OATMEAL, FRUIT AND NUT BREAD
This is a tasty bread with very little fat-virtually none if you use the nonfat buttermilk and leave out the nuts. I've only made it with raisins, but I'll bet it would be really good with the dried cranberries also.

Steps:
- Preheat oven to 350°F. Grease and line an 8 x 4 inch baking loaf pan with parchment paper. If you don't have this size baking pan see notes for other options.
- In a large mixing bowl add oat flour and baking powder. Whisk until baking powder is evenly incorporated into the flour. If desired, you can also mix in 1/2 tsp salt. This will not affect the bread texture but will add a little more flavor to the bread. If you are trying to make a sweet bread, don't add the salt.
- Add in the yogurt. When adding in the yogurt, make sure to not drain out any of the liquid from the yogurt that may be at the top. You want to use that liquid in the bread. Use a spatula to slowly add the yogurt into the batter. Keep folding in the yogurt until it is evenly and completely incorporated. Your dough should be very thick and very sticky.
- Scrape your dough into the prepared baking pan. Use the spatula to help evenly spread the dough across the pan. Dampen your fingers with a tiny bit of water and then lightly press on the surface of the bread to smooth out the dough. If desired, sprinkle about 1 tbsp of rolled oats across surface and gently press the oats slightly into the surface of the bread so that they stick when baking.
- Bake bread for about 40-45 minutes. The bread should be lightly browned on top and when you press on the surface it should bounce back and not sink in. Let bread cool before cutting and serving. Bread can be toasted or eaten as is with your favorite spread.

BANANA NUT OATMEAL BREAD
This bread has all the qualities of a quick bread plus great texture and a heavenly crust. The riper the bananas, the better the flavor. Steel-cut oats are the old-fashioned kind that are not pre-cooked, quick-cooking, or instant. You can find them in health food stores or in groceries that carry specialty type items.

- Turn the oven on and set a timer for three minutes. After three minutes, turn the oven off. (This will give your dough a warm place to rise).
- Combine the 6 cups of the flour, the oats, walnuts, seeds, and sea salt in a large mixing bowl. Mix together the yeast and warm water in a large measuring cup. Let the yeast mixture stand for a couple minutes, then pour in the oil and honey. (PRO TIP: melt/measure the oil in a measuring cup and then use the same measuring cup for the honey. The honey will slide right out).
- Pour the liquid mixture into the bowl of dry ingredients. Stir the ingredients together with a wooden spoon until a wet dough is formed. Add the remaining 2-3 cups of flour to the dough, adding in about a half-cup to a cup at a time until a soft dough comes together.
- Transfer the dough to a floured countertop and knead for about 5-8 minutes until the dough is smooth and no longer sticky. (Keep dusting the dough with flour as needed).
