These chocolate caramel oatmeal bars have a sticky-sweet layer of melted chocolate and caramel over a oatmeal cookie crust. SO addicting!

- Preheat the oven to 350 degrees. Combine the flour, oats, sugar, baking soda, and salt in a large mixing bowl. Melt the butter, let it cool, and pour into the mixing bowl with the dry ingredients. Stir (I just used a wooden spoon) until a soft dough forms. It should be just slightly crumbly. If the dough feels wet and heavy, add a little more flour.
- Press 3/4 of the dough into a 9×13 baking dish. Reserve the remaining 1/4 for topping. Bake for about 13 minutes or until the top is barely golden brown.
- While crust is baking, unwrap caramels and melt in the microwave with the cream. Stir until the mixture is smooth and pourable.
- Sprinkle chocolate chips over the baked crust. Pour the melted caramel over the chocolate chips. Crumble the remaining dough with your fingers (add a little more flour if it's not crumbly enough) and sprinkle over the top of the bars. Bake for another 15-20 minutes, until the top layer is golden brown. Let stand for several hours or until the caramel is cooled.

These chocolate caramel oatmeal bars (or carmelitas) are delicious cookie bars with a soft oatmeal cookie crust, stuffed with chocolate chips, and gooey caramel. The perfect way to satisfy your sweet tooth.

- Preheat the oven to 350 degrees. Line an 8x8 or 9x9inch baking pan with parchment paper (2 pieces to wrap up both sides), or foil to cover the sides, then nonstick spray. Set it aside.
- Add the sugar, melted butter, and vanilla extract to a large mixing bowl and stir them together.
- Add in the flour, oats, baking soda and salt and stir it together until you have a nice soft cookie dough.
- Press half of the oatmeal cookie mixture into the prepared pan. And set the other half aside.
- Bake the bottom layer for 10 minutes, and remove it from the oven.
- Add the caramels and heavy cream to a microwave safe bowl. Microwave in 30 second increments, stirring after each time until you can stir it completely smooth.
- Sprinkle the chocolate chips over the cooked crust.
- Pour the caramel mixture evenly over the chocolate chips and crust.
- Press pieces of the remaining oatmeal cookie dough between your hands to flatten, and place them around the top of the caramel, covering the caramel as much as you can.
- Return the pan to the oven and bake the bars for another 14 to 16 minutes, or until the edges are lightly golden.
- Remove the bars from the oven and let them cool completely, this may take 3 to 4 hours. If you want to speed up the cooling time, let the pan cool to touch, then add it to the fridge to chill for another hour or two.

- Heat oven to 350°F (325°F for dark or nonstick pan). Line 13x9-inch pan with foil, letting foil hang 2 inches over short ends of pan. Spray foil with cooking spray.
- In small bowl, mix caramel topping and 1 tablespoon of the cake mix; set aside. In large bowl beat remaining cake mix, butter and egg with electric mixer on low speed about 1 minute or just until crumbly. Stir in oats, using hands if necessary. Reserve 1 cup oat mixture. Using a piece of plastic wrap on crumb mixture, press remaining oat mixture in bottom of pan; remove plastic wrap. Bake 14 to 18 minutes or until light golden brown.
- Sprinkle chocolate chips and walnuts over hot crust. Drizzle caramel mixture evenly over chocolate chips and walnuts to within 1/2 inch of edges. Crumble reserved oat mixture over top.
- Bake 20 to 25 minutes or until golden brown. Cool completely, about 2 hours. Using foil to lift, remove bars from pan. Remove foil. For bars, cut into 6 rows by 4 rows. Store covered.

- Preheat your oven to 350˚F (175˚C).
- In a large mixing bowl, combine oats, flour, brown sugar, baking soda, salt, and melted butter. Mix until well combined and has a crumbly consistency.
- Line a 9x13 (22 x 33 cm) baking pan with parchment paper and lightly coat with a nonstick spray.
- Pour about ½ of the oat mixture into the pan and press with the back of a spoon or spatula until it's nice and compact. Save the other ½ of the oat mixture for later.
- Pour two cups (350 grams) of chocolate chips over the oat mixture and spread them out evenly. Save the ½ cup (85 grams) for the top.
- In a saucepan, melt the soft caramels, and the heavy cream until it becomes a smooth.
- Pour melted caramel over the chocolate chips and oat mixture. Carefully spread the caramel until it covers the chocolate.
- Pour the rest of the oat mixture over the caramel and spread out evenly.
- Add the other ½ cup of chocolate chips on top.
- Bake for 20-25 minutes, or until the crust has turned a golden brown. (Times and temperatures may vary from oven to oven). Allow to cool COMPLETELY before cutting into bars.

- Preheat oven to 350 degrees F (175 degrees C). In a medium saucepan over low heat, melt together the caramels and heavy cream, stirring occasionally until smooth.
- In a medium bowl, stir together the flour, oats, brown sugar, baking soda and salt. Stir in the melted butter until well blended. Press Half of the mixture into the bottom of a 9x13 inch baking pan. Reserve the rest.

- 1. Preheat oven to 350 degree F. Grease a 13x9 inch baking pan. In a medium bowl, combine butter, flour, baking soda, vanilla, oatmeal, brown sugar and salt. Stir to combine.

- 1. Preheat oven to 350 degrees (325 degrees for glass or dark non-stick pan). Lightly grease 9x13 inch pan.
- 2. In large bowl, blend all crust/topping ingredients until crumbly. Press half of the crust mixture into pan. Carefully spread caramel onto crust with offset spatula.
- 3. If using more than one type of chocolate chip, empty chips into small bowl and mix together to combine (this step is not necessary, but does ensure an even distribution). Sprinkle chocolate chips over layer of caramel topping. Sprinkle optional chopped nuts over chocolate chips. Distribute remaining crust/topping over chocolate chips and optional pecans by pinching off portions and evenly distributing. It's okay if the filling shows through the topping in parts.
- 4. Bake 25-30 minutes or until lightly browned. Cool bars enough to put pan in refrigerator. Chill in refrigerator several hours or until caramel and chocolate layer is set. If filling is not firm enough before cutting, the bars will be messy to cut and may not retain their shape or look as attractive when served later. After caramel and chocolate layer is set, it is helpful let bars come closer to room temperature before cutting (when chilled, the cold caramel and chocolate can be difficult to cut). Enjoy!

- Preheat oven to 350°F.
- Combine all crumb ingredients in a large bowl, stopping after adding the salt. Beat at medium speed until mixture is crumbly (about 3 minutes). Reserve 1 cup of crumb mixture.

- Preheat oven to 350 degrees F (180 degrees C).
- Peel the plastic wrapping from the caramels and melt them in a saucepan over medium heat along with the milk. ( If using a microwave, use a large, microwave-safe bowl, melt the caramels and milk in the microwave at medium power for 2 to 3 minutes, checking every 20 to 30 seconds.) Stir and set aside.
