OATMEAL COOKIE GRANOLA

Oatmeal Cookie Granola image

This smells so good while cooking! Makes a great cereal or snack, and of course tastes like a great oatmeal cookie. The directions call for cooking on a greased cookie sheet but I used a silpat mat and it worked great.

Provided by Hoddevik

Categories     Breakfast

Time 40m

Yield 8-12 serving(s)

Number Of Ingredients 9

4 cups oats (or any combination of grains to equal 4 cups)
1/3 cup flax seed (optional)
1/2 cup brown sugar, packed
1/4 teaspoon salt
1/4 teaspoon cinnamon
1/8 teaspoon nutmeg
4 tablespoons butter
1/3 cup honey
4 teaspoons vanilla extract

Steps:

  • Preheat oven to 300 degrees.
  • Combine oats, flax, brown sugar, salt, cinnamon, and nutmeg in a large bowl.
  • In a small saucepan, melt butter and add honey.
  • Once it starts to simmer, remove from heat and quickly stir in extract. Mix well, and pour over dry mixture. Mix to coat thoroughly, and place on a greased cookie sheet.
  • Place into the oven and bake for 20-25 minutes, until done.
  • Allow to cool completely, break into large pieces and store in an airtight container.
  • *Note - granola nuggets form better if you stir the granola as little as possible while baking, and don't stir it at all while it's cooling.

HEALTHY GRANOLA

Healthy Granola image

This delicious healthy granola recipe is naturally sweetened with maple syrup (or honey). It's made with oats, coconut oil and your favorite nuts and fruit. Make it your own! Recipe yields about 8 cups granola, enough for about 16 half-cup servings.

Provided by Cookie and Kate

Categories     Breakfast

Time 26m

Number Of Ingredients 9

4 cups old-fashioned rolled oats (use certified gluten-free oats for gluten-free granola)
1 1/2 cup raw nuts and/or seeds (I used 1 cup pecans and 1/2 cup pepitas)
1 teaspoon fine-grain sea salt (if you're using standard table salt, scale back to 3/4 teaspoon)
1/2 teaspoon ground cinnamon
1/2 cup melted coconut oil or olive oil
1/2 cup maple syrup or honey
1 teaspoon vanilla extract
2/3 cup dried fruit, chopped if large (I used dried cranberries)
Totally optional additional mix-ins: 1/2 cup chocolate chips or coconut flakes*

Steps:

  • Preheat oven to 350 degrees Fahrenheit and line a large, rimmed baking sheet with parchment paper.
  • In a large mixing bowl, combine the oats, nuts and/or seeds, salt and cinnamon. Stir to blend.
  • Pour in the oil, maple syrup and/or honey and vanilla. Mix well, until every oat and nut is lightly coated. Pour the granola onto your prepared pan and use a large spoon to spread it in an even layer.
  • Bake until lightly golden, about 21 to 24 minutes, stirring halfway (for extra-clumpy granola, press the stirred granola down with your spatula to create a more even layer). The granola will further crisp up as it cools.
  • Let the granola cool completely, undisturbed (at least 45 minutes). Top with the dried fruit (and optional chocolate chips, if using). Break the granola into pieces with your hands if you want to retain big chunks, or stir it around with a spoon if you don't want extra-clumpy granola.
  • Store the granola in an airtight container at room temperature for 1 to 2 weeks, or in a sealed freezer bag in the freezer for up to 3 months. The dried fruit can freeze solid, so let it warm to room temperature for 5 to 10 minutes before serving.

GRANOLA COOKIES

Granola Cookies image

These chewy Granola Cookies with peanut butter are the perfect healthy cookie recipe. Add any combo of cranberries, chocolate chips, and nuts.

Provided by Erin Clarke / Well Plated

Categories     Dessert

Time 23m

Number Of Ingredients 13

4 tablespoons unsalted butter at room temperature
1/2 cup creamy peanut butter*
1/2 cup light brown sugar
1 large egg
2 tablespoons nonfat milk or milk of choice
1 1/2 teaspoons pure vanilla extract
1/2 teaspoon ground cinnamon
1/4 teaspoon kosher salt
¾ cup white whole wheat flour
1 cup prepared granola
1/3 cup mini chocolate chips
1/4 cup dried cranberries (or other dried fruit of choice: raisins or golden raisins, chopped dried cherries, chopped dried apricots)
1/4 cup chopped nuts of choice: pecans (almonds, or walnuts (I used pecans))

Steps:

  • Place a rack in the center of your oven and preheat the oven to 350 degrees F. Line a baking sheet with parchment paper or a silicone baking mat.
  • In the bowl of a stand mixer fitted with the paddle attachment or a large mixing bowl, place the butter, peanut butter, and brown sugar. Beat on medium-high speed for 2 minutes, until lightened in color and smoothly combined.
  • Scrape down the bowl. Add the egg, milk, and vanilla and beat to combine. Stop the mixer to scrape down the bowl again as needed.
  • Sprinkle the cinnamon and salt over the top.
  • Sprinkle on the flour. Mix on low speed, just until the dough comes together and all bits of dry flour disappear.
  • By hand or with the mixer on low, gently stir in the granola, chocolate chips, cranberries, and nuts.
  • Portion the batter by generous ¼-cup-sized mounds onto the baking sheet, placing each cookie about 2 inches apart. With your fingers, gently flatten each cookie a little bit (they will not spread much during baking).
  • Bake the granola cookies for 10 to 13 minutes, until lightly browned and dry to the touch at the edges and still slightly soft and the centers. The cookies will look a little underdone in the middle, but do not over bake or they will be dry. Let the cookies cool on the baking sheet for 3 minutes, then gently transfer to a wire rack to finish cooling completely. (I slide the parchment paper straight onto the rack).

OATMEAL GRANOLA COOKIES

Oatmeal Granola Cookies image

I was in the supermarket one day shopping for a muffin recipe from the Barefoot Contessa. I had picked up french vanilla granola in hopes of using it in the recipe, but when I got home and tasted it the first thing I thought of was oatmeal cookies. So, the kids and I came up with this one. We get around 3 dozen or so from this recipe.

Provided by Blue-eyed 70s Chick

Categories     Dessert

Time 1h

Yield 3 dozen, 18 serving(s)

Number Of Ingredients 15

1/2 cup softened butter
1/2 cup shortening
1 cup dark brown sugar
1/2 cup white sugar
2 eggs
1 teaspoon double strength vanilla extract or 2 teaspoons regular strength vanilla extract
1 1/2 cups flour
1/4 teaspoon salt
1 teaspoon baking soda
1/2 teaspoon baking powder
1 teaspoon cinnamon
1 teaspoon allspice
1 1/2 cups oats
1 1/2 cups granola cereal, I use french vanilla with almonds
3/4 cup dried fruit, I use raisins

Steps:

  • Preheat oven to 350. In a bowl mix flour, salt, baking soda, baking powder and spices till well blended. Set aside.
  • In another bowl, beat butter, shortening and sugars until light and creamy. Then add the eggs one at a time until they are blended. Add the vanilla beat until well blended, about a minute.
  • Add the flour mixture to the butter and sugar mixture. When dough is well blended, fold in fruit, oats and granola. Break your granola into manageable pieces if needed.

  • BLEND OATS: In a high-powered blender, blend 1 cup (105g) of the old-fashioned oats until they resemble flour -- a fine powder. If needed, stir and re-blend to break up larger chunks of oats -- it should look like flour. Now pour all of the blended oats into a large sturdy bowl or a bowl attached to a stand mixer.
  • BLEND DATES: See Note 1. Ensure dates are pitted. (Sometimes dates labeled pitted still have a pit that sneaks in!) Using a sharp serrated knife, coarsely chop the dates. Add chopped dates to the blender and blend until a thick paste forms. This takes some patience; you will likely need to scrape down edges and stir a few times in between blending. Once fully blended to a paste, use a spatula to scrape all of this mixture out into the bowl with the oats. It's thick and sticky!
  • ADD REMAINING INGREDIENTS: To the bowl with the blended oats and dates, add the almond butter, maple syrup, vanilla extract, salt, cinnamon and the remaining 1-3/4 cups (178g) old fashioned oats.

  • Cover the dehydrating trays with teflex sheets. Using a small or medium size cookie scoop, portion out dough onto prepared trays. Using a small rubber spatula flatten the scoops into cookie shapes being careful not to make them too thin as they will shrink in the dehydrator. See Video for a visual.
  • If wanting to make granola spread some of the dough out onto the prepared tray being careful not to make it too thin as it will shrink in the dehydrator. See Video for a visual.
  • Place trays in dehydrator according to manufactors instructions for your brand of dehydrator. Set temperature to 155 degrees and set time for 4 hours. Check at 4 hours to see if they are getting dryer and if they can easily be turned over and are not sticking to the teflex sheets then it is time to remove them from the teflex sheets and put them directly on the dehydrator trays. Put back in the dehydrator and set the temperature for 155 degrees and how much longer is going to depend on how moist they still are. Set the timer for 2-3 hours and check them at that time to see if they need to go longer. I usually take one and break it in half to check for doneness. I want them to be dry all the way through. If it's not dry all the way through put them back in for an hour and check again until they are completely dry.
