Oatmeal Bread image

Easy Homemade Oatmeal Bread made with rolled oats, whole wheat flour and sweetened with honey.

Number Of Ingredients 10

2 cups milk (, brought to a simmer)
1 cup rolled oats ((not quick or instant oats))
4 tablespoons butter (, softened)
1/2 cup honey
4 ½ teaspoons instant yeast
1/2 cup warm water
1 1/2 teaspoons salt
2 1/2 cups whole wheat flour
2 1/4 -3 cups all-purpose flour
egg wash: 1 egg mixed with 1 tablespoon of water

Steps:

  • Add oats and butter to the bowl of a stand mixer or large mixing bowl. Heat milk to a simmer and pour on top, stirring to combine. Set aside for about 1.5 hours. Mixture should be at room temperature.
  • Add honey, warm water, instant yeast, and salt to the bowl and stir well to combine. Add the whole wheat flour and mix on medium-low speed until combined. Add the all-purpose flour, a little at a time, until the dough begins to pull away from the sides of the bowl. Only add enough flour to make a dough that is soft, and not overly sticky (don't add too much flour!). Knead for a few minutes until smooth and elastic and scrape down the sides and bottom of the bowl as needed.
  • First Rise: Transfer dough to a greased bowl and cover with a dish towel or plastic wrap. Allow to rise until double in size, about 1 hour.
  • Punch down the dough and divide into two equal pieces. Shape into loaves and place in two lightly greased loaf pans. Make egg wash and gently brush some over the top of each loaf. Sprinkle a small handful of dry oats on top.
  • Second rise: Cover with a well greased piece of plastic wrap gently laid on top and let rise in a warm place until risen about 1 inch over the loaf pans, 45 minutes to 1 hour. Carefully peel off the plastic wrap.
  • Bake at 350 degrees for 30 - 40 minutes. Loaves are done when tapping lightly on the tops produces hollow sound (or when instant read thermometer registers 200° F). Cool for 15 minutes on wire rack, then turn out of pans and cool completely.

1/2 cup whole wheat bread flour
1 3/4 cups white bread flour
2 1/4 teaspoons instant yeast
2 1/2 tablespoons sugar
3/4 teaspoon salt
2/3 cup water, hot
1/4 cup butter or 1/4 cup margarine, softened
1 cup oats
1 egg

Steps:

  • COMBINE whole wheat flour, 1/2 cup of the white flour, yeast, sugar and salt in large bowl. Mix well.
  • ADD water, butter, oats and egg to flour mixture.
  • Beat at low speed of electric mixer just until dry ingredients are moistened.
  • Beat at medium speed for 3 minutes.
  • Using a wooden spoon, gradually stir in remaining 1 - 1 1/4 cups (250 - 300 mL) white flour adding enough to make a soft smooth dough.
  • PLACE in lightly greased bowl. Turn dough to grease top. Cover with greased waxed paper and tea towel.
  • Let rise in a warm place (75°- 85°F/24°- 29°C) until doubled (35 - 40 minutes).
  • TURN dough into greased 1 1/2 qt (1.5 L) round casserole or soufflé dish.
  • LET RISE uncovered in warm place until doubled in size (30 - 35 minutes).
  • BAKE at 375°F (190°C) on centre oven rack for 25 - 30 minutes, or until golden. Remove from dish immediately. Cool on wire rack.

1 cup hot milk (must be hot enough to soften the oats)
2 large eggs, beaten
6 tablespoons butter, melted
1/4 cup firmly packed light brown sugar
1/2 cup dark raisin
2 -2 1/2 cups all-purpose flour, as needed
2 teaspoons baking powder
1/2 teaspoon salt
1/4 teaspoon ground cinnamon

Steps:

  • Preheat oven to 350°; butter a deep 1 ½ quart casserole and set aside.
  • In a mixing bowl, combine the oats and milk, stir, and let stand until oats are softened, about 10 minutes.
  • Add in eggs, butter, brown sugar, and raisins; stir until well blended.
  • Sift 2 cups of the flour, the baking powder, salt, and cinnamon directly into the oat mixture; stir until well blended and smooth, adding more flour as necessary for a firm consistency.
  • Scrape batter into the prepared casserole; bake until a straw inserted into the center comes out clean, about 1 hour.
  • Let the bread cool slightly, then transfer to a wire rack to cool completely; to serve cut into slices.

I got this from Cooking Light magazine and it is one of my husband's favorites. It goes together very quickly and requires no kneading. This is a great recipe for those who are new to bread baking. NOTE: Time includes rising time.

1 1/4 cups warm water, divided
1 cup quick oats, divided
1 teaspoon quick oats
2 tablespoons brown sugar
2 1/4 teaspoons yeast
3 cups flour
3/4 cup onion, minced
2 tablespoons vegetable oil
1 teaspoon salt
cooking spray

Steps:

  • Combine 1 cup of water, 1/2 cup oats, and brown sugar in a small bowl.
  • In a separate bowl, dissolve yeast in 1/4 cup of water; let stand 5 minutes.
  • Add oat mixture, flour, 1/2 cup oats, onion, oil, and salt.
  • Stir until well blended. Mixture will be stiff.
  • Cover and let rise until double in size (about 45 minutes).
  • Stir down batter and spoon into loaf pan that has been sprayed with cooking spray.
  • Sprinkle with 1 teaspoon of oats.
  • Cover and let rise until double (about 30 minutes).
  • Bake at 375 degrees for 50 minutes.
