2 cups all-purpose flour
2 (3 ounce) packages cream cheese
1 cup butter
6 tablespoons white sugar
1 ½ teaspoons vanilla extract
1 egg
¾ cup packed brown sugar
1 cup chopped walnuts

Steps:

  • To make Pastry: Cream together butter and cream cheese. Add the 6 tablespoons white sugar, 2 cups flour and blend well.
  • Shape into balls about 1 inch in diameter (flour palms of hands to facilitate rolling). Place ball in greased tartlet pan and flatten. Should fill pan by 3/4.
  • To Make Filling: Mix together vanilla, egg, brown sugar, and chopped nuts.
  • After flattening ball in tartlet tin make a thumb print in center and fill with a full 1/2 teaspoon of nut filling.
  • Bake in a 350 degrees F (175 degrees C) oven for 17 to 20 minutes. Cool completely before removing from pan.

1 1/2 cups (200 g) all purpose flour
2 tablespoons sugar

1 teaspoon vanilla extract
3-4 tablespoons ice water
Filling Ingredients:
1 1/4 cups (250 g) sugar
1/4 cup (60 ml) water
2/3 cup (160 ml) heavy whipping cream
2 tablespoons unsalted butter, cut into small pieces
1 tablespoon honey
1 teaspoon vanilla extract
1 cup (125 g) walnuts, coarsely chopped
1/2 cup (62 g) pecans, coarsely chopped
1/2 cup (55 g) slivered blanched almonds
Whipped cream (optional)

Steps:

  • Make the tart dough: Whisk together the flour, sugar, cinnamon, nutmeg and salt. Add the cut up pieces of butter and use a pastry cutter to cut into the flour mixture until the butter pieces are no bigger than a pea. (You can use a food processor for this if you want.) Sprinkle with vanilla and add 3 tablespoons of ice water. Use a fork to work the water and vanilla into the dough. (You can use a food processor.) Add up to a tablespoon more of ice water, just enough so that the dough easily sticks together when you pinch it with your fingers. Form the dough into a ball, kneading once or twice if necessary, and flatten into a disk. Wrap the dough disk in plastic and chill for 1 hour.
  • Pre-bake the crust: Bake the crust at 375°F for 20 minutes, piercing the bottom with fork if bubbles form. Transfer to a rack to cool.

1 3/4 cups all-purpose flour, plus more for the surface
1/3 cup granulated sugar
1/2 teaspoon kosher salt
1 stick (8 tablespoons) unsalted butter, cubed and chilled
1 large egg yolk
1 teaspoon pure vanilla extract
2 tablespoons ice water
1/3 cup honey
1/4 cup light brown sugar
1/2 teaspoon kosher salt
6 tablespoons unsalted butter, cubed and chilled
1/4 cup heavy cream
1 large egg yolk
Zest and juice of 1 lemon
1 1/2 cups pine nuts
Confectioners' sugar, for serving

Steps:

  • For the tart crust: Add the flour, granulated sugar and salt to the bowl of a food processor and pulse until combined. Add the butter and pulse until small pebbles form. With the machine running, add the egg yolk, vanilla and water and pulse until the dough just comes together. Remove to a piece of plastic wrap and press together into a dough ball. Flatten into a disk then refrigerate, at least 30 minutes.
  • Meanwhile, make the honey and pine nut filling: Add the honey, brown sugar and salt to a medium saucepan over medium heat and whisk to combine. Cook, whisking occasionally, until the sugar melts, 2 to 3 minutes. Add the butter and whisk until melted. Pour the mixture into a large bowl and allow to cool for 25 to 30 minutes.
  • Preheat the oven to 350 degrees F.
  • On a lightly floured surface, roll the dough to a 13-inch circle and place in an 11-inch tart pan with a removable bottom. Chill 30 more minutes.
  • Prick the bottom of the tart with a fork. Place a piece of parchment in the center of the tart and fill all the way to the top with dried beans. Bake until the crust is set but still slightly pale, about 15 minutes. Allow to cool, then remove the parchment and beans.
  • Reduce the oven temperature to 325 degrees F.
  • Meanwhile, whisk the heavy cream, egg yolk, lemon zest and juice into the cooled filling. Place the cooled tart shell on a rimmed baking sheet and scatter the pine nuts inside the shell. Evenly pour the filling into the tart crust and bake until the top is golden brown, the filling is set and the very center still has a slight jiggle, 50 to 60 minutes.
  • Cool completely before slicing, at least 30 minutes and up to 1 hour. Serve dusted with confectioners' sugar.

Steps:

  • Make crust:
  • Mix flour, sugar, cinnamon, nutmeg and salt in processor. Add butter. Using on/off turns, process until mixture resembles coarse meal. Mix in vanilla and enough ice water by tablespoonfuls to form moist clumps. Gather dough into ball; flatten into disk. Wrap in plastic and refrigerate until firm, about 2 hours.
  • Preheat oven to 375°F. Roll dough out on floured surface to 12-inch round. Transfer dough to 9 1/2-inch-diameter tart pan with removable bottom. Fold overhang in and press, forming high-standing double-thick sides. Pierce dough all over with fork. Freeze 15 minutes.
  • Bake crust until set but still pale in color, piercing with fork if crust bubbles, about 20 minutes. Transfer to rack; cool. Increase oven temperature to 400°F.
  • Make filling:
  • Combine sugar and 1/4 cup water in heavy medium saucepan. Stir over medium-low heat until sugar dissolves. Increase heat. Boil without stirring until caramel is deep amber color, occasionally brushing down sides of pan with wet pastry brush and swirling pan, about 9 minutes. Reduce heat to medium. Gradually whisk in cream (mixture will bubble). Stir until caramel is smooth. Add butter, honey and vanilla. Stir until well blended. Mix in all nuts.
  • Pour caramel mixture into crust. Bake until filling bubbles all over, about 20 minutes. Cool completely on rack.
  • Stir white chocolate in top of double boiler set over hot water just until melted and smooth. Remove from over water. Using fork, drizzle chocolate decoratively over tart. Let stand until chocolate is set, about 30 minutes. (Can be made 8 hours ahead. Let stand at room temperature.)
  • Serve with cream, if desired.

MACADAMIA NUT TART

Straight out of Sunset Magazine. I saw this recipe while waiting in the Dr.'s office and couldn't wait to try it. Yummy! A buttery tart that has just enough sweet filling to hold the nuts together. I'll be posting a picture soon. This will definitely be a Christmas must have in my home.

1/2 cup packed dark brown sugar

1/4 cup light corn syrup
2 tablespoons dark rum
1 1/3 cups unsalted macadamia nuts, coarsely chopped

Steps:

  • Preheat oven to 375°. In a food processor, whirl flour, 2 tablespoons brown sugar, and 1/4 teaspoons salt. Add cold butter and pulse until mixture resembles coarse crumbs. Add egg yolk and pulse to combine. Add 2 to 3 tablespoons ice water, pulsing until mixture begins to come together in a ball.
  • Press dough into bottom and up sides of a 9-in. round tart pan with 1-in. sides. Prick bottom of tart with a fork and chill in freezer 15 minutes. Bake crust until medium golden brown, 15 to 25 minutes, and remove from oven (leave oven on).
  • Meanwhile, in a standing electric mixer on high speed, beat whole egg, remaining 1/2 cup brown sugar, and remaining 1/4 teaspoons salt until pale and ribbony, 7 to 10 minutes. Beat in melted butter, corn syrup, and rum.
  • Pour sugar mixture into tart shell and sprinkle with macadamia nuts. Bake tart until a knife inserted in center comes out clean, about 25 minutes. Cool tart on a wire rack at least 1 hour. Cut into wedges.

  • Preheat the oven to 180°c/350°c/gasmark4.
  • Roll out the pastry and use to line 6, 10cm/4in tartlet tins.
  • Divide the pecan nut halfs between the pastry cases.
  • Combine the eggs with the butter and add the golden syrup and vanilla essence
  • Sift over the caster sugar and flour, and carefully blend.
  • Fill the pastry cases with the mixture and leave until the the nuts rise to the surface.
  • Bake for 35 -40 minutes until a skewer comes out clean. Cool for 15 minutes before turning onto a wire rack.

FOR TART:
6 oz cream cheese
2 stick butter
2 c flour
FOR FILLING:
3 eggs
1 1/2 c brown sugar
1 c chopped nuts (walnuts or pecans)
1 tsp vanilla extract

Steps:

  • 1. Cream together the butter and the cream cheese.
  • 2. Gradually add flour and mix until combined thoroughly. Set aside. (Can be done with hands or with a mixer.) (Dough can be refrigerated if desired)
  • 3. Beat eggs and brown sugar together.
  • 4. Add vanilla and chopped nut of your choice.
  • 5. Separate the dough into small pieces and press onto tart pan to create a small cup. A non stick pan is preferable. You can improvise also by using a cupcake tray, if you don't have any tart pans.
  • 6. Spoon nut mixture into each tart. Do not over fill and remember to stir the nut mixture every time you spoon because the nuts have a tendency to float to the top. You want each tart to have a fair amount of nuts.
  • 7. Bake for roughly 30 minutes or until the edges are golden brown. There will also be "cracks" in the tarts as well to indicate if they have cooked or not. The oven must be at 350 degrees. *must be hot.
  • 8. Once cooled, remove from the pans and sprinkle with powdered sugar as a garnish.

Single-Crust Food Processor Pie Dough
⅔ cup packed light brown sugar
⅓ cup maple syrup
4 Tbsp. unsalted butter, very soft
1 large egg
1½ tsp. white ­vinegar or apple cider vinegar
1 tsp. vanilla extract
¼ tsp. salt
Small handful of ­raisins, dried currants, chopped pecans, or chopped walnuts (optional)

Steps:

  • Prepare and refrigerate the pie dough.
  • Roll the dough as you would for most pies, about ⅛-inch thick or a tad thinner. Don't worry about keeping it nice and round like you normally would.
  • Using a 4-inch-diameter cookie or biscuit cutter, cut the dough into as many circles as possible. Line each cup of a standard 12-cup muffin pan with one of the circles, gently nudging it down into the bottom creases of the pan. Try not to stretch the dough as you work; it can help to use something blunt, like a narrow jar, to nudge the dough. The top edge of the dough circle should come to about the middle of the cup. Gather the scraps and reroll the dough if you need additional ­circles. Chill the pan in the freezer for 20 to 30 minutes.
  • Adjust one oven rack so it is in the lower position, and preheat the oven to 425°F (220°C). Combine the sugar, maple syrup, and butter in a mixing bowl. Whisk briefly. Add the egg, vinegar, vanilla, and salt, and whisk again.
  • Set the muffin pan on your work surface. If you're using the fruit or nuts, put a few pieces in as many of the shells as you wish, but don't crowd them. Use a ladle or ¼-cup measuring cup with a handle to divide the filling evenly between the shells.
  • Bake for 15 to 18 minutes, until the filling bubbles and darkens somewhat.
  • Transfer the pan to a rack and cool for 5 minutes, then carefully run a butter knife around the edge to loosen each tart. Let the tarts cool in the pan, then remove. Store, refrigerated, in a single layer in a covered tin or container, but let them come to room temperature before serving.

Steps:

  • In a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Beat in egg until blended. Beat in orange zest, orange juice and milk. In another bowl, whisk flour, baking powder and salt; gradually beat into creamed mixture., Divide dough into 3 portions. On a lightly floured surface, shape each into a 10-in.-long roll.
