Insanely Good Blueberry Oatmeal Muffins image

Yes, these blueberry muffins are insanely good! Hard to believe they are light. Think baked oatmeal, but in the form of a muffin... so moist and they are just as good the next day.

1 1/2 cups quick oats
1 cup unsweetened almond milk (or skim milk)
1/2 cup brown sugar (packed)
2 tbsp honey
1/2 cup unsweetened applesauce
2 egg whites
1 tbsp oil
1 tsp vanilla extract
1/2 cup white whole wheat flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 cup fresh blueberries
baking spray

Steps:

  • Preheat oven to 400°.
  • Line a muffin tin with liners and lightly spray with oil.
  • Place oats in a food processor or chopper and pulse a few times. Soak oats in milk for about 30 minutes.
  • In a medium bowl combine brown sugar, honey, apple sauce, vanilla, egg whites, oil and mix well.
  • In a third bowl combine whole wheat flour, salt, baking powder, baking soda and whisk to combine.
  • Combine oats and milk with sugar, applesauce mixture and mix well.
  • Slowly add in the dry ingredients and mix until just incorporated. Fold in blueberries.
  • Spoon into the muffin tin and bake for 22-24 minutes. Enjoy!!

½ cup milk
1 large egg
1 teaspoon vanilla extract
¼ cup unsalted butter, melted
¼ cup granulated sugar
1 cup all purpose flour
1 teaspoon baking powder
¾ teaspoon baking soda
1 teaspoon ground cinnamon
¼ teaspoon salt
½ cup raisins
½ cup chocolate chips

Steps:

  • Preheat the oven to 425°F.Prepare a muffin pan by spraying with nonstick spray.
  • In a large bowl, whisk the egg. milk, melted butter, applesauce, and vanilla, then stir in the oats.
  • In a medium bowl, mix the flour, baking soda, baking powder, sugar, cinnamon and salt.
  • Combine the wet ingredients, dry ingredients chocolate chips and raisins until just mixed.
  • Evenly distribute the batter in the prepared muffin pan.
  • Top the batter with a sprinkle of sugar on each muffin.
  • Bake at 425°F for 5 minutes, then lower the temperature to 350°F. Continue baking for about 15 minutes or until a toothpick inserted into the center of the muffin comes out completely dry.
  • Cool in the pan for 5 minutes, before transferring to a wire rack to finish cooling.

1 and 1/4 cups old-fashioned oats
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt

1 cup unsweetened applesauce
1/2 cup low-fat buttermilk
1/2 cup firmly packed brown sugar
2 Tablespoons canola oil
1 large egg (lightly beaten)
3/4 cup blueberries (fresh or frozen)

Steps:

  • Preheat your oven to 375 degrees F. Generously grease a standard muffin tin and set aside (I used a silicone muffin pan and did not grease it).
  • In a large bowl, whisk together the flour, oats, baking powder, baking soda, salt and cinnamon.
  • In a separate medium bowl, mix together the applesauce, buttermilk, brown sugar, and canola oil until well incorporated. Whisk in the egg and mix well.
  • Make a well in the large bowl with the dry ingredients and transfer the wet ingredients in the large bowl. Mix until there are still bits or streaks of flour left. Gently fold in the blueberries and mix until no flour streaks remain. Do not over mix.
  • Evenly distribute the batter into your prepared muffin pan and bake in your preheated oven for 16-18 minutes or until a toothpick inserted in the center comes out clean. Remove from oven and allow to cool before serving.

You can make this recipe vegan by omitting the egg and using soymilk as a substitute for milk (I use Lactaid milk to make it dairy-free). To make it sugar-free, substituting Splenda for the small amount of sugar is just as good! A pecan half on top of the muffin adds a visually-appetizing touch while adding a slight crunch to a moist and filling muffin!

  • Lightly spoon flour into dry measuring cups; level with a knife. Combine flour and the next 7 ingredients (flour through salt) in a medium bowl. Stir in raisins; make a well in center of mixture. Combine applesauce and next 4 ingredients (applesauce through egg); stir well with a whisk. Add to flour mixture, stirring just until moist. Spoon the batter into 12 muffin cups coated with cooking spray. Bake at 375° for 18 minutes or until the muffins spring back when touched lightly in center. Remove muffins from pans immediately; cool on a wire rack.
  • Note: Before freezing, let the muffins cool completely on a wire rack. Store them in a heavy-duty zip-top plastic bag in your freezer for up to a month.
