CHEWY OATMEAL-RAISIN COOKIES

- Combine the oats, flour, cinnamon, baking powder and salt in a large bowl. Beat the butter, sugar and molasses in a large bowl with a mixer on medium-high speed until fluffy, about 5 minutes. Beat in the egg and vanilla until smooth, about 2 more minutes. Reduce the mixer speed to low, add the flour mixture and beat until combined. Stir in the raisins by hand. For the best flavor and texture, cover the dough and chill at least 4 hours, or overnight.
- Position racks in the upper and lower thirds of the oven; preheat to 350 degrees F. Line 2 baking sheets with parchment paper. Form the dough into 12 balls, about 2 tablespoonfuls each, and arrange 3 inches apart on the prepared baking sheets. Flatten with the back of a fork. Bake until the cookies are golden, 15 to 17 minutes. Let cool 5 minutes on the baking sheets, then transfer to racks to cool completely.

- With an electric or stand mixer fitted with a paddle attachment, cream the butter and sugars together on medium speed. Add the egg and vanilla, mixing well until combined.
- On slow speed, mix in the flour, baking powder, salt, and cinnamon. Manually stir in oats until the dough comes together. Fold in Raisinets. Roll into balls and freeze the balls for about 5 minutes, to get them chilly quickly.
- Preheat oven to 375°F (191°C).
- Bake for 9-10 minutes. Remove from oven and let cool for 3 minutes on the baking sheet. Transfer to a cookie rack. Cookies will be very soft and may not appear to be done, but they will set up in minutes.
DARK CHOCOLATE RAISINET OATMEAL COOKIES
Chocolate chips + oatmeal cookies are good. Raisins + oatmeal cookies are good. So I thought, how about chocolate-covered raisins in oatmeal cookies? Also good, as it turns out. Really good. Especially when you use the dark chocolate Raisinets, but regular Raisinets do just fine.

- Preheat oven to 375 degrees Fahrenheit.
- In the large bowl of a stand mixer afixed with the beater attachment or in a large bowl using a hand mixer, beat the butter, brown sugar and granulated sugar together until fluffy, about two to three minutes.
- Add the eggs one at a time, beating well after each addition.
- Add the vanilla and mix well.
- Place a sifter over the bowl and sift in the flour, baking soda, and salt. Add the oats. Mix until blended.
- Stir in the Raisinets.
- Place in rounded tablespoonfuls on an ungreased cookie sheet.
- Bake for about 8 minutes, until they look set and the edges begin to look golden.
- Remove from oven and let cool for about five minutes, then transfer to a wire rack to cool the rest of the way.

- Preheat oven to 375 degrees F (190 degrees C).
- In large bowl, cream together butter, white sugar, and brown sugar until smooth. Beat in the eggs and vanilla until fluffy. Stir together flour, baking soda, cinnamon, and salt. Gradually beat into butter mixture. Stir in oats and raisins. Drop by teaspoonfuls onto ungreased cookie sheets.
- Bake 8 to 10 minutes in the preheated oven, or until golden brown. Cool slightly, remove from sheet to wire rack. Cool completely.

- 1. Preheat oven to 350 degrees.
- 2. Line cookie sheets with parchment paper.
- 3. In a medium size bowl or measuring cup whisk together the flour, oatmeal, baking powder, baking soda and salt; set aside.
- 4. Cream butter, sugar, and brown sugar until creamy.
- 5. Add egg and vanilla; beat until light and fluffy.
- 6. Add dry ingredients; combine thoroughly; stir in raisinets. NOTE: Cookie dough will be stiff. Refrigerate for about 30 minutes. NOTE: Refrigerating the dough is necessary to keep the cookie from being flat when baked.
- 7. Drop cookies on prepared cookie sheets.
- 8. Bake at 350 degrees for 10 to 12 minutes. The cookie should be soft and edges light golden brown. Be careful to not over bake. Remove from oven and cool on cookie sheet for 5 to 6 minutes. Transfer to cookie racks to finish cooling. Store in air tight container.

THE BEST OATMEAL RAISIN COOKIES
Do you like chewy cookies? Or do you prefer cakey ones? Our oatmeal-raisin cookies can be both! For a chewy cookie, bake them right away. For a cakey cookie, let the dough rest in the refrigerator for at least 3 hours (or overnight works even better) to allow the oatmeal to hydrate. Then bake for a puffy cookie. We used dark brown sugar for added flavor and moisture but our secret ingredient is honey. When baked right away, the honey causes the cookie to spread, keeping it soft and moist. When you let the dough rest, the oatmeal and flour absorb the honey for that classic cakey texture.

- Arrange an oven rack in the center of the oven and preheat to 350 degrees F. Line a rimmed baking sheet with parchment paper.
- Whisk together the flour, salt, baking soda and cinnamon in a small bowl until combined. Bake until the cookies are lightly golden around the edges, 15 to 20 minutes. Cool on the sheet for 10 minutes, and then transfer to a wire rack to cool completely. Let the baking sheet cool, and then repeat with the remaining cookie dough.

- In a large bowl, mix together oats, flour, baking soda, cinnamon, ground cloves, and salt. Set aside. In a medium bowl, whisk together yogurt, applesauce, and vanilla. Stir. Mix in molasses and brown sugar until no sugar lumps remain.
- Make a well in the center of the dry ingredients and pour in the wet mixture. Gently mix together until *just* combined and no dry lumps of flour or oats remain. Do not overmix. Dough will be very sticky. Fold in the Raisinets and chocolate chips.
- With a spoon, drop cookies onto prepared cookie sheet, slightly flattening each mound. Bake for 10-11 minutes. Remove from oven and allow cookies to cool on a cookie rack. Cookies remain fresh and soft in an airtight container at room temperature for 5 days. Cookies freeze well.
