We used only simple ingredients you likely already have on hand so this can be your new go-to oatmeal cookie recipe when you want to make a large batch of cookies in less than an hour. While these cookies are perfect on their own, they also pair well with a glass of milk or a scoop of ice cream for an extra-indulgent treat!

CRUNCHY NUT BROWN SUGAR COOKIES

Crunchy Nut Brown Sugar Cookies image

This recipe was given to me quite some time ago by a friend of the family. My husband is not a big cookie lover, but he loved these, so I requested the recipe. Shortening can be substituted for butter for a crispier cookie.

Provided by GzNKz4evr

Categories     Drop Cookies

Time 1h

Yield 3 dozen

Number Of Ingredients 7

1 cup butter (room temperature)
2 1/4 cups brown sugar (packed)
1/2 teaspoon salt
2 eggs
2 1/2 cups flour
1/2 teaspoon baking soda
1 cup walnuts (crushed)

Steps:

  • Preheat oven to 350 degrees.
  • Combine all ingredients except flour and walnuts in a mixing bowl. Mix well.
  • Gradually add flour until well mixed.
  • Add walnuts. You can substitute any nut you prefer.
  • Variation: I have occasionally omitted the nuts for chocolate chips - or used both. I would almost say they are better than the toll house recipe.
  • Bake cookies for about 12 minutes on a cookie sheet.
  • Enjoy!

BROWN SUGAR COOKIES

BROWN SUGAR COOKIES image

I won First Place in a holiday cookie baking contest with this recipe. You can substitute regular granulated sugar for the colored sugar crystals. My online cookbook: http://txcherokee57.wixsite.com/rosescookbook

Provided by Rose Dailey

Categories     Cookies

Number Of Ingredients 12

14 Tbsp unsalted butter - has to be the real stuff, not margarine
1 3/4 c packed dark brown sugar
2 c unbleached all-purpose flour
2 Tbsp unbleached all-purpose flour
1/2 tsp baking soda
1/4 tsp baking powder
1/2 tsp salt
1 large egg
1 large egg yolk
1 Tbsp vanilla extract
1/4 c red sugar crystals
1/4 c green sugar crystals

Steps:

  • 1. Heat 10 tablespoons of the butter in a pan over medium-high heat until melted. Continue to cook the butter until it is browned a dark golden color and smells nutty, about 1 to 3 minutes. Transfer the browned butter to a bowl and stir the rest of the butter into the hot butter until it melts- let this rest for 15 min.
  • 2. Mix 2 cups plus 2 tablespoons of flour, baking soda, and baking powder in a bowl. Add the 1 and 3/4 cup brown sugar and salt to cooled butter and mix until there are no lumps. Add egg, yolk, and vanilla to butter mixture and mix well, then add flour and mix until just combined.
  • 3. Place the 1/4 cup red sugar crystals and the 1/4 cup green sugar crystals in separate dishes.
  • 4. Preheat oven to 350 degrees. Roll dough into balls about 1 and 1/2 inches in diameter. Then roll one dozen in the red sugar crystals and one dozen in the green sugar crystals. Place balls about 2-inches apart on parchment lined baking sheets.
  • 5. Bake sheets one at a time until cookies are puffy and lightly browned, about 12- 14 minutes. (The cookies will look slightly raw between some of the cracks and seem underdone, but be careful not to over bake.) Cool on sheet for about 5 minutes and then transfer to a rack to cool. (Makes 2 dozen cookies)

BROWN BUTTER BROWN SUGAR COOKIES

Brown Butter Brown Sugar Cookies image

Brown Butter Brown Sugar Cookies Recipe - Rich nutty brown sugar cookies with intense depth of flavor. These cookies are utterly addictive!

Provided by Sommer Collier

Categories     Dessert

Time 23m

Number Of Ingredients 8

3 cups all-purpose flour, (sifted)
1 1/2 teaspoon baking powder
1 teaspoon salt
1 1/2 cups unsalted butter ((3 sticks))
1 1/4 cups brown sugar, (packed (light or dark))
2 large eggs
1 tablespoon vanilla extract
1/4 cup granulated sugar

Steps:

  • Place the butter in a small sauce pot over medium heat. Watch the butter as it melts and simmers, stirring occasionally. Once the butter particles in the bottom of the pot have turned a dark teddy bear brown, and the butter is light brown, turn off the heat. It should smell nutty, not burnt. Place the butter in the refrigerator until in has solidified again.
  • Preheat the oven to 350 degrees F. Line several baking sheets with parchment paper. Scrape the firm brown butter into the bowl of an electric stand mixer. Make sure to scrape in all the dark particles...They add a lot of flavor! Add the brown sugar and beat the mixture on high until light and fluffy, about 5 minutes. It's okay if there are a few brown sugar chunks left.
  • Scrape the bowl and set the mixer of low. Beat in the eggs, vanilla extract, baking powder, and salt. Once well-combined, slowly add in the flour. Turn the mixer off when the mixture looks smooth.
  • Place the granulated sugar in a small bowl. Use a 1 1/2-tablespoon cookie scoop to portion out the cookie dough. Roll the scoops into balls, then roll each ball in the granulated sugar to coat.
  • Place the cookies two inches apart on the baking sheets. Use the bottom of a drinking glass to press to dough balls into flat 1/2-inch disks.
  • Bake for 8-10 minutes. The cookies should look golden around the edges, but a little under-baked in the center. Cool on the baking sheets.
