ITALIAN MEATBALL BURGER

For lighter grilling try this spicy burger which freezes well. This came from Cooking Light. I always have leftover Italian turkey sausage after making a batch of these for my freezer, so I use the leftover sausage to make Recipe#244750.

8 ounces Italian turkey sausage
1 teaspoon oregano
1 teaspoon basil
1/2 teaspoon salt
1/2 teaspoon fennel seed, crushed
1 lb ground sirloin
cooking spray
6 slices fresh mozzarella cheese
2 ounces italian bread rolls, split
3/4 cup fat-free tomato sauce

Steps:

  • Prepare grill.
  • Remove casings from sausage. Combine sausage, oregano, basil, salt, fennel seeds, and ground sirloin. Divide beef mixture into 6 equal portions, shaping each into a 1/2 inch patty.
  • Place patties on a grill rack coated with cooking spray; grill 5 minutes. Turn patties over; grill 2 minutes. Divide fresh mozzarella cheese evenly over patties, and grill an additional 5 minutes or until a thermometer registers 165 degrees. Remove from grill; let stand 5 minutes.
  • Place rolls, cut side down on grill rack; grill 1 minute or until toasted. Place 1 patty on bottom half, top with 2 tablespoons of sauce, and top with other half of roll.
  • Raw burgers freeze well.

Vegetable oil, for oiling the grill grates
1 1/2 pounds ground beef sirloin
1 teaspoon chopped fresh oregano
1 garlic clove, grated
Kosher salt and freshly ground black pepper
4 slices provolone cheese
1/4 cup mayonnaise
1 teaspoon balsamic vinegar
4 seeded hamburger buns, split
Fresh basil leaves, for topping
Giardiniera, for serving

Steps:

  • Prepare an outdoor grill for medium-high heat.
  • Gently mix the beef, oregano, garlic and 1/2 teaspoon each salt and pepper in a medium bowl until just combined.
  • Shape the meat into 4 6-ounce patties, about 5-inches in diameter. Make a slight indentation in the center of each patty and lightly sprinkle the outside of the patties with salt and pepper. Lightly oil the grill grates. Grill to desired doneness, about 4 minutes per side for medium, adding a slice of cheese to each burger during the last minute of cooking.
  • Mix the mayonnaise and balsamic vinegar together in a small bowl. Quickly toast the buns on the grill for about 1 minute and then spread with some of the mayonnaise mixture. Top with a burger and then some fresh basil leaves. Serve with giardiniera on the side.

1 egg
1/4 cup parmesan cheese (the shaker kind)
1/2 teaspoon italian seasoning
1 -2 garlic clove, minced
1/2 teaspoon onion powder
1/4 teaspoon seasoning salt (optional)
1/4 teaspoon pepper
1/2 cup mozzarella cheese, finely grated

Steps:

  • Combine all ingredients until well blended.
  • Form into patties.
  • Grill or cook until juices no longer pink inside.
  • When I have these on a bun, I use pasta or pizza sauce as a condiment instead of the usual burger toppings.

Steps:

  • In a large bowl, combine 1/2 cup cheese and seasonings. Add beef; mix lightly but thoroughly. Shape into four 1/2-in.-thick patties., Grill burgers, covered, over medium heat or broil 4 in. from heat until a thermometer reads 160°, 4-5 minutes on each side. Sprinkle with remaining cheese; grill, covered, until cheese is melted, 1-2 minutes longer. Serve with marinara sauce.

1 lb lean ground beef
3/4 lb hot italian ground sausage
1/4 cup panko breadcrumbs
1/4 cup red onion, finely chopped
2 garlic cloves, pressed
1 teaspoon italian seasoning
1/4 teaspoon sea salt
1/4 teaspoon black pepper (to taste)
8 slices provolone cheese
4 hamburger buns
1 roma tomato, washed, seeded and finely diced
1 pepperoncini pepper, finely diced
1 tablespoon basil (chiffonade)
1 tablespoon extra virgin olive oil
1/2 teaspoon balsamic vinegar
1/4 teaspoon sea salt (to taste)
1/4 teaspoon black pepper (to taste)

Steps:

  • In a large mixing bowl, combine ground beef, hot Italian ground sausage, panko, onions, garlic, Italian seasoning, sea salt and freshly ground black pepper; mix well. Divide meat into 4 equal portions and form patties. Place them in a plate, cover with plastic wrap and chill for 2 hours.
  • Later on, take meat out and let it rest on the counter while making the slaw. In a small bowl, combine tomato, pepperoncini, basil, oil, vinegar, sea salt and freshly ground black pepper; stir well and set aside.
  • Fire up the BBQ and place patties when the grill reaches high temperature. Close the lid and cook about 5 to 6 minutes per side, flipping once. About 2 to 3 minutes before cooking is done, place hamburger buns on the top grill as well as a couple slices of cheese per patty.
  • Just before serving, scoop a good amount of tomato slaw on top of the meat. Makes 4 burgers.

1 onion (med-size & chopped)
1 large garlic clove (I use 2)
2 ounces breadcrumbs
2 ounces romano cheese (grated, may sub Parmesan)
4 ounces pine nuts
8 tablespoons fresh parsley (chopped)
2 eggs
1 1/2 teaspoons salt
1 teaspoon italian seasoning (I use McCormick Classic Herbs)

Steps:

  • Preheat the grill.
  • Combine all ingredients & mix well.
  • Shape into 4-6 thick rounds to suit the # you desire or your bun size.
  • Brush the grilling rack w/oil & grill approx 3-in from the heat source for about 5 min on ea side or till burgers are well-browned & crispy.
  • Serve w/burger condiments of choice, but how could mozzarella cheese & tomato be wrong? NOT!
