I love these cookies! Not too sweet. Perfect snack for someone who has to watch their sugar intake as no sugars are added other than the dried fruit.

1 cup oat bran
1 cup dried figs, chopped
½ cup chopped walnuts
½ cup chopped cashews
2 tablespoons almond flour
2 tablespoons coconut flour
1 teaspoon cinnamon
½ teaspoon ground allspice
2 eggs, beaten
¼ cup coconut oil, melted and cooled
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with parchment paper.
  • Combine oat bran, figs, walnuts, cashews, almond flour, coconut flour, cinnamon, and allspice in a bowl, making sure that figs do not clump together.
  • Beat eggs in a separate bowl until thoroughly blended. Mix in coconut oil and vanilla extract.
  • Pour egg mixture over oat bran mixture; mix until dough comes together.
  • Measure dough into 1 1/2-inch balls with an ice cream scoop and flatten with a spoon to about 1/4-inch diameter.
  • Bake in the preheated oven until edges are golden brown, about 15 minutes.

This recipe was on a box of "Hodgson Mill Oat Bran Cereal". What wonderful cookies! Chewy, filling, high fiber...and oat to boot. Lower cholesterol here we come. I also used 1/4 cup applesauce for 1/4 cup margarine to lower fat. They were super easy to mix and are sturdy enough to travel well (I mailed some to an avid fan!). Hope you enjoy.

1/2 cup white sugar
1/2 cup brown sugar
1 eggs or 2 egg whites
1/2 cup peanut butter
1/2 teaspoon vanilla
1 cup flour
1 1/2 cups oat bran (Hodgson Mill brand)
3/4 teaspoon baking powder
1/4 teaspoon baking soda

Steps:

  • Preheat oven to 350°F.
  • Mix melted margarine with sugars.
  • Add egg (or whites); mix well.
  • Stir in peanut butter and vanilla; beat until smooth.
  • Add remaining dry ingredients; mix well.
  • Drop by teaspoons onto ungreased cookie sheet.
  • Bake 10-12 minutes or until golden brown.

1 cup butter, softened
3/4 cup sugar
3/4 cup packed brown sugar
2 eggs
1 teaspoon vanilla extract
1-1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
2-1/2 cups quick-cooking oats
1 package (11-1/2 ounces) milk chocolate chips
2 cups chopped walnuts
1-1/2 cups All-Bran cereal

Steps:

  • In a large bowl, cream butter and sugars until light and fluffy. Add the eggs, one at a time, beating well after each addition. Beat in vanilla. Combine the flour, baking soda and salt; gradually add to creamed mixture and mix well. Stir in the remaining ingredients. , Drop by tablespoonfuls 2 in. apart onto ungreased baking sheets. Bake at 350° for 12-14 minutes or until lightly browned. Remove to wire racks to cool.

½ teaspoon baking powder
½ cup raisins

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Beat mashed bananas, egg whites, brown sugar, maple syrup, yogurt, and cinnamon.

1/4 cup butter
1/4 cup vegetable oil
1/2 cup brown sugar
2 large eggs
4 ounces unsweetened applesauce
1 teaspoon vanilla extract
1 cup old-fashioned oats
1 cup bran flakes cereal
1/2 cup whole wheat flour
1 cup all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt
1/3 cup raisins
1/3 cup toasted pumpkin seeds
1/3 cup toasted and sliced almonds
3 tablespoons unsweetened shredded coconut

Steps:

  • Preheat oven to 350 degrees F and line and baking sheet with parchment paper. Set aside.
  • In the bowl of a stand mixer, combine butter, oil, and brown sugar and mix on high for about a minute, until the sugar has dissolved. Add eggs, applesauce, and vanilla; mix for an additional minute until the batter is light and fluffy.
  • To the bowl add the oats, bran flakes, both flours, baking soda, cinnamon, and salt. Mix for 30 seconds until the flour is mixed in. The dough will be moist and sticky.
  • Fold into the dough the desired add-ins listed above. Scoop 3-4 tablespoons of dough and mound on the prepared baking sheet. Flatten dough slightly with the back of a spoon. Bake 10 to 12 minutes or until lightly golden brown.

2 cups old-fashioned oats
1 cup raisins

Steps:

  • Preheat oven to 375°F. Using electric mixer, beat butter and both sugars in large bowl until smooth and creamy. Add eggs and vanilla and beat until blended. Sift flour, baking soda and salt into small bowl; stir into butter mixture. Add chocolate chips, oats, raisins, and oat bran and stir until well blended.
  • Working in batches, drop batter by heaping tablespoonfuls onto ungreased baking sheets. Bake cookies until golden but still soft to touch, about 12 minutes. Cool cookies on baking sheets.
