1-1/2 cups boiling water
1 tablespoon butter
2 teaspoons salt
1/2 cup sugar
1 cup old-fashioned oats
2 packages (1/4 ounce each) active dry yeast
3/4 cup warm water (110° to 115°)
1/4 cup molasses
1/4 cup packed brown sugar
6 to 6-1/2 cups all-purpose flour, divided

Steps:

  • In a small bowl, combine the boiling water, butter, salt and sugar. Stir in oats; cool to lukewarm. In a large bowl, dissolve yeast in warm water. Stir in the molasses, brown sugar and 1 cup flour. Beat until smooth. Stir in oat mixture and enough remaining flour to make a stiff dough. , Turn out onto a floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1-1/2 hours. , Punch dough down. Turn onto a lightly floured surface; divide in half. Shape each portion into a ball. Cover and let rest for 10 minutes; Shape into loaves. Place in 2 greased 9x5-in. loaf pans. Cover and let rise until nearly doubled, about 1 hour. , Bake at 375° for 30-35 minutes (cover loosely with foil if top browns too quickly). Remove from pans to wire racks to cool.

  • Mix oats with buttermilk. Let stand for 1/2 hour.

1/2 cup oatmeal
1/2 cup whole wheat flour
1 cup water (boiling)
1 tablespoon honey
Optional: 1 tablespoon molasses
1 tablespoon oil
1 teaspoon salt
1/4 cup water (warm, about 110 F)
2 teaspoons yeast
Pinch of sugar
1 1/2 to 2 cups all-purpose flour or bread flour
Optional: oatmeal for sprinkling on top

Steps:

  • Gather the ingredients.
  • Mix the oats and whole wheat flour in a bowl.
  • Add the boiling water and stir.
  • Stir in the honey, molasses, if using, oil, and salt and let cool, about 1/2 hour.
  • In a small bowl, mix the warm water with the yeast and a pinch of sugar, stirring to dissolve yeast. Place in a warm spot for about 10 minutes until foam forms on the top of the mixture.
  • Add the yeast to the oat mixture and mix well.
  • Start adding the all-purpose flour 1/2 cup at a time until a firm dough forms.
  • Turn out on a lightly floured board and knead 4 to 5 minutes, until the dough is elastic and somewhat smooth.
  • Form the dough into a ball and place in a clean, oiled bowl, turning once to coat.
  • Cover the bowl with plastic wrap and place in a warm spot (70 to 85 F) until doubled in bulk, about 1 hour.
  • Shape the bread into a sandwich loaf and place it in the pan.
  • Spray the top of the loaf with water and sprinkle oatmeal or other desired topping on the bread.
  • Cover with a towel and let rise until almost double. (If steaming your bread, skip to the steaming instructions.)
  • Meanwhile, heat your oven to 450 F for 1/2 hour; if using a baking stone, heat for 1 hour.
  • Slash the top of the loaf with a sharp razor blade.
  • Place the loaf pan in the oven and turn down to 400 F. Bake for 30 to 40 minutes, or until the bread's internal temperature reaches 190 F.
  • Let the bread cool for about 1 hour or so before serving.
  • Place an old roasting pan on the rack below the baking stone (if using) or the rack below where the loaf pan will go. After you put the bread in the oven, fill the roasting pan with 2 cups of boiling water.
  • Using a squirt bottle, spray water on the sides of the oven two or three times within the first 5 minutes of baking.
  • Turn the oven down to 400 F and bake for 30 minutes or more, until the internal temperature of the bread reaches 190 F.
  • Bread steams itself dry, so let the loaf cool for at least 2 hours before slicing or it may seem gummy inside.
  • Enjoy!

1 cup + 2 tablespoon boiling water
1 cup steel-cut oats, not quick-cooking
1/2 tablespoon salt
1 1/2 tablespoons butter
1 1/2 tablespoons light brown sugar
Pinch of granulated sugar
1 teaspoon package instant yeast, 2 1/4-oz pkg
1/4 cup warm water, 100° to 110°
1 1/2 cups all-purpose flour, divided
1 1/2 cups whole wheat flour
Cooking spray

Steps:

  • Combine the first 5 ingredients (boiling water through light brown sugar) in the bowl of a stand mixer, and let stand 25 minutes.
  • Dissolve the granulated sugar and yeast in warm water; let stand 5 minutes or until foamy. Add to the oat mixture. Combine 1 1/4 cups of the all-purpose flour and all of the whole wheat flour. Gradually add the flours to the oat mixture. Beat at medium speed until well blended. Turn dough out onto a floured surface. Knead until smooth and elastic (about 8 minutes), adding enough of the remaining all-purpose flour, 1 tablespoon at a time, to prevent dough from sticking to hands if necessary (dough will still feel moist).
  • Place dough in a large bowl coated with cooking spray, turning to coat top. Cover with plastic wrap, then a clean kitchen towel, and let rise in a warm place (85°), free from drafts, 1 hour or until doubled in size.
  • Punch the dough down; cover with plastic wrap and let rest 5 minutes. Roll the dough into a 14 x 8-inch rectangle on a floured surface. Roll up the rectangle tightly, starting with a short edge, pressing firmly to eliminate air pockets; pinch the seam to seal. Place the loaf, seam side down, in a 9-inch loaf pan coated with cooking spray. Cover with plastic wrap and let rise 30 minutes or until doubled in size.
  • Preheat oven to 350º.
  • Uncover dough and bake at 350º for 45 minutes or until loaf is browned on bottom and sounds hollow when tapped. Remove from pan, and cool on a wire rack.

1/2 cup maple syrup
1/3 cup vegetable oil

5 -6 cups bread flour

Steps:

  • In a large mixing bowl, dissolve yeast in warm water. Add the oat mixture, eggs and 2 cups of flour; mix well.
  • Stir in enough remaining flour to form a soft dough.
  • Turn onto a floured surface and knead until smooth and elastic about 6-8 minutes.
  • Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled.
  • Punch dough down. Trun onto a lightly floured surface, divide into two.
  • Shape into loaves. Place in two greased 9 X 5 X 3" loaf pans.
  • Cover and let rise until doubled.
  • Bake at 350F for 40-45 minutes or until golden.
  • Remove from pans to wire racks to cool.

  • To make the overnight soaker: In a mixing bowl, combine the oats and water. Stir thoroughly, cover, and let sit overnight (8 to 12 hours) at room temperature.
  • To make the dough: Weigh your flour; or measure it by gently spooning it into a cup, then sweeping off any excess. In a large bowl or the bowl of your stand mixer, combine the overnight soaker with the remaining dough ingredients. Mix and knead to make a soft, elastic dough; if the dough seems dry, knead in an additional 1 to 2 tablespoons (14g to 28g) water.   • Autolyse:Weigh out your starter and water in a glass or ceramic bowl. Mix them together so that the starter is dissolved.Then add your flour, salt and chopped rolled oats and mix altogether with the end of a wooden spoon.
