Steps:
- Preheat oven to 375 degrees F (190 degrees C). Line muffin pan with paper baking cups.
- Sift the flour, baking powder, and salt together and set aside.
- Cream the butter and sugar together until light and fluffy. Stir in the maple syrup and the eggs and beat until well blended. Add the flour mixture alternately with the milk and beat until well blended. Stir in the walnuts. Spoon the batter into the muffin tins filling each about 3/4 full.
- Bake at 375 degrees F (190 degrees C) for 20 minutes or until toothpick inserted in center comes out clean. Remove to wire rack to cool completely.

- Preheat oven to 400°. Line 12 standard muffin cups with paper liners.
- In a large mixing bowl, stir together flour, brown sugar, baking powder, cinnamon, and salt.
- In a separate bowl, lightly beat egg. Add maple syrup, milk, and melted butter, and stir to combine.
- Add liquid ingredients to dry ingredients. Stir just until combined. Stir in nuts.
- Divide dough evenly among muffin cups, using about 3 tablespoons of batter per cup (filling about 2/3 full). Sprinkle each muffin with cinnamon sugar.
- Bake 20 to 24 minutes, or until a pick inserted into the center of a muffin comes out clean.
- Cool in pans for 10 minutes before serving.

- Preheat oven to 350°F.
- In a large mixing bowl, combine the dry ingredients; flour, rolled oats, baking soda, salt, cinnamon and nutmeg. Stir with a wooden spoon or spatula to ensure everything is combined. (If you are using brown sugar instead of maple syrup add it here.)
- In a separate mixing bowl, combine all of the wet ingredients. Add banana and mash with a fork, crack eggs into the bowl and whisk together, add melted butter or oil, maple syrup (omit if using brown sugar), vanilla extract and milk and stir to combine.
- Add wet ingredients to the dry ingredients, and using a wooden spoon or spatula and stir well to combine. Add chopped walnuts and stir gently into the mixture.
- Grease muffin tins with extra olive oil or butter, or add muffin liners, and divide the batter evenly between the 12 muffin cups. (Feel free to add an additional sprinkle of brown sugar and/or chopped walnuts on top.)
- Transfer muffin tray to the oven and bake for 22-25 minutes or until a toothpick comes out clean.
- Once cooked, place the muffin tin on a cooling rack to cool and run a butter knife along the outer edge of the muffins to loosen them from the pan. Allow muffins to cool slightly, about 5 minutes, and then remove from muffin tin to cool further.
- These healthy banana nut muffins can be stored at room temperature for 2 days, in the refrigerator for up to 5 days, or frozen for up to 3 months.

- PREP: Place a rack in the center of the oven and preheat the oven to 425ºF. Spray a muffin pan with nonstick cooking spray or line it with paper liners.
- MAKE: In a large bowl, mash the bananas. Then, add the oil, maple syrup, brown sugar, eggs, milk, and vanilla and continue to mix until everything is combined. Add the salt, cinnamon, nutmeg, baking soda, and baking powder. Then add in the flour and fold using a rubber spatula until *just combined.* Add the walnuts (or other add-ins) and fold.
- BAKE: Divide the batter out into the prepared muffin cups, filling each muffin cup almost all the way full, right below the rim. Sprinkle with rolled oats on top and with additional chopped walnuts, if desired. Bake for 4 minutes then drop the oven temperature to 350ºF and continue to bake the muffins for 18-22 minutes or until a toothpick inserted in the middle comes out with just a few crumbs.
