INSANELY GOOD BLUEBERRY OATMEAL MUFFINS
Steps:
- Preheat oven to 400°.
- Line a muffin tin with liners and lightly spray with oil.
- Place oats in a food processor or chopper and pulse a few times. Soak oats in milk for about 30 minutes.
- In a medium bowl combine brown sugar, honey, apple sauce, vanilla, egg whites, oil and mix well.
- In a third bowl combine whole wheat flour, salt, baking powder, baking soda and whisk to combine.
- Combine oats and milk with sugar, applesauce mixture and mix well.
- Slowly add in the dry ingredients and mix until just incorporated. Fold in blueberries.
- Spoon into the muffin tin and bake for 22-24 minutes. Enjoy!!

- Preheat the oven to 425°F.Prepare a muffin pan by spraying with nonstick spray.
- In a large bowl, whisk the egg. milk, melted butter, applesauce, and vanilla, then stir in the oats.
- In a medium bowl, mix the flour, baking soda, baking powder, sugar, cinnamon and salt.
- Combine the wet ingredients, dry ingredients chocolate chips and raisins until just mixed.
- Evenly distribute the batter in the prepared muffin pan.
- Top the batter with a sprinkle of sugar on each muffin.
- Bake at 425°F for 5 minutes, then lower the temperature to 350°F. Continue baking for about 15 minutes or until a toothpick inserted into the center of the muffin comes out completely dry.
- Cool in the pan for 5 minutes, before transferring to a wire rack to finish cooling.

- Preheat your oven to 375 degrees F. Generously grease a standard muffin tin and set aside (I used a silicone muffin pan and did not grease it).
- In a large bowl, whisk together the flour, oats, baking powder, baking soda, salt and cinnamon.
- In a separate medium bowl, mix together the applesauce, buttermilk, brown sugar, and canola oil until well incorporated. Whisk in the egg and mix well.
- Make a well in the large bowl with the dry ingredients and transfer the wet ingredients in the large bowl. Mix until there are still bits or streaks of flour left. Gently fold in the blueberries and mix until no flour streaks remain. Do not over mix.
- Evenly distribute the batter into your prepared muffin pan and bake in your preheated oven for 16-18 minutes or until a toothpick inserted in the center comes out clean. Remove from oven and allow to cool before serving.
