HEALTHY OATMEAL COOKIE BARS (VEGAN AND GLUTEN-FREE!)
Easy and healthy oatmeal cookie bars made with just 5 simple ingredients! Soft, chewy and gooey in one, they are vegan, gluten-free and ready in 12 minutes!

Steps:
- Preheat the oven to 180C/350F. Line an 8 x 8-inch square pan with parchment paper, reserving 1-2 inches of parchment paper over the sides, for easily removal.
- In a large mixing bowl, add all your ingredients, except for the chocolate chips, and mix well. Using a rubber spatula, fold through the chocolate chips, reserving a few to top the cookie bars with.
- Transfer the batter into the lined pan, adding extra chocolate chips on top. Bake for 15-17 minutes, or until just beginning to go golden around the pan.
- Remove from the oven and let sit for 10 minutes, before transferring to a wire rack to cool completely.

- Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with parchment paper.
- Combine oat bran, figs, walnuts, cashews, almond flour, coconut flour, cinnamon, and allspice in a bowl, making sure that figs do not clump together.
- Beat eggs in a separate bowl until thoroughly blended. Mix in coconut oil and vanilla extract.
- Pour egg mixture over oat bran mixture; mix until dough comes together.
- Measure dough into 1 1/2-inch balls with an ice cream scoop and flatten with a spoon to about 1/4-inch diameter.
- Bake in the preheated oven until edges are golden brown, about 15 minutes.

PEANUT BUTTER OAT BRAN COOKIES
This recipe was on a box of "Hodgson Mill Oat Bran Cereal". What wonderful cookies! Chewy, filling, high fiber...and oat to boot. Lower cholesterol here we come. I also used 1/4 cup applesauce for 1/4 cup margarine to lower fat. They were super easy to mix and are sturdy enough to travel well (I mailed some to an avid fan!). Hope you enjoy.

- Preheat the oven to 350. Don't grease the baking sheets.
- Put the shortening, sugars, coffee, and egg in a mixing bowl and beat until smooth and blended. Add the oats, flour, salt, and baking soda. Stir very well so the dough is well mixed.
- Spread the All Bran cereal out on a piece of waxed paper. This is a sticky dough, so wet your fingers with cold water before pinching off about 2 tablespoons of dough at a time and rolling it in the All Bran. Don't worry if you can't get a heavy coating of cereal on each piece of dough; if just a little of the All Bran sticks, it will give a nice texture to the cookies.
- Place the dough pieces about 1 1/2-inches apart on the baking sheets. Bake 12-15 minutes. Remove from the oven and cool on racks.
