kosher salt
1 1/2 teaspoon cinnamon
11 oz package Butterscotch morsels
1 cup unsalted butter, softened
1 teaspoon cinnamon
pinch kosher salt
3 cups powdered sugar
3 Tablespoons milk

Steps:

  • For the bars, beat butter with sugars until blended. Beat in eggs and vanilla. Add oats, flour, baking soda, salt and cinnamon and beat until combined. Fold in butterscotch morsels.
  • Press cookie dough in a parchment paper lined 15 inch x 10 inch x 1 inch baking sheet. Bake in a 375 degree oven for 18-22 minutes (I prefer to make these a little on the undercooked side, staying near the 18 minute mark).
  • Cool completely.
  • For the frosting, beat butter in an electric mixer with whisk attachment for 3-5 minutes until pale in color. Add cinnamon, salt, powdered sugar and 2Tbsp milk. Beat an additional 3-5 minutes, adding more milk if necessary. Spread over cooled cookie bars. Cut and enjoy.

2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
1 cup butter, softened
¾ cup white sugar
¾ cup brown sugar
2 eggs
1 ½ cups quick-cooking rolled oats
2 cups butterscotch chips, divided

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13-inch baking pan.
  • In a bowl, whisk together the flour, baking powder, baking soda, and salt.
  • In a large mixing bowl, mash the butter, white sugar, and brown sugar together until smooth and creamy, and beat in the eggs to make a creamy mixture. Gradually beat in the flour mixture, rolled oats, and 1 1/2 cup of butterscotch chips.
  • Press the dough into the prepared baking dish, and sprinkle the top with remaining 1/2 cup of butterscotch chips.
  • Bake in the preheated oven until the top is golden brown, 30 to 35 minutes. Allow to cool in the pan before cutting into bars and serving.

Oatmeal Scotchie Cheesecake Bars have an oatmeal cookie base filled with butterscotch chips and topped with an easy creamy cheesecake.

½ cup (113g) unsalted butter (softened)
½ cup (100g) packed brown sugar
½ cup (100g) granulated sugar (divided)
2 large eggs (divided)
2 teaspoon vanilla (divided)
¾ cup (217g) all-purpose flour
½ teaspoon baking soda
½ teaspoon cinnamon
¼ teaspoon salt
1 ½ cups quick cooking oats
½ cup (85g) butterscotch chips (plus more for garnish)
8 ounces cream cheese (room temperature)
¼ cup sour cream (room temperature)

Steps:

  • Preheat oven to 350°. Line an 9x9" pan with foil and spray with cooking spray. Set aside.
  • Make the cookie layer: mix flour, baking soda, cinnamon, and salt in a medium bowl. Set aside. In the bowl of an electric mixer fitted with the paddle attachment, beat the butter, brown sugar, and ¼ cup granulated sugar until creamy. Add one egg and 1 teaspoon vanilla and beat well. Add the dry ingredients and mix until combined. Stir in the oats and butterscotch chips. Press into the bottom of the prepared pan.
  • Make the cheesecake layer: Beat the cream cheese with a hand mixer for 1 minute, or until smooth. Add sour cream, remaining 1 egg, remaining ¼ cup sugar, and remaining 1 teaspoon of vanilla and beat until smooth. It's important to start with room temperature ingredients so there will be no lumps. Pour over cookie layer.
  • Bake for about 35-45 minutes until top of cheesecake looks solid and starts to crack around the edges (mine took about 40 minutes). Cool for an hour and then refrigerate for at least three hours or overnight before cutting into bars.
  • Optional topping: melt 1/2 cup butterscotch chips with 1 teaspoon vegetable oil on high power in 30 second increments, stirring between each, until melted and smooth. Place melted candy in a sandwich bag and cut off one tip; drizzle over cut bars.

2 sticks unsalted butter, at room temperature, cut into pea-sized pieces, plus more for pan
2 cups all-purpose flour
1 1/2 cups old fashioned rolled oats
3/4 cup firmly packed brown sugar
1 teaspoon ground cinnamon
1 (11-ounce) bag butterscotch chips
1 (8-ounce) package cream cheese, at room temperature
1 (14-ounce) can sweetened condensed milk
1 lemon, zested and juiced
1 teaspoon vanilla extract

Steps:

  • Preheat the oven to 350 degrees F. Drape a 9 by 13-inch pan with overlapping pieces of aluminum foil, creating handles for easy removal. Butter the paper, and reserve.
  • In a food processor add the flour, oats and brown sugar and pulse to combine. Add the 2 sticks of butter, the cinnamon and the butterscotch chips. Pulse, pulse, pulse until the mixture forms clumps when pressed between your fingers. Transfer the mixture to a large bowl. Press half of the mixture into the bottom of the prepared pan in an even layer, reserve the other half. Bake in the preheated oven just until slightly golden and set, about 12 to 15 minutes. Remove from the oven and cool completely.
  • Beat together the cream cheese, condensed milk, lemon zest and juice and vanilla in an electric stand mixer fitted with a paddle, or with an electric hand mixer until no lumps of cream cheese remain. Spread evenly over the baked and cooled oatmeal mixture. Sprinkle the remaining half of the oatmeal mixture over the cream cheese. Bake until the top is golden, about 40 minutes.
  • Cool and chill before cutting. Run a knife around the edge of the pan, and using the foil handles, transfer the bars to a cutting board. Cut into 2-inch squares with a sharp knife and serve.
  • Call yourself a superstar!!!
  • Cook's Note: For a delicious and healthy variation of this recipe, try replacing the butterscotch chips with tasty dried cranberries.

1 teaspoon baking soda

3/4 cup granulated sugar
2 eggs
1 teaspoon vanilla extract
3 cups Old-Fashioned Quaker oats
1 (11 ounce) package NESTLÉ® TOLL HOUSE® Butterscotch Flavored Morsels (about 2 cups)

Steps:

  • Preheat oven to 375 degrees F.
  • Combine flour, baking soda, salt, and cinnamon in a small bowl; set aside.
  • Beat butter, granulated sugar, brown sugar, eggs, and vanilla extract in a large bowl.
  • Gradually beat in flour mixture.
  • Stir in oats and morsels.
  • Drop by rounded Tablespoonfuls onto an ungreased baking sheet.

Steps:

  • Preheat oven to 350 degrees F.
  • In a large bowl, cream together butter, brown sugar and sugar until fluffy.
  • Add eggs and vanilla and mix until combined.
  • Mix in cinnamon, salt, baking soda, flour and oatmeal and mix until well combined.
  • Fold in butterscotch chips.
  • Spray a half baking sheet (18"x13"x1") with nonstick cooking spray and spread dough in pan.
  • Dough will be sticky, so use a rubber spatula and spread as evenly as possible.
  • Bake for 20-22 minutes, or until the edges are golden brown.
