NUTTY APPLE MUFFINS
I teach quick-bread making for 4-H, and I'm always on the lookout for good new recipes. My sister-in-law shared this recipe with me for a slightly different kind of muffin. With apples and coconut, they are moist, chewy and tasty. -Gloria Kaufmann, Orrville, Ohio

- In a large bowl, combine the flour, baking powder, salt, nutmeg and baking soda. In another bowl, beat eggs, sugar, oil and milk. Stir in apples, nuts and coconut. Stir into dry ingredients just until moistened. , Fill 18 greased muffin cups three-fourths full. Bake at 350° for 20-25 minutes or until a toothpick comes out clean. Cool in pan 10 minutes before removing to a wire rack.

JUMBO FLUFFY WALNUT APPLE MUFFINS
A large fluffy muffin with a sweet buttery topping. My jumbo muffin tins hold 1 cup per muffin, so this is scaled for my tins.

- Preheat oven to 375 degrees F (190 degrees C). Coat top and insides of jumbo muffin pan with cooking spray, or line with muffin papers.
- In a large bowl, cream together 1/2 cup butter, 1 1/4 cups sugar, vanilla, and salt until light and fluffy. Beat in eggs, one at time. Mix together the 1 3/4 cups of flour, baking powder, and 1/2 teaspoon cinnamon. Stir in the flour mixture alternately with the milk, mixing just until incorporated. Fold in apples and walnuts. Scoop into muffin cups to fill 3/4 full. Lightly sprinkle the tops with cinnamon crumble.
- To make Cinnamon Crumble: In a small bowl, combine 1/4 cup white sugar, 1/2 teaspoon of cinnamon, 3 tablespoons all-purpose flour, and 2 tablespoons cubed butter. Mix together using a pastry blender, or two butter knives. The crumble topping should resemble small peas.
- Bake in preheated oven for 30 minutes, or until tops are golden brown, and a toothpick inserted into the center comes out clean. If they are browning too quickly, cover with tin foil. Remove from pans, and cool on wire rack.

ALMOND FLOUR MUFFINS WITH APPLE PIE FILLING
These totally gluten-free almond flour muffins are bursting with chunks of apples and all sorts of wonderful flavors. Be sure to use blanched, high-quality almond flour (like Honeyville Blanched Almond Flour) in your recipe to ensure a good texture. Any apple variety will work.

- Preheat oven to 350º F. Add 6 cupcake liners to your muffin pan. Set aside.
- Melt butter in saucepan over medium heat. Add diced apples and saute for about 10 minutes until softened, stirring frequently. Add water, sugar, cinnamon and nutmeg and cook for another minute. Turn off heat and set aside.
- In a large bowl, combine egg, honey and vinegar. Whisk well. Add to mixture almond flour and baking soda and combine thoroughly.
- Fold in cooled apple mixture into muffin batter until well combined. Evenly distribute batter into 6 muffin cups.
- In a small bowl, combine muffin topping ingredients and then sprinkle about 1/4 tsp of mixture on top of each muffin.
- Place muffins in the oven to bake for 15 minutes or until a toothpick inserted in the center comes out clean. Allow muffins to fully cool before enjoying (if you try to eat them too soon, the muffins will stick to the muffin liners).

- Preheat oven to 350 degrees F (175 degrees C). Lightly grease or line 24 muffin cups.
- In a large bowl, cream together butter and 1 1/2 cup sugar. Beat in eggs and vanilla. Combine flour, baking powder, baking soda and salt. Stir into the creamed mixture alternately with sour cream. Fold in apple pie filling and walnuts. Spoon batter into prepared muffin cups. Combine 1/4 cup sugar and cinnamon; sprinkle over the muffins.

- In a saucepan, melt butter. Stir in brown sugar, flour, cinnamon and nutmeg until smooth. Add apples; cook over medium-low heat for 10 minutes or until tender, stirring frequently. - To brown the butter, cut it into tablespoons and place it in a medium skillet over medium heat. Melt the butter while swirling it in the pan occasionally. Be careful it will foam and pop. Once the butter starts to brown and smells nutty remove the pan from heat. There'll be small brown bits on the bottom of the pan and the butter should be an amber color. Pour the butter in a small bowl and let cool to room temperature.
- Remove the core of all apples. For the filling, grate one apple and mix with 2 tbsp of brown sugar and 1/2 tsp cinnamon. Set aside. Cut the other 2 apples into 12 rings. (You will get more than 12 rings, use the rings from the middle part of the apples)
- In a medium bowl, combine all-purpose flour, baking powder, baking soda, 1/3 cup chopped nuts, 1 tsp cinnamon, and a pinch of salt. Set aside.
