1 1/4 cups quick-cooking oats
1 1/4 cups milk
1 egg
1/2 cup vegetable oil
3/4 cup brown sugar, packed
3/4 cup semi-sweet chocolate chips
1 cup pecans, chopped
1 1/4 cups flour
4 teaspoons baking powder
1/2 teaspoon salt (optional)

Steps:

  • Combine oats & milk. Let stand for 15 minute while preparing rest of ingredients.
  • Stir together egg, oil, 1/2 Cup sugar, chocolate chips and 1/2 Cup pecans.
  • In a seperate bowl, combine flour, baking powder and salt.
  • After 15 minute is up, add oat mixture to egg mixture. Then add flour mixture just until moistened.
  • Fill muffin cups 2/3 full.
  • Sprinkle muffin tops with rest of brown sugar and pecans.
  • Bake at 400 for 20-25 min or until tests done.

Steps:

  • Preheat the oven to 375 degrees F. Line a muffin tin with paper or silicone liners, or lightly spray with cooking spray.
  • In a large bowl, combine the flour, oats, brown sugar, baking powder, baking soda, and salt.
  • In another bowl whisk together the eggs, oil, milk, and mashed bananas.
  • Pour the wet ingredients into the dry and stir until just combined. Fold in the chocolate chips.
  • Divide the batter between the muffin cups, they will be quite full.
  • Bake for 16-18 minutes, or until a toothpick inserted in the center of a muffin comes out clean.

1 ½ cups all-purpose flour
1 tablespoon baking powder
2 tablespoons unsweetened cocoa powder
1 cup rolled oats
½ cup white sugar
¼ teaspoon salt
1 cup raisins
1 cup milk
1 egg
¼ cup vegetable oil

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Grease a muffin pan or line with paper muffin liners. Sift together flour, baking powder and cocoa powder, set aside.
  • In a large bowl, stir together the rolled oats, sugar and salt. Mix in the sifted ingredients and raisins. Add the milk, egg, and oil, mix until just blended. The batter will be lumpy. Spoon batter into the prepared muffin cups.
  • Bake in the preheated oven for 15 to 20 minutes, or until a toothpick inserted into the center of a muffin comes out clean. Remove from muffin cups to cool on a wire rack. Serve warm.

1/2 cup butter, softened
3/4 cup packed brown sugar
1 large egg
1 cup all-purpose flour
1 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
3/4 cup applesauce
1 cup rolled oats
1 cup semisweet chocolate chips

Steps:

  • In a large bowl, cream butter and sugar. Beat in egg. Combine dry ingredients; add alternately with applesauce to the creamed mixture. Stir in oats and chips. Fill paper-lined muffin cups three-fourths full. Bake at 350° for 25 minutes.

Steps:

  • Combine oats and milk and allow to stand for 15 minutes. Preheat oven to 400 degrees F (205 degrees C). Grease each cup of one 12-cup muffin tin.
  • Stir egg, oil, 1/2 cup of the brown sugar, chocolate chips and 1/2 cup of the pecans into the oat and milk mixture.
  • Combine flour, baking powder and salt. Add oat mixture to flour mixture, stirring until just moist. Fill each cup of one 12-cup muffin tin 2/3 full. Sprinkle tops with the remaining brown sugar and pecans.
