1 cup chopped dates
1/2 cup water
1/4 cup sugar
1-1/2 cups quick-cooking oats
1 cup all-purpose flour
1 cup packed brown sugar
1/2 teaspoon baking soda
1/4 teaspoon salt
1/3 cup butter, melted
1 large egg white, room temperature

Steps:

  • Preheat oven to 350°. Place dates, water and sugar in a small saucepan; bring to a boil, stirring constantly. Reduce heat; simmer, uncovered, until thickened, about 5 minutes, stirring constantly., In a large bowl, mix oats, flour, brown sugar, baking soda and salt; stir in melted butter and egg white. Press half of the mixture into an 8-in. square baking pan coated with cooking spray. Spread carefully with date mixture; top with remaining oat mixture. , Bake until lightly browned, 20-25 minutes. Cool in pan on a wire rack. Cut into bars.

1 cup finely ground old-fashioned rolled oats
3/4 cup whole-wheat flour
1 1/2 cups old-fashioned rolled oats
1 1/2 teaspoons baking powder
1 1/2 teaspoons salt
1/2 teaspoon ground cinnamon
1/4 teaspoon ground allspice
2 cups packed light-brown sugar
12 tablespoons (1 1/2 sticks) unsalted butter, softened
3 large eggs
2 1/2 teaspoons pure vanilla extract
1 1/2 cups walnuts (5 1/2 ounces), toasted and chopped
1 cup dates (5 ounces), pitted and chopped
Vegetable oil cooking spray

Steps:

  • Preheat the oven to 350°F. Whisk together the ground oats, flour, 1 cup whole oats, baking powder, salt, cinnamon, and allspice in a large bowl; set aside.
  • Put the brown sugar and butter in the bowl of an electric mixer fitted with the paddle attachment. Beat on medium speed until pale and fluffy, about 5 minutes. Mix in the eggs and vanilla, scraping down the sides of the bowl as needed.
  • Reduce speed to low. Add the oat mixture; mix until just combined. Mix in the walnuts and dates.
  • Coat a 9 × 13-inch baking dish with cooking spray. Spread the batter evenly in the dish. Scatter the remaining 1/2 cup whole oats over the top. Bake until golden and a cake tester inserted into the center comes out clean, about 35 minutes. Cool completely in the pan on a wire rack; cut into bars.

1 cup unsweetened applesauce
1/3 cup sugar
1/4 cup molasses
1/8 cup vegetable oil (I use peanut oil)
1 egg
1 teaspoon vanilla (I also add 1/2 tsp maple extract)
1 1/2 cups large-flake rolled oats
1 cup whole wheat flour
1/4 cup wheat germ
1/4 cup skim milk powder
1 teaspoon cinnamon
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/3 cup dates, chopped

Steps:

  • In a large bowl stir together applesauce, sugar, molasses, oil, egg and vanilla until smooth.
  • Stir in oats, flour, wheat germ, milk powder, cinnamon, baking powder and baking soda; mix thouroughly; stir in dates.
  • Spray a 9 by 13" (3 1/2 L) baking dish with non stick spray; press batter into dish.
  • Bake at 350F for 20 minutes or until firm to the touch.
  • Cut into bars when still warm.
  • Makes 16 servings.

3/4 cup (1 1/2 sticks) unsalted butter, room temperature
2 cups packed light brown sugar
3 large eggs
2 1/2 teaspoons pure vanilla extract
1 1/2 cups walnuts (about 5 1/2 ounces), toasted and chopped
1 cup dates (5 ounces), pitted and coarsely chopped
Vegetable oil cooking spray

Steps:

  • Preheat oven to 350°F. Finely grind 1 1/4 cups oats in a food processor. Stir together ground oats, 1 cup whole oats, the whole wheat fl our, baking powder, salt, cinnamon, and allspice in a large bowl.
  • With an electric mixer beat butter and brown sugar on medium speed until pale and fluffy, about 5 minutes. Mix in eggs and vanilla. Reduce speed to low; mix in oat mixture until just combined. Mix in walnuts and dates.
  • Coat a 9 by 13-inch baking dish with cooking spray. Using an offset spatula, spread batter evenly in dish. Scatter remaining 1/2 cup whole oats over top. Bake, rotating dish halfway through, until golden and a cake tester inserted into center comes out clean, about 35 minutes. Let cool completely in dish on a wire rack. Cut into bars. Cookies can be stored between layers of parchment in airtight containers at room temperature up to 3 days.
