I made some strawberry jam the other day. I really wanted a biscuit to put my jam on so I created this delicious drop biscuit. Enjoy!

1 cup organic oat flour
1/2 tsp salt
2 tsp baking powder
1/3 cup whole milk, or homemade coconut milk
2 tbsp grass fed butter
1 egg

Steps:

  • Mix all dry ingredients together.
  • Cut butter with a fork or pastry cutter into flour.
  • Add wet ingredients to dry ingredients and mix well.
  • Line a cookie sheet with parchment paper (greased with coconut oil).
  • Drop a heaping tablespoon onto a pan.
  • Bake at 425 degrees for 12-15 minutes.

1.5 cups all-purpose flour
3oz uncooked quick-cooking oats
2 tablespoons firmly packed dark brown sugar
1 tablespoon grated orange peel (optional)
2 teaspoons double-acting baking powder
0.5 teaspoon each baking soda and ground cinnamon
dash slat
.25 cup margarine
2 tablespoons sweet whipped butter
.75 cup buttermilk
.33 cup plus 2 teaspoons dark raisons, plumped

Steps:

  • Preheat oven to 425F. In large mixing bowl combine flour, oats, sugar, orange peel, baking powder, baking soda, cinnamon, and salt. With pastry blender, or 2 knives used scissors-fashion, cut in margarine and butter until mixture resembles coarse meal. Add buttermilk and raisins and stir to form thick batter mixture (mixture will be lumpy) Drop batter by heaping tablespoonfuls onto nonstick baking sheet, forming 12 biscuits and leaving about 2 inches between each. Bake until biscuits are golden brown, 17-20 minutes. Using spatula, remove biscuits to wire rack to cool.

1 ⅓ cups all-purpose flour
1 ⅓ cups rolled oats
1 tablespoon baking powder
¼ teaspoon salt
3 tablespoons butter
¾ cup chopped pitted prunes (dried plums)
1 cup fat-free milk

Steps:

  • Preheat oven to 450 degrees F (230 degrees C). Grease a baking sheet.
  • Combine sugar and cinnamon together in a bowl. Mix flour, oats, baking powder, 1 tablespoon cinnamon-sugar mixture, and salt together in a separate bowl. Cut butter into flour mixture using a pastry blender until mixture resembles coarse crumbs; fold in prunes.
  • Make a well in the center of the flour mixture; add milk to the well. Stir mixture with a fork just until dough is moistened. Drop dough into 12 mounds, about 1/4 cup each, on the prepared baking sheet. Sprinkle remaining cinnamon-sugar over each dough mound.
  • Bake in the preheated oven until biscuits are golden brown, 10 to 12 minutes. Serve immediately.

75g wholemeal flour
1 tsp baking powder
75g porridge oats
50g caster sugar
75g butter
1 tbsp golden syrup
2 tbsp milk

Steps:

  • Heat the oven to 180C/160C fan/gas 4. Line a baking tray with baking parchment.
  • Sift the flour into a bowl. Mix in the baking powder, porridge oats and sugar.
  • Melt the butter, syrup and milk in a small saucepan or in the microwave and stir.
  • Add to the dry ingredients. Mix until the liquid covers all the oat mixture and until well combined.
  • Spoon onto a baking tray and shape into rounds, leaving space between each biscuit as they will spread whilst cooking.
  • Bake for 10-15 mins, or until golden brown. Leave to cool for 5 mins before removing from tray.

1/2 cup buttermilk (cold)
1/4 cup unsalted butter, melted and cooled slightly (about 5 minutes)
1 tablespoon butter, melted for brushing on top of warm buscuits

Steps:

  • Adjust oven rack to middle position and heat oven to 475 degrees.
  • Whisk flour, baking powder, baking soda, sugar, and salt in large bowl. Combine buttermilk and 1/4 cup melted butter in medium bowl, stirring until butter forms small clumps.
  • Add buttermilk mixture to dry ingredients and stir with rubber spatula until just incorporated and batter pulls away from sides of bowl.
  • Using greased 1/4-cup dry measure, scoop a scant amount of batter and drop onto parchment-lined rimmed baking sheet. Repeat with remaining batter, spacing biscuits about 1 1/2 inches apart.
  • Bake until tops are golden brown and crisp, 8 - 12 minutes. They can be made up ahead of time and gently re-heated in a 300 oven for 10 minutes.
  • Brush biscuit tops with 1 tablespoon melted butter. Transfer to wire rack and let cool 5 minutes before serving.
  • Test if baking powder is fresh: Mix 2 teaspoons of the baking powder into a cup of water. If there is an immediate reaction of foaming and fizzing, the baking powder is okay to use. If the reaction is at all delayed or weak, throw it away and buy a fresh can.
