For a change-of-pace snack with a boost of nutrition from carrots, try this spread. "Our favorite way to use it is on vegetable sandwiches," says Rebecca Walz of Madison, South Dakota.

1 package (8 ounces) cream cheese, softened
1 cup sour cream
2 small carrots, finely shredded
1/4 cup dried minced onion
1/2 teaspoon salt
Breadsticks, miniature bagels or assorted crackers

Steps:

  • In a large bowl, beat the cream cheese and sour cream until smooth. Stir in carrots, onion and salt. Serve with breadsticks, bagels or crackers.

Steamed carrots are pureed with cumin, ginger, cinnamon, cayenne, and tahini to create a robustly flavored appetizer.

6 medium carrots, thinly sliced
1/2 small garlic clove, chopped
1/4 teaspoon ground cumin
1/4 teaspoon finely grated peeled fresh ginger
1/8 teaspoon ground cinnamon
Pinch of cayenne pepper
1 tablespoon tahini
2 teaspoons fresh lemon juice
Coarse salt and ground pepper

Steps:

  • Set a steamer basket in a saucepan with 2 inches simmering water. Add carrots. Cover and steam until tender, about 12 minutes. Transfer to a food processor, along with garlic, cumin, ginger, cinnamon, cayenne pepper, tahini, and lemon juice. Season with salt and pepper. Process until smooth, about 1 minute, adding up to 2 tablespoons water, if necessary.

2/3 cup pecans, ground
1 garlic clove, minced
4 stuffed green olives, minced
mayonnaise

Steps:

  • In a medium bowl combine carrots, pecans, garlic and green olives with enough mayo to moisten and hold mixture together.
  • Spread four slices of bread with a light coating of mayo, and spoon carrot mixture on bread and top with another slice of bread. Cut sandwiches in half and serve.

WET INGREDIENTS:
3/4 cup almond butter
2 tablespoons grapeseed oil
4 large eggs
1 tablespoon pure vanilla extract
DRY INGREDIENTS:
1/4 cup almond flour
1/4 cup tapioca flour
1/4 cup stevia sweetener
1 tablespoon cinnamon
1 teaspoon nutmeg
1/2 teaspoon sea salt
1/2 teaspoon baking powder
1/2 teaspoon soda
FOLD IN INGREDIENTS:
1 cup chopped pecans
1/2 cup chopped raisins
1 full cup of grated carrots

Steps:

  • 1. Preheat the oven to 350 degrees. Grease a 9X5 loaf pan with grapeseed oil and dust with almond flour. Beat all the WET INGREDIENTS in small bowl with a mixer until smooth.
  • 2. Mix all the DRY INGREDIENTS in a medium bowl with a spoon until combined. Then take the spoon and add the wet ingredients to the dry ingredients and stir to mix until well combined.
  • 3. Using a spoon, add the FOLD IN ingredients to the mixture just until moistened. Pour the batter into the prepared pan. Bake in a pre-heated oven at 350 degrees for 45 minutes, then let set for an hour in the pan to cool. Test at 40 minutes, sides will pull slightly away from pan, and toothpick will be clean. Don't overcook. Here is how it looks! Enjoy! Cooks's Tip: Try making a chicken salad sandwich on this delicious and healthy bread. You can also eat it with cream cheese or toast it and spread it with butter or peanut butter. Got a sweet tooth? Turn this into a great dessert bread by making a "frosting" by mixing 1/4 cup almond butter, 1/4 cream cheese, and 2 tablespoons of sour cream., mix and spread on slices.

3 large carrots, peeled, finely shredded
2/3 cup walnuts, finely ground (or pecans, or cashews)
8 green olives, minced
1 tablespoon pimiento, chopped (or roasted red pepper)
1 garlic clove, minced
1/4-1/2 cup mayonnaise (regular or vegan)
1 tablespoon fresh basil, chopped (or 1/2 tsp. dried)
8 slices whole grain bread

Steps:

  • Mix carrots, walnuts (or pecans), olives, pimientos, garlic in a bowl.
  • Add enough mayonnaise to moisten them well and hold the ingredients together.
  • Fold in basil.
  • Spread each slice of bread with a little mayonnaise and place the carrot/walnut mixture on 4 of the slices.
  • Top with remaining bread.
  • Cut in half and enjoy!

Mark and I planned to be wed on a mountain on a friend's ranch, but a snowstorm sent us to our alternate plan- a local country museum. Our friend Sandy Howe made a sheet cake using this recipe. Chock-full of nuts, pineapple and coconut, it's our favorite.

2 cups sugar
1-1/2 cups canola oil
1 teaspoon vanilla extract
2 cups all-purpose flour
2 teaspoons ground cinnamon
1 teaspoon baking soda
1/2 teaspoon salt
3 eggs, beaten
2 cups finely shredded carrots
1 cup sweetened shredded coconut
1 can (8 ounces) crushed pineapple, drained
1 cup chopped pecans, divided
Cream Cheese Frosting

Steps:

  • In a bowl, beat sugar, oil and vanilla. Combine the flour, cinnamon, baking soda and salt; add to the sugar mixture alternately with eggs. Mix well. Stir in carrots, coconut, pineapple and 1/2 cup pecans. Pour into a greased and floured 13x9-in. baking pan. Bake at 350° for 40-45 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes; remove from pan to a wire rack to cool completely. Frost with Cream Cheese Frosting. Garnish with remaining nuts. Store in the refrigerator.

  • 1. In large bowl, combine cream cheese, oj, brown sugar and sour cream. Beat until smooth. Stir in the rest of the ingredients until blended. Serve in a bowl with cinnamon graham crackers on the side.
