GRANDMA'S OATMEAL BREAD



Grandma's Oatmeal Bread image

My grandmother made this bread for special occasions, and it's remained a family favorite. The aroma of it always brings hungry appetites to the table. -Marcia Hostetter, Canton, New York

Yield 2 loaves (8 slices each).

Number Of Ingredients 10

1-1/2 cups boiling water
1 tablespoon butter
2 teaspoons salt
1/2 cup sugar
1 cup old-fashioned oats
2 packages (1/4 ounce each) active dry yeast
3/4 cup warm water (110° to 115°)
1/4 cup molasses
1/4 cup packed brown sugar
6 to 6-1/2 cups all-purpose flour, divided

Steps:

  • In a small bowl, combine the boiling water, butter, salt and sugar. Stir in oats; cool to lukewarm. In a large bowl, dissolve yeast in warm water. Stir in the molasses, brown sugar and 1 cup flour. Beat until smooth. Stir in oat mixture and enough remaining flour to make a stiff dough. , Turn out onto a floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1-1/2 hours. , Punch dough down. Turn onto a lightly floured surface; divide in half. Shape each portion into a ball. Cover and let rest for 10 minutes; Shape into loaves. Place in 2 greased 9x5-in. loaf pans. Cover and let rise until nearly doubled, about 1 hour. , Bake at 375° for 30-35 minutes (cover loosely with foil if top browns too quickly). Remove from pans to wire racks to cool.

1 cup rolled oats
½ cup molasses
⅓ cup vegetable oil
1 teaspoon salt
1 ½ cups boiling water
2 tablespoons active dry yeast
½ cup lukewarm water (100 degrees F/38 degrees C)
1 cup whole wheat flour
5 cups bread flour
2 eggs

Steps:

  • Combine oats, molasses, oil, salt and boiling water. Let cool to about 105 degrees F.
  • Dissolve the yeast in the warm water and let stand for 5 minutes or until creamy. Stir the yeast into oat mixture and mix well. Add whole wheat flour, 2 cups bread flour, and the eggs. Mix until well combined.
  • Stir in enough of the remaining flour to make a soft dough. Turn dough out to a floured counter and knead for about 10 minutes. Place the dough in a well-greased bowl and cover with greased plastic wrap. Let the dough rest in the refrigerator overnight.
  • Preheat oven to 375 degrees F (190 degrees C). Grease 3 regular loaf pans and 4 mini loaf pans.
  • Transfer the dough onto a floured surface and divide it into 4 pieces. Shape the dough into loaves and place them in the pans, seam-side down. Let rise until doubled, about 90 minutes. Bake in the preheated oven until the loaves are golden brown and sound hollow when tapped, about 30 minutes.

1/2 cup oatmeal
1/2 cup whole wheat flour
1 cup water (boiling)
1 tablespoon honey
Optional: 1 tablespoon molasses
1 tablespoon oil
1 teaspoon salt
1/4 cup water (warm, about 110 F)
2 teaspoons yeast
Pinch of sugar
1 1/2 to 2 cups all-purpose flour or bread flour
Optional: oatmeal for sprinkling on top

Steps:

  • Gather the ingredients.
  • Mix the oats and whole wheat flour in a bowl.
  • Add the boiling water and stir.
  • Stir in the honey, molasses, if using, oil, and salt and let cool, about 1/2 hour.
  • In a small bowl, mix the warm water with the yeast and a pinch of sugar, stirring to dissolve yeast. Place in a warm spot for about 10 minutes until foam forms on the top of the mixture.
  • Add the yeast to the oat mixture and mix well.
  • Start adding the all-purpose flour 1/2 cup at a time until a firm dough forms.
  • Turn out on a lightly floured board and knead 4 to 5 minutes, until the dough is elastic and somewhat smooth.
  • Form the dough into a ball and place in a clean, oiled bowl, turning once to coat.
  • Cover the bowl with plastic wrap and place in a warm spot (70 to 85 F) until doubled in bulk, about 1 hour.
  • Shape the bread into a sandwich loaf and place it in the pan.
  • Spray the top of the loaf with water and sprinkle oatmeal or other desired topping on the bread.
  • Cover with a towel and let rise until almost double. (If steaming your bread, skip to the steaming instructions.)
  • Meanwhile, heat your oven to 450 F for 1/2 hour; if using a baking stone, heat for 1 hour.
  • Slash the top of the loaf with a sharp razor blade.
  • Place the loaf pan in the oven and turn down to 400 F. Bake for 30 to 40 minutes, or until the bread's internal temperature reaches 190 F.
  • Let the bread cool for about 1 hour or so before serving.
  • Place an old roasting pan on the rack below the baking stone (if using) or the rack below where the loaf pan will go. After you put the bread in the oven, fill the roasting pan with 2 cups of boiling water.
  • Using a squirt bottle, spray water on the sides of the oven two or three times within the first 5 minutes of baking.
  • Turn the oven down to 400 F and bake for 30 minutes or more, until the internal temperature of the bread reaches 190 F.
  • Bread steams itself dry, so let the loaf cool for at least 2 hours before slicing or it may seem gummy inside.

A light, high volume bread machine bread. It works well when you use the Dough selection, and allow the bread to rise in a bread pan.

1 ¼ cups warm water (110 degrees F/45 degrees C)
2 tablespoons margarine
2 ½ cups bread flour
¼ cup oat bran
2 tablespoons honey
1 teaspoon salt
1 ½ teaspoons active dry yeast

Steps:

  • Place ingredients in the pan of the bread machine in the order suggested by the manufacturer. Select the Dough setting, and Start.
  • After the dough has risen once, remove it from the machine. Knead it a few times, and then shape into a loaf. Place in a greased 9 x 5 inch loaf pan. Allow to rise until doubled in bulk.
  • Bake at 350 degrees F (175 degrees C) for 35 to 40 minutes, or until done.
  • Alternatively, choose the Basic or White Bread setting, and Start.

1 cup rolled oats
½ cup honey
2 tablespoons butter
2 teaspoons salt
1 (.25 ounce) package active dry yeast
½ cup warm water (110 degrees F/45 degrees C)
4 cups bread flour
2 tablespoons honey, warmed slightly
2 tablespoons rolled oats

Steps:

  • In a large mixing bowl, combine boiling water, oats, 1/2 cup honey, butter and salt. Let stand for 1 hour.
  • In a small bowl, dissolve yeast in warm water. Let stand until creamy, about 10 minutes.
  • Pour the yeast mixture into the oat mixture. Add 2 cups of flour; mix well. Stir in the remaining flour, 1/2 cup at a time, beating well after each addition. When the dough has pulled together, turn it out onto a lightly floured surface and knead until smooth and elastic, about 20 minutes. Lightly oil a large bowl, place the dough in the bowl and turn to coat with oil. Cover with a damp cloth and let rise in a warm place until doubled in volume, about 1 hour.
  • Deflate the dough and turn it out onto a lightly floured surface. Divide the dough into two equal pieces and form into loaves. Place the loaves into two lightly greased 9x5 inch loaf pans. Cover the loaves with a damp cloth and let rise until doubled in volume, about 40 minutes.
  • Preheat an oven to 350 degrees F (175 degrees C).
  • Bake in the preheated oven for about 30 minutes or until the top is golden brown and the bottom of the loaf sounds hollow when tapped. Remove loaves from pans, brush tops of loaves with 2 tablespoons honey and sprinkle with oats.

2 cups milk, warm
1 tablespoon yeast
2 tablespoons brown sugar
1 egg
1 1/2 teaspoons salt
1 cup rolled oats
5 1/4 cups flour
1 teaspoon butter

Steps:

  • In a medium sized mixing bowl mix warm milk, yeast, brown sugar, egg, salt and rolled oats.
  • Mix in 3 cups flour until well blended. This is a sponge. Allow to sit for 30 minutes until bubbly.
  • Add the remainig flour, knead 5 minutes.
  • Allow to rise until doubled. Punch down.
  • Shape into a loaf and allow to rise again in a large loaf pan. Bake at 350° for 45-50 minutes.
  • The top will be a nice medium brown. Melt 1 tsp butter over the top. Remove from the pan and allow to cool on the counter.
  • Slicing piping hot bread will allow the moisture to escape the loaf through steam, so unless you plan to eat the whole thing right then, be patient and allow your loaf to cool before enjoying.

An old Warwickshire farmhouse recipe, this sweet bread contains no yeast, but uses baking powder as its raising agent. It develops a cake-like consistency when baked and is delicious served spread with butter.

3/4 pint milk
4 ounces rolled oats
12 ounces flour
1 teaspoon salt
4 teaspoons baking powder
6 ounces caster sugar
1 egg, beaten
1/2 ounce butter, melted

Steps:

  • Scald the milk by pouring into a saucepan and heating gently until bubbles begin to appear around the rim of the milk. Then pour over the oats in a bowl, stir lightly and leave to cool.
  • In another bowl, sieve together the flour, salt and baking powder, then stir in the sugar. Beat in the egg and melted butter, then stir in the oat mixture and combine well; it will be the consistency of very thick porridge.
  • Turn into a well buttered 2 lb loaf tin and leave to stand for 15 to 20 minutes.
  • Set the oven to 350ºF or mark 4.
  • When proved, bake for 1 1/2 hours. After 1/2 hour cover the top with a piece of very lightly buttered kitchen foil to prevent the top from browning too much.
  • Turn out on wire rack to cool. Serve thickly sliced and spread with plenty of butter.
