- Preheat the oven to 350 degrees F (175 degrees). Spray a rimmed cookie sheet with cooking spray.
- Mix butter, eggs, and vanilla extract together in a large bowl with an electric mixer. Add oats, baking mix, and brown sugar; mix to combine.
- Stir condensed milk, chocolate chips, margarine, vanilla, and salt in a saucepan over low heat until chocolate chips have melted, 6 to 8 minutes.
- Spread 3/4 of the oat mixture onto the prepared baking sheet. Pour the chocolate mixture over the top. Place small pieces of the remaining oat mixture randomly over the chocolate.
- Bake in the preheated oven until edges are golden, 15 to 20 minutes. Let cool before cutting into squares.

- Preheat the oven to 350°F and line an 8×8″ square pan with parchment paper on all sides. Set aside.
- In a stand mixer fit with paddle attachment, beat the butter and sugars together until light and fluffy, about 2 minutes. Scrape down the bowl and add the vanilla extract and egg, mixing until completely combined.
- In a separate bowl, combine the oats, flour, baking soda, baking powder, and salt and mix well. Add the dry ingredients to the wet and mix until combined.
- Scrape down the bowl and divide the oatmeal cookie dough in half. Press half of the dough into an even layer into your prepared pan and set the other.
- Make the fudge layer. In a saucepan over medium heat, stir together the sweetened condensed milk, chocolate chips and butter. Whisk together until completely smooth. Take off the heat and stir in the salt and vanilla extract. The mixture will be glossy and thick.
- Spread the fudge mixture over the oatmeal cookie layer using an offset spatula or a spoon. Crumble the remain cookie dough over the fudge mixture, leaving some areas of fudge uncovered.
- Bake for 20 to 30 minutes or until the oatmeal bars are light golden brown. Allow to cool completely before slicing into 16 bars and serving.

- Grease a 9x13 baking pan; set aside.
- In a large bowl cream butter and sugar; add eggs and vanilla.
- In a small bowl, sift flour, baking soda, and salt; add to creamed mixture. Mix in oats.
- In a heavy saucepan, mix sweetened condensed milk, chocolate chips, and butter; heat just until melted. Stir in vanilla and nuts if using.
- Spread 2/3 of the oatmeal dough (will be stiff) into prepared baking pan. Spread with chocolate mixture. Drop remaining 1/3 of dough on top by spoonfuls.
- Bake at 350°F for 25 minutes. Allow to cool completely (if you cut them while they are still warm at all they will be gooey and fall apart), then cut into bars.

- In a large bowl, cream sugar and butter until light and fluffy. Beat in vanilla and eggs. Combine the flour, baking soda and salt; gradually add to creamed mixture. Stir in oats by hand. - Preheat oven to 350°.
- In a large bowl, combine the oats, flour, baking soda and salt.
- In a separate bowl, beat the butter for 2-3 minutes until whipped. Add brown sugar and beat for another 2 minutes. Add the eggs and vanilla and continue to beat for another 1-2 minutes.
- Add the dry ingredients to the butter/sugar mixture and mix just until barely combined. Set aside while making the chocolate layer.
- In a medium saucepan, mix all of the chocolate fudge ingredients together over low heat. Stir until everything is melted and smooth and then remove from heat.
- Press 2/3 of the oatmeal cookie dough into the bottom of a greased 9X13 pan. Spread the chocolate fudge over the oatmeal layer and then drop the remaining oatmeal cookie dough over the top.
- Bake for 20-25 minutes or until the top begins to lightly brown. Let cool completely before cutting. They can be stored and served at room temperature, but they are delicious cold from the fridge as well!

- Spray a 10x15-inch pan with non-stick cooking spray (Pam) or grease pan.
- Cream 1 cup margarine with sugar in a large bowl.
- Add eggs, one at a time, beating well after each addition.
