Why settle for a plain base crust for your brownie squares. These chocolate,coconut and pecan based brownies with the creamy filling are so moist and tender, you will be eating more than one. The creamy topping is a great accompaniment to these brownie squares. Bet you can't just eat one!! Recipe from the neighbor's folder.

BASE:
3/4 c butter
2 oz semi-sweet chocolate squares (1 oz. each)
1 1/2 c graham cracker crumbs
1 c coconut
1/2 c toasted pecan pieces
FILLING:
16 oz 2-8 oz. pkgs. cream cheese,room temperature
1 c granulated sugar
2 tsp vanilla
TOPPING:
2/3 c milk chocolate chips
1/4 c butter

Steps:

  • 1. Butter a 9x13-inch glass pan. Base: In a small saucepan melt the butter and chocolate over medium heat stirring constantly. Remove from heat and add the cracker crumbs, coconut and pecans, mix well. Press mixture firmly into bottom of pan.
  • 2. Filling: In a large mixing bowl combine the cream cheese, sugar and vanilla. Beat with electric mixer until smooth. Spread over top of crust. Place in refrigerator to chill for 30 minutes.
  • 3. Topping: In a small saucepan combine the chocolate and butter. Cook over medium heat stirring constantly until chocolate is melted and mixture is smooth. Spread over top of chilled cream cheese mixture. Chill 60 minutes and cut into squares.

These are very healthy. When I make them I usually eat a large square for breakfast, and then eat a few squares every few hours as snacks. They actually taste like dessert, but they're healthy enough to eat for a meal. This is a revised recipe that I got from the back of Seven in the Morning cereal.

1 cup Grape-nuts cereal or 1 cup seven in the morning cereal
3/4 cup oats (I use old-fashioned, but quick oats would work)
1/2 cup whole wheat flour
1 1/2 tablespoons ground flax seeds
1 1/2 tablespoons wheat germ
1/3 cup pecans or 1/3 cup walnut pieces
1/4 cup mini chocolate chip (I use a little less)
1/2 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon cinnamon
6 ounces nonfat yogurt (plain or flavored)
1 large egg
1 egg white
1/2 cup applesauce (1/3 cup olive oil can be used instead)
2/3 cup sugar
1 teaspoon vanilla

Steps:

  • Combine all ingredients through the cinnamon (cereal, oats, whole wheat flour, flax seeds, wheat germ, nuts, chocolate chips, baking soda, salt, and cinnamon) in a large mixing bowl.
  • Add remaining ingredients and stir to combine.
  • Pour into lightly sprayed 13x9 dish.
  • Bake at 350 for 20-25 minutes.

1 cup water
1/2 cup butter or 1/2 cup margarine
1 1/2 ounces unsweetened chocolate
2 cups flour
2 cups sugar
2 eggs
1/2 cup sour cream
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup butter or 1/2 cup margarine
6 tablespoons milk
1 1/2 ounces unsweetened chocolate
4 1/2 cups powdered sugar, sifted
1 teaspoon vanilla
to taste pecan halves (optional)

Steps:

  • Preheat oven to 375 degrees.
  • Combine water, butter and chocolate in saucepan; bring to a boil.
  • Remove from heat. Mix together flour and sugar.
  • Stir in flour and sugar.
  • Add eggs, sour cream, baking soda and salt. Mix well.
  • Pour into greased 15 1/2 x 10 1/2 jelly roll pan.
  • Bake at 375 degrees for 20 to 25 minutes.
  • Frost while warm with milk chocolate frosting.
  • Cool.
  • Cut into squares.
  • For the Frosting: Combine butter, chocolate and milk in saucepan.
  • Boil 1 minute. Remove from heat. Add sugar.
  • Beat until smooth.
  • Stir in vanilla.
  • Spread on squares.
  • Garnish with pecan halves if desired.

Once you make and take these deceptively easy-but-so-impressive nut squares anywhere to share, they'll become your most requested specialty. Those who work in Betty's Kitchens know it's true.

1 cup packed brown sugar
1 cup butter or margarine, softened
1 1/2 teaspoons vanilla
1 egg
2 cups Gold Medal™ all-purpose flour
1 bag (12 ounces) semisweet chocolate chips (2 cups)
1/2 cup light corn syrup
2 tablespoons butter or margarine
1 can (12 ounces) salted mixed nuts

Steps:

  • Heat oven to 350°F. Mix brown sugar, 1 cup butter, the vanilla and egg in large bowl. Stir in flour. Spread evenly in bottom of ungreased rectangular pan, 13x9x2 inches. Bake 20 to 22 minutes or until light brown. Cool 20 minutes.
  • While crust is baking, heat chocolate chips, corn syrup and 2 tablespoons butter in 1 1/2-quart saucepan over low heat, stirring constantly, until chips are melted. Cool 20 minutes.
  • Spread chocolate mixture over crust. Sprinkle with nuts; gently press into chocolate. Refrigerate uncovered about 2 hours or until chocolate is firm. For 48 squares, cut into 8 rows by 6 rows. Store covered in refrigerator.

These remind me of those chocolate chunk candy bars with raisins, but with the added addition of rum and white chocolate.

1 1/2 cups flour
1 teaspoon baking powder
1/2 teaspoon ground cinnamon
1/2 teaspoon ground cloves
1/4 teaspoon ground cardamom
1/4 teaspoons salt
1/2 cup dark raisins
1/2 cup golden raisins, (sultanas)
1/2 cup dark rum, mix with 1 tablespoon cold water
3/4 cup candied cherries, halved
1 cup walnuts
1 cup almonds
1/2 cup semi sweet dark chocolate, chopped
1/2 cup white chocolate, chopped
3/4 cup butter
1 cup firmly packed light brown sugar
grated zest of one orange
three large eggs
3 tablespoons orange juice

Steps:

  • 1. preheat the oven to 325°. Butter an 11 x 7" baking pan. Line with parchment paper, letting the edges overhang.
  • 2. Mix the flour, baking powder, cinnamon, cloves, cardamom, and salt in a medium bowl. Bring the dark raisins, golden raisins, and rum mixture to a boil in a small pan. Remove from heat and set aside for 15 minutes to allow the raisins to soak up the liquid. Coarsely chop the walnuts and almonds. Stir the raisin mixture, cherries, walnuts, and almonds in a large bowl. Fold in 1 tablespoon of the dry ingredients. Melt the chocolate in a double boiler over barely simmering water.
  • 3. Beat the butter and Brown sugar in a large bowl with an electric mixer at high speed until creamy. Add the orange zest and melted chocolate. Add the eggs one at a time, beating until just blended after each addition. Use a large rubber spatula to fold in the remaining mixed dry ingredients, followed by the raisin mixture and orange juice. Spoon the batter into the prepared pan, smoothing the top. Bake until a toothpick inserted into the center comes out clean, 60 to 75 minutes. Let cool completely before cutting.
  • 4. Makes about 30 squares
