This is a granola recipe fortified with wheat germ and flax seed that still tastes good.

4 cups rolled oats
1 cup wheat germ
½ cup flax seed meal
½ cup brown sugar
½ cup raw sunflower seeds
½ cup chopped pecans
½ cup sliced almonds
1 teaspoon ground cinnamon
1 ½ teaspoons salt
⅓ cup canola oil
¼ cup honey
1 teaspoon vanilla extract
½ cup water

Steps:

  • Preheat the oven to 300 degrees F (150 degrees C).
  • In a large bowl, mix together the oats, wheat germ, flax seed meal, brown sugar, sunflower seeds, pecans, almonds, cinnamon and salt. In a separate bowl, whisk together the oil, honey, vanilla and water. Pour the wet ingredients over the dry, and mix until evenly blended. Spread in a greased 9x13 or 11x7 inch baking pan.
  • Bake for 1 hour in the preheated oven, stirring every 20 minutes, or until toasted. Let cool completely before storing in an airtight container.

8 ounces old-fashioned rolled oats, about 2 cups
1 1/2 ounces raw sunflower seeds, about 1/2 cup
3 ounces sliced almonds, about 1 cup
1 1/2 ounces wheat germ, about 1/2 cup
6 ounces honey, about 1/2 cup
1 3/4 ounces dark brown sugar, about 1/4 cup packed
1-ounce unsalted butter, plus extra for pan
2 teaspoons vanilla extract
1/2 teaspoon kosher salt
6 1/2 ounces chopped dried fruit, any combination of apricots, cherries or blueberries

Steps:

  • Butter a 9 by 9-inch glass baking dish and set aside. Preheat the oven to 350 degrees F.
  • Spread the oats, sunflower seeds, almonds, and wheat germ onto a half-sheet pan. Place in the oven and toast for 15 minutes, stirring occasionally.
  • In the meantime, combine the honey, brown sugar, butter, extract and salt in a medium saucepan and place over medium heat. Cook until the brown sugar has completely dissolved.
  • Once the oat mixture is done, remove it from the oven and reduce the heat to 300 degrees F. Immediately add the oat mixture to the liquid mixture, add the dried fruit, and stir to combine. Turn mixture out into the prepared baking dish and press down, evenly distributing the mixture in the dish and place in the oven to bake for 25 minutes. Remove from the oven and allow to cool completely. Cut into squares and store in an airtight container for up to a week.

2 1/2 cups rolled whole oats
3/4 cup sesame seeds
3/4 cup wheat germ
1/2 cup nuts (any kind)
1/2 cup oil (your choice)
1/2 cup honey (your choice)
1/2 cup raisins
1/2 cup chopped dates
salt

Steps:

  • Mix oats, sesame seeds, wheat germ and nuts in a good sized bowl.
  • In another bowl or large measuring cup,measure oil, add honey, mix and pour over oat mixture.
  • Stir well to blend and coat granola.
  • Spread out evenly on cookie sheet or in baking pan.
  • Bake at 250 degrees for 50-55 minutes or until golden brown.
  • Stir every 15 during baking to prevent scorching.
  • Be careful not to over brown.
  • Stir in dry fruits while mixture is still warm.
  • Let cool and store in airtight container.

Steps:

  • Heat oven to 350ºF.
  • Microwave first 4 ingredients in large microwaveable bowl on HIGH 1 min. or until peanut butter is melted; mix well. Add oats and wheat germ; mix well. Spread onto bottom of 15x10x1-inch pan sprayed with cooking spray.
  • Bake 20 to 25 min. or until lightly browned, stirring after 10 min.
  • Stir in nuts and cranberries. Cool completely.
