HEALTHY GRANOLA
This delicious healthy granola recipe is naturally sweetened with maple syrup (or honey). It's made with oats, coconut oil and your favorite nuts and fruit. Make it your own! Recipe yields about 8 cups granola, enough for about 16 half-cup servings.

- Preheat oven to 350 degrees Fahrenheit and line a large, rimmed baking sheet with parchment paper.
- In a large mixing bowl, combine the oats, nuts and/or seeds, salt and cinnamon. Stir to blend.
- Pour in the oil, maple syrup and/or honey and vanilla. Mix well, until every oat and nut is lightly coated. Pour the granola onto your prepared pan and use a large spoon to spread it in an even layer.
- Bake until lightly golden, about 21 to 24 minutes, stirring halfway (for extra-clumpy granola, press the stirred granola down with your spatula to create a more even layer). The granola will further crisp up as it cools.
- Let the granola cool completely, undisturbed (at least 45 minutes). Top with the dried fruit (and optional chocolate chips, if using). Break the granola into pieces with your hands if you want to retain big chunks, or stir it around with a spoon if you don't want extra-clumpy granola.
- Store the granola in an airtight container at room temperature for 1 to 2 weeks, or in a sealed freezer bag in the freezer for up to 3 months. The dried fruit can freeze solid, so let it warm to room temperature for 5 to 10 minutes before serving.

- Heat oven to 350° F. Line 8-inch square pan with cooking parchment paper, leaving a few inches of overhang on 2 sides.
- Place 2 cups of the oats in large bowl. Add remaining 1/2 cup oats to blender or food processor; pulse into a rough flour. Add oat flour to bowl of oats. Add baking soda and salt to bowl of oats; stir.
- In microwavable bowl, microwave coconut oil uncovered on High just until melted. Stir in honey, sugar and vanilla; add to bowl of oats. Stir well to coat oats completely. Spread mixture evenly in pan; press down firmly and evenly.
- Bake 20 minutes. Oats should be golden and smell of honey. Cool on rack 10 minutes. Remove from pan using parchment overhangs. Cut into 8 rectangles while still warm. Cool completely before wrapping. The bars will firm and crisp up as they cool.

HONEY GRANOLA
Honey Granola will add a sweet and healthy crunch to your breakfast. This granola recipe with honey is simple to make and tastes great on many different breakfast foods. It has truly become a favorite in our house!

- Preheat oven to 350°F / 176°C. Line a big baking tray with parchment paper.
- In a large bowl, mix together the oats, nuts, sea salt flakes, cinnamon and cardamom.
- In a small bowl, mix together the coconut oil, honey and vanilla. If your kitchen is chilly, it may be easier to pop the coconut oil and honey in the microwave for about 15 seconds to help it mix together.
- Pour the honey mixture over the oats mixture and stir to evenly coat everything.
- Pour the honey oat mix onto the big baking tray and use a spatula to spread it out evenly.
- Bake for about 25-30 minutes, stirring halfway through. Remove the tray from the oven. The granola will harden while it cools. If you want clusters in your granola, once you have taken it out of the oven, do not stir the granola until it has completely cooled. I love this granola a little bit soft, so I take it out at 20-25 minutes. If you aren't sure if the granola is ready, try the clink test. Use a spoon and remove a few pieces of the granola into a glass cup. Wait a few minutes for it to cool then shake the cup around. If you can hear the granola "clinking," then it is done. If not, then leave it to bake another few minutes before testing again.
- Once the granola has cooled, transfer it into a big bowl. Break apart any large clumps if you would like. Mix in the banana chips and dried fruit.
- Store in an airtight container. It should last up to 2 weeks, but use your best judgment depending on how dry/crunchy you like your granola toasted.

20 MINUTE HONEY GRANOLA - EASY
This is a super easy granola recipe. It isn't overly sweet and is a real crowd-pleaser. It also makes your house smell fabulous for hours after you bake it. I normally add about 2 Tbsp. wheat germ and a tsp. brewers yeast to my dry ingredients - for nutritional value.

- Combine oats, nuts, salt, cinnamon and flax in a large bowl and set aside.

- Preheat oven to 350°F. Line a 9- by 13-inch baking pan with parchment paper.
- In a large bowl, stir together oats, crispy rice cereal, oat flour, brown sugar, baking soda, and salt. Measure honey, melted coconut oil, and vanilla into a measuring cup, then drizzle over oat mixture and stir until all ingredients are completely combined.
- Transfer oat mixture into prepared pan and press down very firmly into an even layer. Bake for 20 to 25 minutes or until light golden brown on top. - Preheat oven to 275 degrees F (135 degrees C). Line a large baking sheet with parchment paper and set aside.
- In a large bowl, mix oats, walnuts, almonds, pumpkin seeds, coconut, cinnamon, ginger, and a pinch of salt. Add honey, coconut oil, and vanilla. Stir until incorporated.
- Spread out granola on baking sheet. Bake for 45 minutes, stirring midway through. If you want clustery granola, do not stir.
- Let granola cool for 20 to 30 minutes before eating. The granola will crisp up after it is out of the oven. I didn't want big clusters this time, so I stirred the granola after 10 minutes of cooling to break up everything.
- Serve with yogurt or eat them by the handful! Store in an airtight container.

- Lightly spray an 8x8-inch pan or baking dish with cooking spray. Place a piece of parchment paper in the pan that will cover the bottom and come up two of the sides (so you have "handles" to easily lift them out of the pan later).
- In a large bowl, combine the oats and the crispy rice cereal.
- Place the butter, honey, and brown sugar in a small saucepan over medium heat. Stir until the butter is melted and the mixture comes to a boil.
- Immediately reduce the heat to low and simmer vigorously, stirring constantly, for two minutes.
- Turn off the heat, and stir in the vanilla extract.
- Pour the hot honey mixture over the oat mixture and stir well to combine. It's very important that all of the oat mixture is coated with the honey mixture. You don't want any dry spots as this will prevent your bars from holding together.
- Place the oat mixture into your prepared pan and press it down firmly with a spatula or the back of a spoon until it is very compact. You don't want it to be loose at all as this will prevent your bars from holding together.
- Cover with plastic wrap and place in the refrigerator for 1 hour or until cooled and firm. Remove from the pan and cut into 12 bars.
- To store, wrap each bar individually with plastic wrap and store in an air-tight container. Store at room temperature or in the refrigerator for up to one week.
