DRUNKEN NUTS (SALLYE) image

Sweet, sassy and deliciously nutty!

Number Of Ingredients 5

2 lb pecan or other kind of nut halves
1/2 c granulated sugar
2 Tbsp butter
1/2 c whiskey
1 tsp vanilla

Steps:

  • 1. Preheat oven to 350º
  • 2. Prepare cookie sheet lined with parchment paper
  • 3. In a cast iron skillet (or heavy saucepan), melt butter over medium high heat. Add sugar and stir costantly until sugar dissolves and mixture is well blended. Be careful not to burn.
  • 4. Remove from heat, add vanilla and whiskey.
  • 5. Add pecans and coat thoroughly, then turn out onto lined cookie sheet.
  • 6. Cook for 10-15 minutes until toasted. (Your nose will tell you when they're done).

For those who like cheese and wine,so does this fish! Try brandy or white vermouth instead of the wine,for more crunch substitute flaked almonds for the pine nuts.We enjoy this with a nice glass of Sauvignon Blanc.

4 (7 ounce) cod fish fillets
1/2 lemon, juice of
2 tablespoons flour
2 ounces butter
2 medium bell peppers, deseeded and cut in rings (red or yellow)
2 ounces lean bacon, finely chopped
8 ounces mild brie cheese, cut in small pieces
1 1/3 cups white wine
2 tablespoons pine nuts
2 ounces grated parmesan cheese

Steps:

  • Preheat oven to 400 degrees F.
  • Wash the cod,pat dry with paper kitchen towel.
  • Sprinkle with the lemon juice,salt and flour them.
  • Melt the butter in a frying pan,fry the fish a few minutes on both sides until golden.
  • Place them in an ovenproof dish,top them with the peppers,bacon and the brie.
  • Pour over the wine,sprinkle with the pine nuts and then the with the parmesan cheese.
  • Bake for 15 to 20 minutes in the oven.

This Asian-inspired dish goes well over rice or noodles. I recommend Soy Vay Veri Veri Teriyaki Sauce, which is not as salty as some other brands.

1 teaspoon smoked paprika
1/2 teaspoon ground ginger
1/2 teaspoon celery salt
2 lbs skinless chicken thighs (bone-in)
2 tablespoons vegetable oil
1 cup dry sherry
1 tablespoon black bean garlic sauce (asian)
1 tablespoon soy sauce
1/2 cup teriyaki sauce (Soy Vay Veri Veri Teriyaki brand recommended)
1 tablespoon roasted garlic, chopped
2 teaspoons spicy brown mustard
1/4 teaspoon chili-garlic sauce (asian)
1 medium yellow onion, chopped
1 medium red bell pepper, chopped
4 ounces white button mushrooms, sliced
1/2 cup walnuts, chopped and divided
2 tablespoons water
1 tablespoon cornstarch

Steps:

  • Combine paprika, celery salt and ginger and rub over chicken.
  • Heat oil in a large skillet over medium-high heat.
  • Brown chicken lightly. Remove from pan and set aside.
  • Add sherry, black bean garlic sauce, soy sauce, garlic, mustard and chili garlic sauce to pan.
  • Mix well and bring to a boil over medium high heat, stirring to blend.
  • Reduce heat and add onion, pepper, mushrooms and 1/4 cup walnuts.
  • Return chicken to pan.
  • Cover and cook on low for 1 hour, or until chicken is tender and vegetables are cooked.
  • Combine water and cornstarch.
  • Stir cornstarch mixture into pan.
  • Increase heat to high and bring to a boil.
  • Reduce heat to medium and cook, stirring, until sauce is shiny and slightly thickened.
  • Stir in remaining walnuts and serve.

A great way to have fish without feeling guilty. It tastes good with tartar sauce on the side. I like tilapia, orange roughy or catfish.

4 (4 ounce) fish fillets (your choice)
3/4 cup seasoned dry bread crumb
1/3 cup finely chopped nuts, pecan is my choice
1 1/2 teaspoons lemons, zest of
1/2 cup low-fat buttermilk

Steps:

  • Preheat the oven to 400 degrees.
  • Spray baking sheet with nonstick cooking spray.
  • Mix breadcrumbs, chopped nuts and lemon zest together, and place on a large plate.
  • Dip each fish fillet in buttermilk, then into the breadcrumb/nut mix.
  • Press gently to coat.
  • Place each fillet on baking sheet, bake 10 minutes or until fish flakes easily with a fork.
