OATMEAL WITH DRIED FRUIT COMPOTE
This healthy (no salt, no sugar added)breakfast is "fast" food at it's best. Together golden raisins, apricots and cranberries make a colorful compote. For make ahead meals, place oatmeal/compote layers in individual covered containers and refrigerate (or pop a few in the freezer) until ready to reheat in the microwave. We serve this topped with warm milk or cream. What a great way to start the day!

Steps:
- This recipe makes enough compote for 13 servings (a complete 18oz container of quick cooking oatmeal); Or you can store compote in the fridge while you make individual servings of oatmeal.
- Compote.
- In a medium saucepan combine fruit and water.
- Bring to a slow boil.
- Reduce heat, cover and simmer for 30 minutes.
- Oatmeal.
- In a large saucepan bring water to a full boil.
- Add rolled oats, reduce heat to medium and stir for 1 minute.
- Cover and let set for 5-10 minutes until oatmeal is set.
- To serve: Place a layer of oatmeal and a layer of compote in a bowl.
- Repeat.
- Sprinkle top with a dusting of cinnamon (optional).
- Serve topped with warm milk or cream.
- (optional).
CROCK POT OATMEAL WITH DRIED FRUIT
Steel cut oats and your favourite dried fruits make for a delicious breakfast that's ready and waiting for you when you roll into the kitchen for breakfast. There's absolutely no need to add any sugar to the oatmeal, as the sugars in the fruit take care of that for you. Use any combination of fruit you have on hand; I've used apples, prunes, dates, apricots, cranberries, raisins, cranberries, strawberries, and pineapple and all are great but my favourites are apple/raisin, and dates all by themselves. From the manual that came with a Cuisinart slow cooker.

- Spray slow cooker insert lightly with cooking spray.
- Measure oats, water, salt, and cinnamon into pot; stir to combine.
- Stir in dried fruit.
- Cover and cook on low for 3 hours (use the timer function; otherwise, you might have to get up early to turn the slow cooker on).
- Leftovers can be reheated in the microwave.

Steps:
- Put everything except milk into boiling water and cook over med heat for about 25-30 minutes. Oats should be tender but not mushy. There should be some definite texture to the oats. Add milk, stir well and cook about 3 min more. Serve.
