Oatmeal gives these rolls a lovely texture, while the sourdough adds a distinct flavor.

1 cup sourdough starter
½ cup warm water
3 tablespoons honey
1 tablespoon molasses
1 egg, lightly beaten
½ cup margarine
½ cup quick cooking oats
3 cups all-purpose flour
1 teaspoon salt
½ teaspoon baking soda
2 teaspoons yeast

Steps:

  • Place ingredients in bread machine pan in the order recommended by the manufacturer. Select the Dough Cycle, then press Start.
  • When the cycle is complete, transfer dough to a lightly floured surface and divide into 24 rolls. Cover with a towel and let rolls rise until doubled, about 1 hour.
  • Preheat oven to 400 degrees F (200 degrees C). Lightly grease a large baking sheet.
  • Arrange the rolls on the prepared baking sheet, and bake 10 to 12 minutes in the preheated oven, until lightly browned.

2 cups quick-cooking oats
2/3 cup packed brown sugar
1/4 cup butter, cubed
1 tablespoon salt
2-1/2 cups boiling water
2 packages (1/4 ounce each) active dry yeast
1/2 cup warm water (110° to 115°)
5-1/2 to 6 cups all-purpose flour
Additional butter, melted

Steps:

  • In a large bowl, combine the oats, brown sugar, butter and salt; stir in boiling water. Cool to 110°-115°. In a large bowl, dissolve yeast in warm water; let stand for 5 minutes. Add oat mixture and 2 cups flour; beat until smooth. Stir in enough remaining flour to form a soft dough., Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour., Punch dough down. Turn onto a lightly floured surface; divide into 20 pieces. Place in a greased 13x9-in. baking pan. Cover and let rise until doubled, about 45 minutes. , Bake at 350° for 30-35 minutes or until golden brown. Remove from pan to a wire rack; brush with melted butter.

Oat Rolls are one of our family favorites! They are easy to make and so delicious. Soft, tender, with oatmeal goodness that turns it into a slightly sweet, hearty bread.

2 cups old-fashioned oats
3/4 cup brown sugar
1/4 cup butter
1 tablespoon salt
3 cups boiling water
5 1/2 - 6 cups all-purpose flour
2 tablespoons instant yeast
1 tablespoon Butter (for topping)

Steps:

  • Gather all your ingredients so that you have everything close at hand on the counter or table.
  • In a large mixing bowl combine old-fashioned oats, brown sugar, butter and salt. Add boiling water and stir. Cool to 100-115 degrees.
  • Add two cups of all-purpose flour and instant yeast to the oat mixture. Beat until smooth. Stir in enough remaining flour to form a soft dough.
  • Turn onto a floured surface and knead until smooth and elastic, about 5-7 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about one hour.

Looking for something a little different yet delicious to go with dinner tonight? Try my soft oatmeal dinner rolls! They go great with just about anything!

1 1/2 Cups Warm Water
1/4 Cup Brown Sugar
1 Tbs. Active Dry Yeast
1 3/4 Cup Quick Cooking Oatmeal
4 Tbs. Butter (softened)
1 1/2 tsp Salt
2-3 Cups All Purpose Flour

Steps:

  • In the bowl of a mixer fitted with a dough hook, dissolve the brown sugar and yeast in the warm water. Allow to stand and get foamy for 5 minutes.
  • While waiting for the yeast, process the quick cooking oatmeal in a blender or food processor until it is only a little bit coarser than regular flour.
  • When the yeast is ready, mix in the butter, salt, processed oatmeal and 2 cups of the flour. Once this is all mixed in your dough will be really sticky and not form a ball
  • Add more flour a 1/4 cup at a time with the mixer running until the dough begins to come together and clean the sides of the bowl. (Refer to the pictures in my post). I usually only have to add an additional 1/2 cup of flour, if you live in a more humid place you may need a little more.
  • Knead the dough at a medium speed for 3 minutes. After 3 minutes the dough should only be slightly stick and will have cleaned the sides of the bowl well.
  • Remove the dough hook and cover the bowl with a dish towel. Let the dough rise until doubled. This should take 45 minutes to an hour.
  • Dump risen dough out onto a lightly floured surface and divide it up into 15 pieces. Shape these pieces into balls and place them in a 9x13 baking dish that has been sprayed with non-stick cooking spray. Cover with a towel and allow them to rise until doubled (30-45 minutes)
  • Preheat the oven to 375 degrees and bake the rolls for 15-20 minutes. The tops should be golden brown and rolls will sound hollow when thumped. Run a cube of butter over the tops of the hot rolls if desired.

2/3 cup non-dairy thick coconut yogurt* (166g // + 1-2 tbsp as needed)
1 ½ tsp apple cider vinegar (7g)
1 cup oat flour (125g)
1 ½ tsp baking powder (7g)
½ tsp baking soda, optional
pinch of salt, optional
3 tbsp drippy cashew butter (48g)
3 tbsp coconut sugar (36g)
1 ½ tsp cinnamon (7g)
1/4 cup vegan icing sugar (25g)
2 tbsp non-dairy milk

Steps:

  • Preheat oven to 350F.
  • In a bowl, add the yogurt and apple cider vinegar and stir until combined. Then add in the oat flour, baking powder, baking soda and salt and mix until just combined.
  • Flour your working surface with more oat flour and transfer the dough on top. Sprinkle a bit more oat flour on top and then use your hands or a wooden roller and roll the dough into a long rectangle, about 4-5 inches in width about 1/4 of an inch in thickness.
  • Spread the cashew butter on the dough and then sprinkle on the coconut sugar and cinnamon. Slice the dough into 4 even strips and then roll each one individually. Place into a small baking dish and bake for 19-22 minutes or until tops are lightly golden brown.
  • Drizzle with maple cashew cream or icing and enjoy!

2 cups 7.5 ounces quick cooking oats (see note)
1/3 cup honey
4 tablespoons butter (cut into pieces)
2 1/2 teaspoons salt
2 1/2 cups boiling water
1 1/2 tablespoons instant yeast (see note for active dry yeast)
4 to 5 cups all-purpose flour
Melted butter (for brushing baked rolls (optional))

Steps:

  • In the bowl of a stand mixer fitted with the dough hook, combine the oats, honey, butter and salt. Add the boiling water and mix until combined. Let the oats soften and the mixture cool for 15-20 minutes until about 110 degrees (or lightly warm to the touch).
  • Add the yeast and 2 cups of the flour. Mix until combined. With the mixer on low speed, continue adding flour, 1/2 cup at a time, until a soft dough forms that clears the sides of the bowl but is still soft and tacky to the touch (be careful not to overflour!). The exact amount of flour will depend on many factors, so don't worry if you have to add more or less than called for to achieve the right texture for the dough. Knead the dough for 4-5 minutes until smooth and elastic.
  • Place the dough in a lightly greased bowl and cover with a clean towel or greased plastic wrap. Let the dough rise until doubled, about 1 to 1 1/2 hours, depending on the warmth of your kitchen.
  • Punch down the dough and divide into 12 equal pieces (see note). Shape each piece into a round ball, pinching the bottom to seal.
  • Grease a 9X13-inch baking pan and place the rolls in the pan. Cover and let the rolls rise until puffy and almost doubled in size, about an hour.
  • Preheat the oven to 350 degrees F. Bake the rolls for 20-25 minutes until golden on top and baked through. Brush with melted butter, if desired.

2 cups rolled oats
1 ⅓ cups brown sugar
6 tablespoons vegetable oil
2 (.25 ounce) packages active dry yeast
⅔ cup lukewarm water

1 cup butter, softened
3 tablespoons honey
⅛ teaspoon ground cinnamon

Steps:

  • Stir boiling water and oats together in a bowl; set aside to thicken and cool, 10 to 15 minutes. Stir brown sugar and vegetable oil into oat mixture.
  • Dissolve yeast in lukewarm water in a bowl. Let stand until the yeast softens and begins to form a creamy foam, about 5 minutes. Stir yeast mixture and salt into oat mixture. Beat flour, 1 cup at a time, into oat mixture until dough is soft. Turn dough onto a floured surface and knead for 10 minutes.
  • Place dough in an oiled bowl and cover with a damp towel; let rise until doubled in size, about 1 hour.

These are great and simple Rolls from Southern Living Magazine. I do not claim to be a baker at all, but if I can make these anyone can and I always get rave reviews. The dough can also be used for yummy cinnamon rolls as well.Update: At one point I changed the recipe to canola oil instead of butter and added half whole wheat. Then a friend of mine made it and she substituted applesauce for the butter and she said it turned out great. I made it tonight with the applesauce and she was spot on!

  • Cover and let rise in warm place free from drafts, 30 minutes or until doubled in bulk.
  • Bake at 375 for 15 minutes or until golden brown.
  • Makes 16 rolls.
