1 cup all-purpose flour
1 cup brown sugar
¾ cup oats
½ cup melted butter
1 teaspoon ground cinnamon
4 cups diced rhubarb
1 cup white sugar
1 cup water
2 tablespoons cornstarch
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
  • Mix flour, brown sugar, oats, butter, and cinnamon together in a bowl until crumbly. Press 1/2 of the oat mixture into the bottom of prepared baking dish. Sprinkle rhubarb over oat mixture.
  • Combine white sugar, water, cornstarch, and vanilla extract in a saucepan over medium heat; cook and stir until thick and clear, about 5 minutes. Pour sugar mixture over rhubarb. Sprinkle remaining oat mixture over rhubarb.
  • Bake in the preheated oven until crisp is lightly brown and bubbling, about 1 hour.

People are skeptical when they hear it is a rhubarb pie without strawberries but after only one taste, they understand the magic of this pie. Serve with vanilla ice cream for added sweetness!

4 cups sliced fresh rhubarb (about 1/2 inch thick)
1 ½ cups white sugar
2 tablespoons quick-cooking tapioca
1 ½ tablespoons butter, melted
1 (9 inch) refrigerated pie crust
½ cup regular rolled oats
¼ cup white sugar
2 tablespoons all-purpose flour
1 tablespoon butter, melted
1 pinch ground cinnamon

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Toss the rhubarb with 1 1/2 cups of sugar and the tapioca in a large bowl. Drizzle with the melted butter and toss again to coat. Pour the rhubarb into the pie crust, and set aside.
  • Mix together the oats, 1/4 cup sugar, flour, softened butter, and cinnamon in a small bowl until evenly blended. Sprinkle the oat topping over the rhubarb.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease an 8-inch square baking dish.

1 cup rolled oats
½ cup white sugar
⅓ cup shortening, melted
3 cups diced rhubarb
½ cup white sugar
¼ teaspoon ground cinnamon
1 tablespoon water
1 tablespoon butter

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a medium bowl, sift together the flour and salt; stir in oats and 1/2 cup sugar. Cut in shortening until mixture is crumbly. 450g rhubarb or other fruit
60g heather honey
3 or 4 tablespoons of water
A squeeze of lemon
60g plain flour
25g coarse oatmeal (the fresher the better)
60g brown sugar
60g butter or margarine

Steps:

  • Cook the fruit with the honey, water and lemon juice until it is soft but not mushy. Place in a deep pie dish.
  • Sift the flour, then mix together the ingredients for the crumble in the order given above. Warm the butter or margarine until it is soft (but not oily) before adding in. Once the crumble has been well mixed, sprinkle evenly over the fruit.
  • Bake in a pre-heated oven at 400F/200C/gas mark 6 for 20 minutes in the hottest part of the oven or until the crumble is brown and crunchy.

  • in a large bowl, combine the sliced rhubarb, 2/3 cup of sugar, and 3 tablespoons flour. place in an ungreased 3-quart baking dish. set aside.
  • in another large bowl, make the crisp topping by adding the oats, flour, sugar, brown sugar and cinnamon. cut the butter into small cubes and place in the bowl. using a pastry cutter (or two butter knives), work the butter into the dry ingredients until it resembles coarse crumbs. stir in the chopped pecans.
  • spread the topping over the rhubarb mixture, making sure to cover completely. bake at 400 for 40-45 minutes, until the crisp topping is golden brown and the rhubarb is bubbly around the edges. serve warm from the oven, or cool to room temperature, and serve with whipped cream or vanilla ice cream.

  • mix the dry ingredients together
  • cut the butter in chunks and drop it in the dry mix, cut in with a pastry blender or two knives, or use your hands mix it in
  • keep mixing until it looks like coarse crumbs
  • save off 1 cup of crumbs
  • press the rest in the bottom of a 9X13 baking dish
  • Make the Rhubarb Filling
  • put the rhubarb, water (if using) and sugar in a sauce pan
  • bring it to a boil over medium high heat, it will get very juicy as it cooks
  • once it comes to a boil reduce the heat to keep it from scorching, just keep it bubbling lightly until the rhubarb is just starting to get soft
  • remove 2/3 cup of the juice and whisk in the flour into it
  • add it back in the pan and stir until thickened, cook and stir for 1-2 minutes and remove from the heat (you just made rhubarb gravy!)
  • spread the rhubarb over the base layer in the 9X13 sprinkle with reserved crumbs
  • bake for 30-35 minutes until top is lightly brown and the rhubarb is bubbly
  • let it cool before you cut it for best results
