Oat Flour Banana Bread image

This oat flour banana bread is a perfect breakfast, snack or dessert for everyone in the family. It is incredibly moist, loaded with toasted walnut pieces, and lightly sweetened with coconut sugar. The banana bread is gluten free and can be made dairy free and vegan, too!

4 bananas (1 1/2 cups) (see notes)
2 eggs (at room temperature, see notes)
1/2 cup coconut sugar
7 tablespoons melted butter or coconut oil
1 teaspoon pure vanilla extract
2 cups oat flour
1/2 teaspoon kosher salt
1 teaspoon baking soda
1 teaspoon baking powder
3/4 cup walnuts, finely chopped (lightly toasted, see notes)
1 banana (sliced vertically)
2 tablespoons coconut sugar

Steps:

  • Preheat the oven to 350 degrees Fahrenheit, and adjust the oven rack to the middle position. Lightly spray a 9x5" loaf pan with oil and line with parchment paper. Set aside.
  • In a large mixing bowl, mash bananas very well with a fork or potato masher. You want them to be as smooth as possible. Add in the wet ingredients and stir well until no large clumps remain. Add the dry ingredients into the bowl, and give everything a nice stir with a spatula. Continue stirring and folding until smooth and no clumps remain, but do not over mix! Fold in the chopped walnuts and stir again.
  • Pour into the prepared loaf pan, and tap firmly on the counter several times to release air bubbles. Smooth over the top with an offset spatula. Top off with sliced banana, rolled oats or turbinado sugar.To make the sliced bananas, cut banana in half vertically and sprinkle with coconut sugar. Shake off the excess and place (insides, face up) on top of the loaf, lightly pressing down.
  • Bake at 350 degrees Fahrenheit for 55-65 minutes until a toothpick inserted into the center comes out clean. Remove from the oven and let it cool in the pan for 30 minutes before carefully transferring to a wire rack to cool completely.
  • Serve warm with a slab of butter or have plain. Store in an airtight container in the refrigerator for up to 3-4 days.

4 ripe bananas
1 egg
¼ cup yogurt
2 tbsp olive oil
2 tsp vanilla extract
1 cup oat bran
1 ½ cups whole wheat flour
¼ cup coconut sugar
2 ½ tsp baking powder
½ tsp baking soda
½ tsp salt

Steps:

  • Preheat the oven to 350 degrees. Lightly oil a loaf pan.
  • Place the banana into a blender or food processor. Pulse a few times until you get a banana puree. Add the egg, yogurt, oil, and vanilla extract. Pulse a few times to combine. Alternatively, you can mash the banana with a fork and then combine everything with a whisk or an electric mixer.
  • In a large bowl, combine the oat bran, flour, coconut sugar, baking powder, baking soda, and salt. Mix well.
  • Combine the wet and dry ingredients, stirring only until everything is moistened. Do not overmix.
  • Pour the batter into the loaf pan. Bake for 50 minutes to one hour or until the cake tester comes out clean.
  • Take the loaf pan out of the oven. Let the banana bread cool in the loaf pan for about 10 minutes and then carefully transfer it onto a cooling rack. Let it cool for at least 10 minutes before slicing.

1 dash salt
3/4 cup water
1 teaspoon sugar (or honey)

Steps:

  • Combine chopped banana, oat bran, salt, water and sugar (use more or less sugar to taste) in a microwave-safe bowl.
  • Microwave on high for 3 minutes, stirring after each minute.
  • If using honey, stir it in after cooking.
  • If desired, serve with milk.

1 cup mashed banana (about 2-3 bananas)
1/2 cup buttermilk
1/4 cup vegetable oil
1 teaspoon vanilla
2 large eggs
1/3 cup granulated sugar
1/3 cup brown sugar (packed)
1 ½ cups all-purpose flour (properly measured1)
1 ½ teaspoons baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1/2 teaspoon ground cinnamon
3/4 cup old-fashioned oats

Steps:

  • Preheat oven to 350F. Grease an 8 x 4 inch loaf pan. Set aside.
  • Add the banana to a large bowl and mash.
  • Stir in buttermilk until well-combined.
  • Whisk in the oil and vanilla until combined.
  • Add the eggs and sugars. Whisk in until combined.
  • Add flour, baking powder, baking soda, salt, cinnamon, and oats. Whisk in just until combined. Don't overmix.
  • Pour batter into the prepared pan.
  • Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.2
  • Cool in the pan for about 10 minutes.
  • Remove to a wire rack to finish cooling.
