My mother passed this old-time recipe on to me because she knew I'd want to make it. I love desserts-especially this one! -Mary Wright, Morriston, Ontario

1-3/4 cups all-purpose flour
1 cup quick-cooking oats
1 cup chopped pecans
1 cup packed brown sugar
1 cup butter, melted
1-1/2 cups caramel ice cream topping
2 quarts vanilla ice cream, softened

Steps:

  • In a large bowl, combine the flour, oats, pecans and brown sugar. Add butter; mix well. Spread in a thin layer in a 15x10x1-in. baking pan. Bake at 400° for 15 minutes or until golden, stirring occasionally. Crumble while warm; cool., Press half of crumb mixture into a 13x9-in. dish. Drizzle with half of caramel sauce; spread with ice cream. Top with remaining caramel sauce and crumb mixture. Cover and freeze until firm. Remove from the freezer 10 minutes before serving.

1 tablespoon unsalted butter
1 medium Golden Delicious apple - peeled, cored, and chopped
¾ cup brown sugar, divided
¼ cup unsalted butter
2 cups heavy cream, or more as needed
2 cups oats (such as Quaker Oats®)
1 tablespoon flax seeds
1 tablespoon ground cinnamon
1 cup raisins
½ cup sliced almonds
¼ cup whipped topping

Steps:

  • Melt 1 tablespoon butter in a saucepan over medium heat. Add apple and 1/4 cup brown sugar; cook and stir until browned, about 2 minutes. Transfer to a small serving bowl.
  • Melt remaining butter in a small pot over medium heat. Add remaining brown sugar and stir until dissolved. Add 2 cups heavy cream; bring to a simmer. Add oats, flax seeds, and cinnamon; mix and stir until oats are full cooked and creamy, about 2 minutes, adding a touch more heavy cream if needed.
  • Serve in a bowl topped with caramel apple, raisins, and almonds. Add a spoonful of whipped topping to add additional creaminess.

My mom used to make these cookies when we were kids, at Easter she would make a well in the centre and add jelly beans to look like birds nests.

Number Of Ingredients 7

2 cups sugar
6 tablespoons cocoa powder
1/2 cup butter or 1/2 cup margarine
1/2 cup milk
1 teaspoon vanilla extract
1 cup shredded coconut
3 cups rolled oats

Steps:

  • Combine sugar, cocoa, butter or marg and milk in large sauce pan and bring to a boil.
  • Remove from heat and add vanilla, coconut and rolled oats, stir until all in coated in chocolate mixture.
  • Drop by the spoonful onto greased cookie sheet, etc and allow to cool before eating.
  • These cookies set up best if cooled in the fridge.

32 caramel candy light
5 tablespoons half and half
3/4 cup butter or margarine, melted
3/4 cup brown sugar packed
1 cup flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup oats
1 (6-ounce) package semi-sweet chocolate chips
1/2 cup pecans chopped

Steps:

  • Preheat oven to 350°. Grease a 12 x 8 x 2-inch baking dish. In a medium saucepan over low heat, melt caramels in half-and-half. Stir until smooth set aside.In a medium bowl, mix butter or margarine and brown sugar. Stir in flour, baking soda and salt. Stir in oats. Press half the mixture into the bottom of baking dish. Sprinkle with chocolate chips and nuts. Drizzle with caramel mixture. Sprinkle with remaining crumb mixture. Bake for 15 to 20 minutes or until golden brown. Cool baking dish on a wire rack. Chill at least 1 hour before cutting into 2 x 1 1/2 -inch pieces.
