Time 45m

Number Of Ingredients 13

1 cup cup all purpose flour
1 cup old fashioned oats
¼ teaspoon salt
¾ teaspoon baking soda
10 tablespoons unsalted butter (melted)
½ cup light brown sugar (packed )
1 teaspoon pure vanilla extract
One 14 oz can sweetened condensed milk
2 tablespoons sour cream or plain yogurt
1 large egg yolk
¼ cup freshly squeezed lemon juice
1 generous tablespoon finely grated lemon zest
½ teaspoon vanilla extract

Steps:

  • Preheat oven to 350°F. Line an 8x8 pan with foil or parchment paper (leaving overhang on two sides for easy removal). Spray with nonstick spray.
  • In a medium bowl, combine, flour, oats, salt and baking soda.
  • In a large bowl, whisk butter, brown sugar and vanilla until well combined (this will take at least one full minute). Add dry ingredients and stir with a rubber spatula or wooden spoon until combined.
  • Pull out about ¾ cup (a little less than half) of the dough and set that portion aside (it will be the topping). Dump the remaining dough into the prepared pan and press it down into a flat even layer (it will be very buttery, that's ok). Bake for 10 minutes.
  • Meanwhile, whisk all filling ingredients until combined. After the crust has baked for 10 minutes, pour the filling over the crust. Gently spread into an even layer. Be careful, the crust underneath will be soft and undercooked, you don't want to break it. Crumble the reserved dough over the filling and return to the oven for 17-20 minutes, until the top is light golden brown and the filling is set. Place the pan on a wire rack to cool completely.

LEMON-RASPBERRY OATMEAL CRUMB BARS

Lemon-Raspberry Oatmeal Crumb Bars image

These delicious, easy-to-make bars are sweet and tangy with an oatmeal crust and crumble. I prefer a thicker crust, using 3/4 of the oatmeal mixture for the crust and 1/4 for the crumbles. Feel free to make a thinner crust, using 1/2 of the oatmeal mixture for the crust and the other 1/2 for the crumble.

OATMEAL LEMON BARS

Oatmeal Lemon Bars image

I copied this from Calling All Cooks on Food Network. I have added a couple very minor things to make it a bit mine. All my coworkers who care for lemon bars love them. Remember some lemons are juicier than others. The crust is like shortbread with a little more texture from the oats. Hope you like them if you try them.

Time 1h10m

Yield 12-24 serving(s)

Number Of Ingredients 9

1 cup soft butter
1 cup sugar
2 cups all-purpose flour
1 cup raw oats (quick cook or reg)
1 (14 ounce) can sweetened condensed milk
2 lemons, zest of
1 lime, zest of
1 orange, zest of
3 lemons, juice of

Steps:

  • Preheat oven to 350. Butter a 13x9 pan and set aside.
  • Cream butter and sugar. Slowly add flour until incorporated. Slowly add oats and blend until crumbly. Press 3/4 of mixture into the bottom of the pan to form bottom crust. Reserve remaining dough.
  • The juice of 3 lemons--the recipe I used wasn't more specific on the measurement so
  • if your lemons aren't very juicy please squeeze 1 or 2 more. Too little lemon juice just produces very very bland lemon bars.
  • Make sure the zest is finely grated or finely chopped. Blend condensed milk, zests and juice until smooth. Pour over crust and spread to the edges of the crust.
  • Crumble the reserved dough over the top.
  • Bake at 350 for 30 to 40 minutes or until crust crumbles are lightly golden. Cool completely, at least 1 hour before cutting.
  • Store in an airtight container.
  • I wish I could tell you how long they keep but that has never come up since they disappear so quickly!
