- Preheat oven to 350 degrees F.
- To make the cookie crust:.
- Cream the butter, honey, and brown sugar together in a mixing bowl.
- Add the egg white and combine.
- Mix in the applesauce and vanilla.
- Sift the flour, baking soda, salt, and cinnamon together.
- Add to the sugar mixture, stirring just to combine.
- Gently stir in the oats and apricots, just to combine.
- Spread the batter on a lightly greased 12-inch nonstick pizza pan.
- Bake until lightly browned, 30 to 35 minutes.
- Let cool in the pan for 5 minutes, then carefully transfer to a wire rack and let cool completely.
- To make the topping:.
- In a mixing bowl, whip the cream cheese with the apple juice concentrate and lemon zest until light and creamy.
- Spread the cream cheese mixture over the cookie, leaving a 1/2-inch border around the rim.
- Arrange the fruit over the top.
- Slice into wedges with a pizza cutter and serve.

- Preheat oven to 350 F.
- Grease a 10-inch spring-form cake pan or line with parchment paper and set aside.
- In a large bowl, combine oats, oat flour, cinnamon, vanilla and salt together. Add honey and coconut oil and mix (use your hands or a foruntil dough is combined and sticks together.
- Spread the mixture into prepared pan and press down firmly with a spatula or the bottom of a glass cup.
- Bake in preheated oven for 10 minutes. Remove from oven and allow to cool completely (place in the refrigerator or freezer to cool faster).
- Combine yogurt with honey, if using.
- With an offset spatula, spread yogurt evenly on top of of cooled crust.
- Decorate with your favorite fresh fruit. Enjoy immediately or place in the fridge for up to an hour to cool and set.

- In a blender or food processor, add oats. Blend into a fine flour; set aside.
- In a large bowl, add sugar and warm water. Sprinkle yeast on top and gently stir once. Let sit 5 minutes, until yeast is foamy. If there is no foam, the yeast is dead; start again with new yeast.
- Add olive oil and salt to the bowl; whisk to combine.
- Add oat flour and whole wheat flour to the bowl. Stir until a dough ball forms. On a lightly floured surface, knead the dough. Knead for 5-8 minutes, until the dough is smooth.
- In a large bowl coated with oil, place the dough. Cover with a damp warm towel. Let sit for 1 hour, until dough has risen.
- Punch dough. Divide into two even dough balls; knead each until smooth (alternatively, you can freeze one dough ball). On a lightly floured surface, roll out each dough ball into a 1/4-inch thick circle. Fold in the edges to form a raised crust.
- Preheat oven to 425°F. Lightly flour a baking pan. Transfer crust to pan. Bake for 18 minutes.
- Add desired toppings and bake accordingly.

I got this recipe from a co-worker. It's not so overly sweet like some fruit pizza's are that use the pre-made sugar cookie dough for the crust. Very good tasting. I usually make the crust the day before and keep it covered with saran wrap;

Steps:
- For crust, combine butter, brown sugar, flour and oatmeal.
- Press into ungreased cookie sheet.
- Bake at 375 for 15 minute.
- Cool.
- For filling, combine cream cheese, whipped topping, marshmallow creme and powdered sugar.
- Spread evenly over cooled crust.
- Add assorted sliced or cut up fruits of your choice. (I like to use strawberries, blueberries, kiwi and mandarin oranges.).
- Refrigerate until ready to serve.
