2 box butter cake mix
8 oz cream cheese
1/2 stick butter
2 c peanut butter
2 c confectioners' sugar
1 tsp vanilla extract
2 3/4 c sugar
water
1/2 c egg whites
1 1/2 c butter, unsalted
1/2 c cake shortening
1 pinch salt
1 1/2 c dark chocolate
1/4 c cocoa powder

Steps:

  • 1. Preheat oven to 350f. Grease and flour tow 10inch pans. Bake cake according to directions and pour into prepared pans.
  • 2. Bake cake until spring bake when touched about 40 minutes. Allow cake to cool completely in pan. Cut cakes vertically so that you have four bars.
  • 3. For Peanut Butter Filling,cream the butter, cream cheese, and peanut butter together until smooth. Gradually add confectioners' sugar 1 cup at a time until combined and sweet to taste. Add vanilla.
  • 4. Chocolate Butter Cream frosting In saucepan combine sugar with enough water to moisten. Bring to a boil, washing down sides as you go with a brush. Bring to 240F.
  • 5. As sugar is cooking begin whipping the egg whites. Increase speed as eggs gets closer to a soft peak. Mix the butter and shortening, salt together in a seperate bowl. When sugar reaches tempt pour into whipped egg whites.
  • 6. Continue to whip until mixing bowl is warm to touch. Quickly add butter mixture. Whip for 5 mintues until buttercream comes together and is smooth. Add melted chocolate and cocoa. Whip until combined. Store brand frosting may be used.

4 cups crushed pecan shortbread cookies (about 33 cookies)
1/4 cup butter, melted
6 cups butter pecan ice cream, softened
1 carton (8 ounces) frozen whipped topping, thawed
3/4 cup slivered almonds, toasted
3/4 cup milk chocolate English toffee bits
1/4 cup caramel sundae syrup

Steps:

  • Combine cookie crumbs and butter. Press 2 cups onto bottom of a greased 9-in. springform pan. Spoon half of ice cream into prepared pan. Freeze for 20 minutes. , Repeat layers with remaining cookie crumbs and ice cream. Spread with whipped topping. Sprinkle with almonds and toffee bits. Freeze, covered, overnight or until firm. May be frozen up to 2 months., To use frozen cake: Remove from freezer 10 minutes before serving. Drizzle with syrup.

2 cups all-purpose flour
1 ½ cups packed brown sugar
1 cup graham cracker crumbs
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
½ teaspoon ground cinnamon
1 cup butter, softened
1 cup orange juice
1 tablespoon orange zest
3 eggs
1 cup chopped walnuts
1 cup confectioners' sugar
1 tablespoon water
½ cup packed brown sugar
¼ teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour one 10 inch bundt pan.
  • Measure the flour, 1 1/2 cups packed brown sugar, graham cracker crumbs, baking powder, baking soda, salt, ground cinnamon, softened butter or margarine, orange juice and the eggs. Beat until smooth about 2 to 3 minutes. Stir in the walnuts and pour the batter into the prepared pan.
  • Bake at 350 degrees F (for 45 to 50 minutes) or until a toothpick inserted in the center comes out clean. Let cake stand in pan for 20 minutes. Invert cake onto a serving plate and ice with Brown Sugar Glaze.
  • To Make Brown Sugar Glaze: Combine the confectioners' sugar, water, 1/2 cup brown sugar and the vanilla. Add more sugar or water to make a proper consistency for a barely pourable glaze.

1 box vanilla cake mix
4 eggs
1 c water
1/4 c vegetable oil
1/2 c sugar
1 1/2 tsp vanilla extract
3/4 c mashed bananas
1/4 c toffee bits
1/2 c cashews, chopped
2 Tbsp baking powder
2 Tbsp all purpose flour
1 box [3.5oz] instant banana pudding mix
GLAZE
2 c powdered sugar
2-3 Tbsp water
2 Tbsp butter, melted
1/4 c walnuts, chopped

Steps:

  • 1. Preheat oven to 350 degrees. Grease and flour 2 mini bundt pans [set of 6]
  • 2. In a large bowl, whisk together cake mix and pudding mix, 2 tbsp of flour, 2 tbsp of baking powder, 1/2 c of sugar. Add slightly beaten eggs to dry mixture, then add water, oil, vanilla; Blend well.
  • 3. Add mashed bananas, chopped nuts, and toffee bits. Beat 4-5 minutes on medium speed. Scrape down sides.
  • 4. Pour batter in prepared pan, fill 3/4 high in each section. Bake 17-20 minutes for each pan or until cakes lightly brown. Test cakes with toothpick for doneness, if necessary.
  • 5. GLAZE: In a small bowl, melt butter. Add powdered sugar and stir. Gradually add spoons of water to make desired consistency for glaze. Add nuts, and whisk until glaze is smooth and reaches a drizzle consistency. Add water if necessary. Once cakes cool, drizzle icing over cake in a circular motion until icing and nuts are eveningly distributed on each mini bundt.

My nephew loves Nutella and I have been coming up with different recipes to satisfy his love of Nutella. This is my latest creation that I have come up with. Hope everyone enjoys!!

PEANUT BUTTER CAKE
2 1/4 c all purpose flour
1 1/2 c sugar
3 1/2 tsp baking powder
1 tsp salt
1 1/4 c vanilla milk
vegetable oil
1 stick unsalted butter, softened
3/4 c peanut butter, smooth
1 Tbsp pure vanilla extract
3 large eggs
NUTELLA MOUSSE
3/4 c nutella
8 oz cream cheese, room temperature
3/4 c heavy whipping cream
2 1/2 Tbsp sugar
1 tsp vanilla
BANANAS FOSTER
4 medium bananas
3/4 c brown sugar
1 stick butter, cut into pieces
1/4 c hazelnuts, chopped
1 tsp frangelico liquer or rum extract
1/2 tsp ground cinnamon
WHIPPED CREAM FROSTING
2 c heavy whipping cream
1/2 c confectioners sugar
2 tsp pure vanilla extract
2 pkg unflavored gelatin

Steps:

  • 1. In a mixing bowl combine flour, sugar, baking powder and salt.
  • 2. Pour vanilla milk into a 2 cup measuring cup and add enough oil to bring the liquid to 1 1/3 cups.
  • 3. Add the milk/vegetable oil mixture, butter, peanut butter and vanilla to the flour mixture and beat with an electric mixer on medium to medium-high speed for 3 minutes, scraping the sides of the bowl as necessary.
  • 4. Add the eggs and continue mixing for another 2 minutes. Pour the batter evenly into 3-9 inch round prepared pans.
  • 5. Bake at 350 degrees for 20-25 minutes until a toothpick comes out almost clean but not dry. The cakes will continue to cook alittle longer once you remove from the oven.
  • 6. Cool the cakes for about 15 minutes on a cooling rack.
  • 7. Whip the heavy cream and sugar until stiff peaks form and set aside.
  • 8. Mix together the nutella and cream cheese until completely blended. Fold the whipped cream into the nutella/cream cheese mix. Do not over mix. Set the mousse aside.
  • 9. Slice each banana in half lengthwise and than cut into semi circles.
  • 10. Melt the butter in the saute pan and add the brown sugar and blend well. Once it is blended well add the bananas, frangelico or rum (your preference, cinnamon and chopped hazelnuts.
  • 11. Cook until carmelized and sugar is dissolved. Set aside to cool.
  • 12. Disolve gelatin according to package instructions and add to heavy whipping cream, sugar and vanilla extract and beat on high until stiff peaks form.
  • 13. Assembling: Place one cake layer on a cake board. Smooth a nice layer of the nutella mousse than a layer of the bananas foster. Repeat with the next layer of cake, mousse and bananas. Add the third layer of cake on top. Cover the cake with the whipped cream. Decorate with chocolate shavings, crushed hazelnuts or drizzled chocolate, whichever you prefer.

1 can (8 ounces) almond paste
1/2 cup butter, softened
1/2 cup heavy whipping cream

1 cup sour cream
Dash salt
1/2 cup sliced almonds, toasted

Steps:

  • Prepare and bake cakes according to package directions, using two greased 9-in. round baking pans. Cool for 10 minutes before removing from pans to wire racks to cool completely., For filling, in a small bowl, beat almond paste and butter until smooth. Gradually beat in cream until fluffy. Cut each cake horizontally in half; spread filling over bottom layers. Replace top layers., In a large microwave-safe bowl, melt chocolate chips; stir until smooth. Stir in sour cream and salt. Spread over the top of each cake. Sprinkle with almonds. Refrigerate leftovers.

200g light muscovado sugar
200g softened butter
4 eggs , beaten
100g self-raising flour
100g plain wholemeal flour
2 tsp baking powder
3 tbsp milk
2 tsp ground mixed spice
4 peeled and cored small eating apples (Cox's are ideal)
1 tbsp light muscovado sugar
1 tbsp plain flour
2 tbsp butter
50g roughly chopped blanched hazelnuts
100g butter , softened
140g icing sugar , sifted
drop vanilla extract (optional)

Steps:

  • Heat oven to 190C/fan 170C/gas 5. Butter two 20cm sandwich tins and line with non-stick baking paper. In a large bowl, beat all the cake ingredients together until you have a smooth, soft batter.
  • Divide the mixture between the tins, smooth the surface with a spatula or the back of a spoon. Once the cake mix is in the pan, poke into it thick slices from the 4 peeled and cored small eating apples (Cox's are ideal). Then bake for about 30 mins (half way through baking add the streusel mix on top of one of the cakes, see next step below) until golden and the cake springs back when pressed. Turn onto a cooling rack and leave to cool completely.
  • Meanwhile, roughly rub together the light muscovado sugar, plain flour and butter. Mix in the roughly chopped blanched hazelnuts. Half-way through baking, sprinkle the streusel mix on top of one of the cakes.
  • To make the filling, beat the butter until smooth and creamy, then gradually beat in icing sugar. Beat in vanilla extract if you're using it. Spread the butter cream over the bottom of the sponge that doesn't have the streusel on top and sandwich the two halves of the cake. Keep in an airtight container and eat within 2 days.
