My son and I eat this peanut butter oatmeal recipe every day for breakfast. It's a hearty, healthy way to jump start our morning. - Elisabeth Reitenbach, Terryville, Connecticut

Number Of Ingredients 8

1-3/4 cups water
1/8 teaspoon salt
1 cup old-fashioned oats
2 tablespoons creamy peanut butter
2 tablespoons honey
2 teaspoons ground flaxseed
1/2 to 1 teaspoon ground cinnamon
Chopped apple, optional

Steps:

  • In a small saucepan, bring water and salt to a boil. Stir in oats; cook 5 minutes over medium heat, stirring occasionally. Transfer oatmeal to 2 bowls; in each bowl, stir half each peanut butter, honey, flaxseed, cinnamon and, if desired, apple. Serve immediately.

My favorite cookies are boiled cookies. So, when I wanted to come up with a treat that I could eat and feel kinda good about eating it, I came up with this. It's my boiled cookies with an attitude adjustment. Hope you enjoy this as much as I do!! Oh, and cooking time here is cooling time.

2 cups white sugar
1/2 cup margarine, I use stick margarine
1/2 cup milk
3 1/2 cups quick oats
3/4 cup peanut butter
2 teaspoons vanilla extract

Steps:

  • Place sugar, margarine and milk in large pan and bring to a boil over medium heat. Stir constantly for 2 minutes and promptly remove from heat.
  • Stir in remaining ingredients and pour into 8x8" dish. Let set for 45 minutes or until set.
  • Cut into bars and serve.

2 cups sugar
4 tablespoons cocoa
1/2 cup margarine
1/2 cup milk
3 cups oatmeal
1 tablespoon white Karo
1/2 cup peanut butter
1 teaspoon vanilla

Steps:

  • Mix sugar, cocoa, margarine, and milk and boil one minute.
  • Add pinch of baking soda.
  • Add peanut butter, karo syrup (you can use regular syrup), vanilla, and oatmeal. Mix until well blended.
  • Drop on wax paper in lumps to cool.
  • Let cool about 30-45 minutes.

  • In a medium saucepan, put together the sugar, evaporated milk, cocoa powder, and butter; bring to a boil while stirring. Boil for 1 minute; remove from heat. Stir in the peanut butter and rolled oats. Drop by heaping teaspoonfuls onto waxed paper. Cool and serve.
