ALMOND-CRUSTED TILAPIA

Almond-Crusted Tilapia image

My husband came up with this creation for Easter dinner, as Tilapia is indigenous to the sea of Galilee. It remains the best fish I have ever put in my mouth, absolutely beyond restaurant quality.

Provided by Michelle Woolf

Categories     Seafood     Fish     Tilapia

Time 30m

Yield 8

Number Of Ingredients 12

2 eggs
1 teaspoon lemon pepper
1 teaspoon garlic pepper
1 cup ground almonds
1 cup freshly grated Parmesan cheese
8 (6 ounce) tilapia fillets
¼ cup all-purpose flour for dusting
6 tablespoons butter
salt to taste
1 cup freshly grated Parmesan cheese
8 sprigs parsley
8 lemon wedges

Steps:

  • Beat the eggs with the lemon pepper and garlic pepper until blended; set aside. Stir together ground almonds with 1 cup of Parmesan cheese in a shallow dish until combined; set aside. Dust the tilapia fillets with flour, and shake off excess. Dip the tilapia in egg, then press into the almond mixture.
  • Melt butter in a large skillet over medium-high heat. Cook tilapia in melted butter until golden brown on both sides, 2 to 3 minutes per side. Reduce heat to medium, and season fillets with salt if desired. Sprinkle the tilapia with the remaining Parmesan cheese, cover, and continue cooking until the Parmesan cheese has melted, about 5 minutes.
  • Transfer the tilapia to a serving dish, and garnish with parsley springs and lemon wedges to serve.

QUICK AND EASY PECAN-CRUSTED FISH FILLETS RECIPE

Quick and Easy Pecan-Crusted Fish Fillets Recipe image

Pecan-Crusted Fish Fillets cooked to flaky perfection is my new favorite seafood dish. With fresh grouper fillets coated in crunchy, buttery pecans and crispy panko, this easy recipe delivers maximum flavor with minimum effort.

Provided by Sharon Rigsby

Categories     Dinner

Time 21m

Number Of Ingredients 8

4 fish fillets (six ounces each, skinless, approximately one inch thick)
1 cup panko breadcrumbs
1 cup pecan pieces
1/2 cup mayonnaise
1 tablespoon creole seasoning (I like Zatarain's)
1 teaspoon kosher salt
1/2 teaspoon ground black pepper
1/4 cup vegetable oil

Steps:

  • Preheat the oven to 450 degrees F.
  • Place the pecans in a food processor and pulse until they are finely chopped. Do not over-process or you will end up with pecan meal or pecan butter.
  • Add the finely chopped pecans and the panko crumbs to a shallow dish or pie plate and stir to combine. Set aside.
  • Add the mayonnaise and creole seasoning to a small bowl and stir to combine. Set aside.
  • Season both sides of the fillets with salt and pepper.
  • Evenly spread a thin layer of the mayonnaise mixture on all sides of the fillets.
  • Dredge each fillet in the nut mixture, making sure to coat all sides evenly.
  • Heat a large, 12-inch, non-stick oven-proof or cast-iron skillet over medium-low heat. Add the vegetable oil. When the oil is hot, add the fillets and cook for three minutes. Turn the fillets over and cook three minutes on the other side.
  • Transfer the skillet to the oven and let the fish finish cooking. This should take about five minutes, depending on the thickness of the fillets.
  • The fish is done when it is opaque and flakes easily when pierced with a fork.
  • Serve immediately.

  • Place chopped onion, bay leafs and wine in a small saucepan and bring to a boil. Reduce over med-high heat until the wine is almost evaporated, about 3-5 minutes. Remove from the heat and discard bay leafs. In a small bowl, stir together sour cream, lemon juice, 1 teaspoon dill, mustard and 1/4 teaspoon salt. Add the reduced onion/wine mixture to the bowl and stir in. This is the sauce.
  • Place pistachios in food processor or blender and pulse or mix until finely ground. In a separate medium to large bowl, add the chopped pistachios, panko, the remaining 1 teaspoon dill and 1/4 teaspoon salt and stir together thoroughly. Pat the tuna filets dry and then sprinkle a bit of olive oil over them and rub it in. Dredge both sides of the tuna in the pistachio mixture pressing it in so that it sticks.
  • Heat oil in a large nonstick skillet over medium-high heat. Add the coated tuna filets and sear until golden brown, adjusting the heat as necessary to prevent burning. After 2 to 3 minutes flip the filets and cook the other side 2-3 minutes for medium-rare. Use tongs to turn over so that nut breading doesn’t fall off. Do not overcook. Serve with the lemon-dill sauce.
