Mmm! Make rich buttery, brown sugar and oat cookies with a hint of cinnamon and a bunch of juicy raisins.

2/3 cup granulated sugar
2/3 cup packed brown sugar
1/2 cup butter or margarine, softened
1/2 cup shortening
1 teaspoon baking soda
1 teaspoon ground cinnamon
1 teaspoon vanilla
1/2 teaspoon baking powder
1/2 teaspoon salt
2 eggs
3 cups quick-cooking or old-fashioned oats
1 cup Gold Medal™ all-purpose flour
1 cup raisins, chopped nuts or semisweet chocolate chips, if desired

Steps:

  • Heat oven to 375°F. In large bowl, beat all ingredients except oats, flour and raisins with electric mixer on medium speed, or mix with spoon. Stir in oats, flour and raisins.
  • On ungreased cookie sheet, drop dough by rounded tablespoonfuls about 2 inches apart.
  • Bake 9 to 11 minutes or until light brown. Immediately remove from cookie sheet to cooling rack.

This is a special cookie. I decided to whip up a batch in variation and the winner was with the added ingredient of 1 cup of raisins. As of today, I see daily as I walk into my kitchen a decorated jar with 3 of my winning cookies along with my Red Ribbon attached displayed since the year of 1991. You may use , raisins, chocolate chips, M & M candies or coconut instead of the walnuts if you wish.

2 cups sifted all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 ½ teaspoons ground cinnamon
⅛ teaspoon ground nutmeg
2 cups rolled oats
½ cup packed brown sugar
½ cup white sugar
1 cup shortening
2 eggs
⅓ cup milk
1 teaspoon vanilla extract
1 cup raisins

Steps:

  • Sift together the flour, baking soda, salt, cinnamon, and nutmeg.
  • Add oatmeal, brown sugar, white sugar, shortening, eggs, milk, and vanilla. Mix together. Stir in 1 cup of chopped walnuts.
  • Drop by teaspoonful onto greased cookie sheets. Bake at 375 degrees F (190 degrees C) for 10 to 12 minutes.

1 cup water
2 cups raisins
1 cup shortening
1-3/4 cups sugar
2 large eggs
1 teaspoon vanilla extract
3-1/2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 cup chopped walnuts

Steps:

  • Combine water and raisins in a small saucepan; bring to a boil. Cook for 3 minutes; remove from the heat and let cool (do not drain). , Preheat oven to 350°. In a large bowl, cream shortening and sugar until light and fluffy. Beat in eggs and vanilla. Combine flour, baking powder, baking soda, salt and spices; gradually add to creamed mixture and mix well. Stir in nuts and raisins. , Drop by teaspoonfuls 2 in. apart onto greased baking sheets. Bake 12-14 minutes or until golden brown. Remove to wire racks to cool.

1 teaspoon baking soda
1 teaspoon salt
1 ½ teaspoons ground cinnamon
2 cups quick cooking oats
1 cup butter, softened
½ cup white sugar
¾ cup packed brown sugar
2 eggs
1 ½ teaspoons vanilla extract
⅓ cup buttermilk
1 cup raisins
¾ cup chopped walnuts

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Sift together the flour, baking soda, salt and cinnamon; stir in the oats and set aside. Grease cookie sheets.
  • In a large bowl, cream together the butter, white sugar and brown sugar until light. Beat in the eggs, one at a time, then stir in the vanilla. Stir in the flour mixture alternately with the buttermilk. Fold in the raisins and walnuts. Drop by rounded spoonfuls onto the prepared cookie sheets.
  • Bake for 8 to 10 minutes in the preheated oven, until lightly browned. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

These cookies are very simple but delicious!! I didn't use cinnamon or nutmeg and although some people may have thought this recipe may be tasteless, I loved it! However, if you love flavor, then you may try the cinnamon and nutmeg although I would recommend this cookie without them as well! This recipe may be to huge so you may cut it in half or I even made 1/4 of it and still got 8 medium sized cookies. Enjoy!
