While there is no shortage of oatmeal cookie recipes out there, we love these in particular because they strike the perfect balance of crispiness and chewiness. The ratio of ingredients used turns out a cookie that isn't tall and cakey, but instead a little slender and nicely caramelized around the edges.

3/4 cup granulated sugar
1/4 cup firmly packed brown sugar
1/2 cup butter, softened
1/2 teaspoon vanilla
1 egg
3/4 cup Gold Medal™ all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1 1/2 cups quick-cooking rolled oats
1/2 cup raisins
1/2 cup chopped nuts

Steps:

  • Heat oven to 375°F. Spray cookie sheets with cooking spray. In large bowl, combine granulated sugar, brown sugar and butter; beat until light and fluffy. Add vanilla and egg; blend well. Add flour, baking soda, cinnamon and salt; mix well. Stir in oats, raisins and nuts.
  • Drop dough by rounded teaspoonfuls 2 inches apart onto sprayed cookie sheets.
  • Bake at 375°F. for 7 to 10 minutes or until edges are light golden brown. Cool 1 minute; remove from cookie sheets.

  • Mix together flour, ground cinnamon, ground nutmeg, baking soda, and salt. Set aside.
  • Layer ingredients in the following order into a 1 quart, wide mouth canning jar: Flour mixture, raisins, rolled oats, brown sugar, and white sugar. It will be a tight fit, make sure you firmly pack down each layer before adding the next layer.
  • Attach a tag with the following instructions: Oatmeal Raisin Spice Cookies 1. Preheat oven to 350 degrees F (175 degrees C). Line cookie sheets with parchment paper. 2. Empty jar of cookie mix into large mixing bowl. Use your hands to thoroughly mix. 3. Mix in 3/4 cup butter or margarine, softened. Stir in one slightly beaten egg and 1 teaspoon of vanilla. 3/4 cup California raisins
2 and 3/4 cups low-fat milk (* I use 1 % milk)
2 tsp vanilla extract
1 tsp butter extract

Steps:

  • In each of the 4 small glass jars, place 1/2 cup of oats, 3/4 tbsp brown sugar, 1/2 tsp cinnamon and 1 tsp of chia seeds. Divide raisins evenly by 4 and add to jars.
  • In a measuring cup, add vanilla and butter extract to milk.
  • Pour milk over the oat/raisin mixture.

  • Cover and refrigerate overnight (about 8 hours)

For a cakey cookie, let the dough rest in the refrigerator for at least 3 hours (or overnight works even better) to allow the oatmeal to hydrate. Then bake for a puffy cookie. We used dark brown sugar for added flavor and moisture but our secret ingredient is honey. When baked right away, the honey causes the cookie to spread, keeping it soft and moist. When you let the dough rest, the oatmeal and flour absorb the honey for that classic cakey texture.

1/2 c packed dark brown sugar
1 c old-fashioned oats
1 c buttermilk biscuit and baking mix
1/2 c packed light brown sugar

1 tsp cinnamon
baking chips, dried fruits or nuts to fill the jar

Steps:

  • 1. Instructions for layering ingredients: In 1-quart wide-mouth glass jar, gently layer and pack ingredients in the order listed. If there is any space left after adding the last ingredient, add more baking chips, dried fruits or nuts to fill the jar
  • 2. Place lid on top. Cut an 8-inch circle of fabric to cover lid. Place fabric over lid; secure in place with a rubber band, then ribbon or raffia. Decorate as desired.
  • 3. Note: When measuring brown sugar, crumble it between your fingers for uniform texture. Be sure to pack the brown sugar firmly in the jar to prevent the baking mix from sifting down through it.
  • 4. Make a gift card to attach as follows: "Empty contents of jar into medium bowl. Stir in 1 stick of butter or margarine, melted; 1 egg, and 1 teaspoon vanilla until well combined.
