APPLE AND OAT SCONES WITH CINNAMON AND NUTMEG
These scones are light yet hearty. Fresh apple keeps them moist, buttermilk contributes tenderness, and oats add a pleasantly toothsome texture.

Steps:
- Preheat oven to 400 degrees. Whisk together flour, oats, brown sugar, cinnamon, nutmeg, baking powder, baking soda, and salt. Cut in butter with a pastry blender or rub in with your fingers. (The largest pieces should be the size of small peas.) With your fingertips, flatten butter pieces into small disks. Add apples and buttermilk, stirring until dough just comes together.
- Turn out dough onto a lightly floured work surface. Pat dough into a 6-by-8-inch rectangle, and cut into twelve 2-by-2-inch squares with a floured knife. Place about 2 inches apart on parchment-lined baking sheets. Brush tops with buttermilk, and sprinkle with raw turbinado sugar and oats. Bake until golden brown, 20 to 22 minutes, rotating sheets halfway through. Let cool on sheets for 15 minutes. Serve warm or at room temperature.

Steps:
- Combine first seven ingredients (flour through cinnamon) in large bowl.
- Add ½ cups applesauce and butter; cut in with pastry blender until mixture resembles coarse crumbs.
- Stir in cranberries and apple.
- In small bowl combine milk and ¼ cups honey; add to flour mixture and stir until dough forms ball.
- Knead dough 10-12 times on floured surface; pat into 8-inch circle and place on sprayed baking sheet.
- Use sharp knife to cut dough into 12 wedges, and separate wedges slightly.
- Combine remaining applesauce and honey, and brush over top of dough.
- Bake 12-15 minutes at 425 degrees, or until lightly browned; remove from baking sheet and cool on wire rack.

- Preheat oven to 425 degrees; spray a baking sheet with nonstick cooking spray. In a large bowl, combine the flour, oats, sugar, baking powder, salt, baking soda and cinnamon. Add ½ cup applesauce and the margarine; cut in with a pastry blender or fork until the mixture resembles coarse crumbs. Stir in the cranberries and apple. In a small bowl, combine the milk and ¼ cup honey. Add to the flour mixture; stir together until the dough forms a ball. Turn the dough out onto a well-floured surface; knead 10 to 12 times. Pat the dough into an 8-inch circle. Place on the baking sheet. Use the tip of a knife to score the dough into 12 wedges. In another small bowl, combine the remaining ¼ cup applesauce and 2 tablespoons honey. Brush the mixture over the top of the dough. Bake for 12 to 15 minutes, or until lightly browned. Immediatley remove from the baking sheet; cool on a wire rack for 10 minutes. Serve warm or cool completely. Cut into 12 wedges.

CRANBERRY APPLE OATMEAL
I made this one morning in an effort to use up leftover cranberries from Thanksgiving. It's filling, healthy, and delicious! If you generally make oatmeal with milk instead of water, don't! The acid in the cranberries will make the milk separate. I tried it. It will still taste okay, but it won't look very pretty.

- Combine water, apple, and cranberries together in a bowl; bring to a boil. Cook mixture until cranberries burst and apple is tender, about 5 minutes. Reduce heat to medium and stir oats, brown sugar, cinnamon, nutmeg, and salt into apple mixture. Cook, stirring continuously, until water is absorbed and oatmeal thickens, 2 to 3 minutes. Top oatmeal with walnuts.

APPLE CRANBERRY SCONES
These have a terrific aroma and taste. Great for breakfast or brunch. This is my recipe of apple cranberry scones.

Steps:
- Measure flour, sugar,baking powder,soda,and salt into a large bowl.
- Cut in butter until crumbly.
- Add shredded apple, cranberries and milk.
- Stir to form a soft dough.
- Turn dough out onto a lightly floured surface.
- Knead gently 8 to 10 times.
- Pat into two 6 inch circles.
- Brush tops with milk and sprinkle with sugar and cinnamon.
- Cut each circle into six pie-shaped wedges.
- Place onto greased baking sheet.
- Bake at 425 degrees for 15 minutes, or until browned.
- Serve warm with Butter.

This is one of my standard weekend breakfast recipes. It is basically the recipe printed in 1997 version of the Joy of Cooking.

- Preheat the oven to 450°F (230°C).
- Whisk together the flour, sugar, baking powder and salt. Stir in the oatmeal and cranberries. You may need to use your fingers to be sure the cranberries are all separated.
- Whisk together the egg, butter and milk then add the mixture to the dry ingredients. Mix together just until the dry ingredients are moistened. The dough will be sticky.
- Transfer the dough onto an ungreased baking sheet and pat into a circle about 3/4 inches (2 cm) thick. Sprinkle liberally with sugar and score the top into eight wedges.
- Bake on a rack in the middle of the oven for about 12 minutes until lightly browned.

- Preheat oven to 375 degrees.
- Combine first 5 ingredients in a food processor or bowl.
- Add butter and process until it resembles coarse meal.
- Add oats, currants and buttermilk and stir mixture until dough just sticks together.
- (DO NOT over mix) Transfer to a floured work surface and knead about 5 times.
- Roll out dough to 1 inch thickness.
- (in circle) cut into pie shaped pieces or cut with cookie cutter.
- Arrange on a slightly greased baking sheet.
- Gently brush scones with egg and bake 20 minutes or until golden.
- Serve with Apple Butter.
- Enjoy.
