BUTTERMILK OATMEAL WAFFLES
This is a great-tasting waffle. Even my wife approved, and she is very picky.

- Preheat a waffle iron according to manufacturer's instructions. Mix flour, oats, sugar, baking powder, and salt in a large bowl.
- Beat egg yolks in another bowl, reserving egg whites in a third bowl. Add buttermilk, milk, and melted butter to egg yolks; beat until well mixed. Pour buttermilk mixture into flour mixture; beat until batter is blended.
- Beat egg whites and vanilla extract in a glass or metal bowl until soft peaks form. Fold half the egg whites into the buttermilk batter until egg whites are incorporated; repeat with remaining half.
- Ladle batter into preheated waffle iron. Cook until waffles are golden and crisp, about 5 minutes. Transfer waffle to a paper towel-lined plate to prevent sogginess and repeat with remaining batter.

When I found this recipe in a church cookbook early in my marriage, I was eager to try it. It was an immediate success and has been a family favorite ever since. I even serve these hearty waffles for a different kind of supper.

- In a large bowl, combine flour, baking powder and salt. Combine eggs, milk, butter and honey; stir into dry ingredients and mix well. Fold in oats and nuts. , Bake in a preheated waffle iron according to manufacturer's directions until golden brown. Garnish with peaches if desired.

OATMEAL NUT WAFFLES
Is your tummy ravenous for real food? These hearty waffles made with whole wheat flour, honey, oats, and chopped nuts (I used pecans) will give you energy for the day. I found this recipe in Taste of Home Parties, Potlucks, and Barbecues from Joan Scott of Dunbar, Wisconsin. She found it in a church cookbook years ago and even occasionally serves them for supper. Taste of Home recommends for a quick waffle topping, sprinkle with fresh berries (strawberries, raspberries, or blueberries). Then melt some jelly with a squirt of lemon juice in the microwave and drizzle over the waffles.

These Oatmeal Waffles are such a delicious breakfast. Light, fluffy, and full of flavor. Also, these healthy waffles are packed with oats and made without unhealthy processed sugar. Super simple and taste amazing.

Steps:
- Start with preparing and measuring all the ingredients. I like to use measuring cups.
- Take the blender and add all ingredients. Note: add wet ingredients first for easier blending.
- Mix everything at high speed until you get a smooth texture.
- Taste the batter and add additional sweetener if you think the mixture is not sweet enough.
- Let the batter rest for a few minutes.
- Turn on the waffle maker and let it heat until it's hot (the green light must be on).
- Coat waffle plates with cooking spray or melted coconut oil using the brush.
- Pour the batter onto the hot waffle plates, close the lid and allow the waffles to cook. Depending on your waffle maker it will take between 8-10 minutes per batch.
- Once baked, remove waffles from the waffle maker and place them on a cooling rack. Fresh baked waffles will be soft when you take them out of the waffle maker but they will harden as they cool on the rack.
- Repeating the process with the rest of the batter. Make sure to grease the waffle plates before adding the batter to prevent sticking.
- Transfer cooled waffles to a plate.
- Add toppings (optional): I used banana, blueberries, and maple syrup. Be creative here and add toppings you like.
- Serve and enjoy!
