This recipe by Rob Rainford is super easy - it is made with canned crab meat and uses products found in most pantries. Please note that the refrigeration time is included in the cooking time.

1 (6 ounce) can crabmeat, drained
1 1/2 cups breadcrumbs
1 cup green onion, finely chopped
1 teaspoon jalapeno pepper, finely chopped
2 1/2 tablespoons mayonnaise
1/2 teaspoon celery salt
1/2 teaspoon ground black pepper
1 lemon, juice and zest of, grated
1 egg
1 1/2 tablespoons Dijon mustard

Steps:

  • Place the crab meat in a bowl and add 1 cup of the breadcrumbs; reserve the remaining 1/2 cup.
  • Add the remaining ingredients and mix well until all of the ingredients are fully combined.
  • Form the mixture into 4 patties.
  • Coat each of the patties in the reserved breadcrumbs.
  • Cover and refrigerate for 30 minutes before grilling.
  • Preheat the grill to 375 degrees F.
  • Oil the grill well.
  • Grill the burgers for 4 minutes per side until golden brown.
  • Serve topped with Dijonnaise, fresh sprouts and avocado slices.

1 slice bread, dried and crusts removed
1/8 cup milk
1/2 tablespoon mayonnaise
1/2 tablespoon Worcestershire sauce
1/2 tablespoon parsley flakes
1/2 tablespoon baking powder
1/2 teaspoon Old Bay Seasoning
1/8 teaspoon salt
1/2 tablespoon lemon juice
1 egg, beaten
1/2 lb fresh crabmeat
1 tablespoon butter
1 tablespoon oil (vegetable)
2 ounces cheddar cheese, 2 x 0 . 5 slices
6 tablespoons onions, caramelized
3 1/2 ounces shrimp, boiled
2 slices tomatoes, fresh sliced
4 pieces frisee (eg oakleaf etc) or 4 pieces other curly leaf lettuce (eg oakleaf etc)
1/4 cup mayonnaise
1/8 cup sweet pickle relish, drained
2/3 teaspoon instant minced onion
2/3 teaspoon lemon juice
1/4 tablespoon sugar
1/2 teaspoon celery seed
1/2 teaspoon garlic powder
4 slices white bread, thick slices toasted (Wonder hot dog buns)

Steps:

  • Carefully run fingers through crab meat, being sure not to break lumps, picking out excess shell.
  • Break up bread pieces, and add milk and toss in bowl.
  • Beat eggs, in a mixing bowl.
  • Add mayonnaise, Worcestershire sauce, lemon juice, baking powder, and seasonings to this mix, throughly stir this.
  • Add crab meat carefully to bowl of mixed ingredients, and with spatula or hands, mix just until moistened.
  • Form a burger gently, and let sit for at least 30 minutes in a refrigerator.
  • Melt butter and oil in skillet, just until melted. Carefully add crab burger to skillet, and brown on each side, and just heat through.
  • Serve sitting a top a Wonder hot dog roll, or two pieces of white bread, coupled with side additions. Feel free to add, caramelized onion, a couple of steamed shrimp, tomato, cheddar cheese, (Vermont), Boston lettuce and tartar sauce.

***Update: This is the Crab Cake recipe used for building the Nutty for New England Naughty but Nice Crab Burger for one of the challenges in the Spring 07 Zaar Tour world! I have lived most of my life near the Chesapeake Bay and spent many summers in Maryland as a child. This is the original recipe that was on the back of the Old Bay can. This version contains baking powder which helps make the crab cakes light and fluffy. We have always added a little lemon juice and browned them in butter which I feel really brings out the flavor and absolutely makes these. Try refrigerating the shaped patties 30 minutes to help keep them together when cooking, This is a Summertime favorite of ours served with Corn on the Cob and Coleslaw!

1/4 cup celery, diced
1 jersey tomatoes, sliced
4 tablespoons onions, chopped
1 teaspoon Worcestershire sauce

1 cup mayonnaise
1/2 cup grated cheddar cheese
4 potato dinner rolls

Steps:

  • Mix together all ingredients.
  • Place open buttered potato buns on cookie sheet and broil until lightly brown (about 1 minute).
  • Spread crab meat mixture on each half of bun.
  • Top each bun with more grated cheese.
  • Return to broiler and broil until cheese melts.

Food lovers on America's coasts have long known that crab cakes make wonderful sandwiches. Here, tender lumps of sweet crab are seasoned (in the manner of traditional Louisiana deviled crabs) and lightly bound with egg and bread crumbs, then panfried until the cakes have a golden crust. A thin layer of tangy tartar sauce and crisp lettuce is all the accompaniment they need.

1 pound lump crabmeat, picked over
1/4 cup mayonnaise
3 scallions, thinly sliced
1 large egg, lightly beaten
1 teaspoon Worcestershire sauce
3/4 teaspoon dry mustard
1/2 teaspoon cayenne
1 3/4 cups fine dry bread crumbs, divided
3/4 cup vegetable oil
4 kaiser rolls or hamburger buns, split and toasted
Accompaniments: tartar sauce; iceberg lettuce

Steps:

  • Stir together crabmeat, mayonnaise, scallions, egg, Worcestershire sauce, mustard, cayenne, 1/4 teaspoon salt, and 3/4 cup bread crumbs in a bowl until just combined. Form into 4 (1-inch-thick) patties (3 1/2 inches in diameter; patties will be soft but will firm up when fried). Spread remaining cup bread crumbs on a plate, then dredge patties in crumbs, knocking off excess, and transfer to a platter.
  • Heat oil in a 12-inch heavy skillet over medium heat until it shimmers, then fry patties, turning over once, until golden, 5 to 6 minutes total. Transfer to paper towels to drain.
  • Assemble burgers with buns and accompaniments.

1 1/4 lbs ground turkey breast (Mrs G 'cause she's got great ones) or 1 1/2 lbs lean ground turkey (Mrs G 'cause she's got great ones)
1/2 teaspoon kosher salt, plus more to taste
1/2-3/4 teaspoon fresh ground black pepper, plus more to taste
3 tablespoons white wine, mine was pinot grigio (NCMysteryshopper 'cause she as cool as a tall glass of)
1 tablespoon Dijon mustard (Laury 'cause she's up to snuff)
1/4 cup grated vidalia onion (Saturn 'cause she hails from Canada's onion capital and adds a little kick)
1 -2 garlic clove, minced (PanNan 'cause she is well seasoned and works with everything)
1 1/4 teaspoons thyme (Susie D 'cause she could use lots more)
1/2 teaspoon dried sage (Nimz 'cause she is wise and has a gentle soft side)
1/3 cup breadcrumbs (me 'cause I keep things together)
3 ounces monterey jack cheese (if using jack or mozzarella, grate or chop) or 3 ounces fresh mozzarella cheese (if using jack or mozzarella, grate or chop)
2 tablespoons white wine (like NCMS it's everywhere)
1 tablespoon olive oil (Leslie 'cause she's smooth and keeps all the pieces working)
1 large vidalia onion, halved and cut into thin half rings
2 cups sliced cremini mushrooms (kzbhansen 'cause she tops off our team so nicely)
1/3-1/2 cup white wine
2 teaspoons butter
4 roasted sweet red peppers, halves jarred (mama's kitchen 'cause she is sweet and fiery)
8 slices sourdough bread, cut in to thickish slices about 3/8 inch (Elmotoo 'cause she is buntabulous and it just wouldn't be the same without her)

Steps:

  • Place the ground turkey meat in a large bowl. Add salt, pepper, white wine, Dijon mustard, garlic, grated onions, thyme, and sage and mix together well. Gently add breadcrumbs and mix until combined. (Overworking the meat at this stage will toughen the burger.).
  • Divide the burger mixture into 8 equal sized amounts. Pat each portion into a 5" round patty that is a little thicker in the center. Place a mound with 1/4 of the cheese at the center of 4 of the patties. Carefully, place the other 4 patties on top and seal the edges well and pat smooth. If your burgers have become quite soft from handling place back in the fridge for 10 minutes.
  • To prepare the sauce, heat olive oil in a medium skillet over medium heat. Once it become hot, add the vidalia onion and sauté for 5-7 minutes until the onions are soft and have begun to take on a little color. Season with a small amount of salt and pepper to taste.
  • Add the mushrooms and wine and stir well. Cook for 3 minutes continuing to stir. To enrich the sauce, add the butter and cook until just melted and incorporated into the wine. Cover and turn off the heat until ready to serve.
  • While the onions are cooking, heat a large skillet until piping hot but not smoking. Add the burgers to the skillet and cook for 2 minutes to create a good seer. Turn burgers and continue cooking another 2 minutes. Add the final 2 tablespoons of white wine to the pan and cook an additional minute or two.
  • Toast 8 slices of sourdough bread (or 4 split sourdough rolls) in the toaster or broiler. Top each with sweet roasted pepper half. Place burger on top of the red pepper. Top the burger with 1/4 of the onion-mushroom wine sauce and a second piece of sourdough (or roll tops).
  • Serve with a glass of wine and extra napkins.
