Anything is possible when you're baking with Betty, so take your favorite oatmeal and crisp rice cereal and give a breakfast staple a sweet cookie change up. These oatmeal coconut pecan cookies are packed with flavor and a delightfully light and crispy crunch! They are thin but not too thin, slightly soft in the center with crispy edges and their texture is perfect for dipping into a glass of cold milk. This recipe is simple to make with no rolling or shaping required, just make sure to measure each of your ingredients carefully. We suggest doubling the recipe since we haven't met anyone that only eats one of these light and flavor-filled oatmeal coconut cookies.

1/2 cup butter or margarine, softened
1/2 cup packed brown sugar
1/4 cup granulated sugar
1 egg
1 cup Gold Medal™ all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon baking powder
1/4 teaspoon salt
1 cup old-fashioned oats
1 cup crisp rice cereal
1/2 cup flaked coconut
1/2 cup chopped pecans

Steps:

  • Heat oven to 350°F. Spray cookie sheets with cooking spray.
  • In large bowl, beat butter, brown sugar and granulated sugar with electric mixer on medium speed until fluffy. Beat in egg.
  • Add flour, baking soda, baking powder and salt; beat until blended. Stir in oats, cereal, coconut and pecans. Onto cookie sheets, drop dough by tablespoonfuls 2 inches apart.
  • Bake 10 minutes or until lightly browned. Remove from cookie sheets to cooling racks.

½ cup shortening
1 cup packed brown sugar
1 cup white sugar
2 eggs
1 teaspoon vanilla extract
½ cup butter
2 cups all-purpose flour
1 cup flaked coconut
1 teaspoon baking powder
1 teaspoon baking soda
2 cups rolled oats

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a medium mixing bowl cream shortening, butter, and sugars. Add eggs and vanilla until blended. Set aside.
  • In a separate bowl, combine dry ingredients, withholding the coconut until all other dry ingredients are blended. Add coconut.
  • Combine wet and dry ingredients until moist. Drop on greased cookie sheet about 1-2 inches apart. Bake for 10 minutes or until golden. Remove from oven immedietly- if overcooked cookies get HARD.

1/2 cup all-purpose flour
1/2 cup packed dark brown sugar
1/2 cup chocolate chips (milk or semisweet)
1/2 cup sweetened flaked coconut
1/4 teaspoon baking powder
1/4 teaspoon salt
5 tablespoons unsalted butter, melted and cooled
1 large egg
1/2 teaspoon vanilla

Steps:

  • Preheat oven to 350°F.
  • Line a 9-inch square metal baking pan with a 12- to 14-inch-long sheet of foil, letting excess hang over sides, and butter foil in pan.
  • Toss together oats, flour, brown sugar, chips, coconut, baking powder, and salt in a large bowl. Beat together butter, egg, and vanilla with a fork in another bowl, then stir into oat mixture until incorporated. Spoon batter into baking pan, patting evenly.
  • Bake in middle of oven until set, about 25 minutes. Remove from pan by lifting ends of foil. Cool on a rack, then cut into 16 squares.

1/2 cup quick oats
1 cup water
1/4 teaspoon coconut extract
1 medium banana
1 teaspoon shredded unsweetened coconut
chopped walnuts (optional)
sugar (optional) or sugar substitute (optional)

Steps:

  • Prepare oatmeal according to package directions on stove top or in microwave, using oats and water.
  • Peel and slice banana in half. In a separate bowl, mash half banana with a fork and stir into the oatmeal along with coconut extract. Stir in sugar or sugar substitute if desired. Slice the other half of banana into slices.
  • Top oatmeal with unsweetened coconut and banana slices, and chopped walnuts, if desired.
